TOMATO-CRESCENT PIE
Make brunch special with this fancier-than-it-looks quiche anyone can make.

Steps:
- Heat oven to 350°F. Lightly spray 11-inch pie plate with cooking spray.
- Unroll dough; separate into 8 triangles. Line pie plate with dough triangles, making sure shortest sides of triangles are at edge of pie plate. Refrigerate.
- In 10-inch skillet over medium heat, cook onion and tomatoes about 5 minutes, stirring occasionally, until they begin to soften. Remove from heat; set aside.
- In medium bowl, beat eggs, milk and cream with whisk until well combined. Add tomato mixture and 3 cups of the cheese; fold in with wooden spoon.
- Remove pie crust from refrigerator. Pour tomato-egg mixture into crust, spreading to remove any large lumps. Sprinkle remaining 1/4 cup cheese over top.
- Bake about 1 hour or until center is firm to the touch. After 20 minutes of baking, place ring of foil around edge of pie to prevent crust from burning. Cool for at least 1 hour before serving.

- Thinly slice the tomatoes; place on paper towels to drain. Unroll crescent dough; place on an ungreased baking sheet. Roll into a 14x10-in. rectangle; seal seams and perforations., Arrange tomatoes and onion over crust. In a small bowl, combine the oil, Italian seasoning, garlic, salt and pepper; brush over top. Sprinkle with cheese., Bake at 375° for 10-14 minutes or until lightly browned. Cut into squares.

ANNA'S TOMATO TART
Steps:
- Place the flour and 1 teaspoon of salt in the bowl of a food processor fitted with the steel blade. Add the butter and pulse 12 to 15 times, until the butter is the size of peas. Add the egg yolks and pulse a few times to combine. With the motor running, add the ice water through the feed tube and pulse until the dough starts to come together. Dump onto a floured board and roll it into a flat disk. Wrap in plastic wrap and refrigerate for 30 minutes.
- Preheat the oven to 400 degrees. Line a sheet pan with parchment paper.
- Meanwhile, place the tomatoes in a large bowl. Put the parsley, basil, garlic, thyme, 1 teaspoon salt, and 1 teaspoon pepper in the bowl of a food processor fitted with the steel blade and process until finely minced. With the processor running, pour the olive oil down the feed tube and process until combined. Pour the mixture over the tomatoes and toss gently. Set aside.
- On a well-floured board, roll the dough out to an 11 x 17-inch rectangle and transfer it to the prepared sheet pan. Don't worry if it doesn't fit exactly; you want it to cover most of the bottom of the pan but it can be a little rough on the sides. Place a second sheet pan directly on the pastry and bake for 15 minutes. (You can also line the pastry with foil and fill it with dried beans.) Remove the top sheet pan (or the beans and foil). Using a dinner fork, pierce the pastry in many places. Bake for another 8 to 10 minutes, until lightly browned. Check the pastry during baking; pierce any spots that bubble up. Allow the crust to cool for 15 minutes.
- Lower the oven to 375 degrees. Brush the mustard on the crust with a pastry brush. Sprinkle a thick even layer of Gruyere on the pastry, reserving 1/2 cup for the top, and sprinkle with the 1/2 cup of Parmesan. Place overlapping tomatoes in rows on top. If there is a little garlic and herb mixture in the bowl, sprinkle it over the tomatoes, but if there is liquid in the bowl, strain it through a very-fine-mesh strainer, discard the liquid, and sprinkle the garlic and herb mixture on the tomatoes. Sprinkle the reserved 1/2 cup of Gruyere and the remaining 2 tablespoons of Parmesan on top. Bake for 30 minutes.
- Cool slightly, cut into squares, and serve warm or at room temperature.
TOMATO CRESCENT ROLL PIE
This was brought up to the cabin we stayed at in Stehekin, WA by my cousin by way of her daughter, Cinda. Lovely dish and very tasty. We made the crust with Bisquick because it packs in better than crescent rolls. Either way its a delicious idea.

Steps:
- Preheat oven to 350.
- Separate crescent rolls.
- Form a crust by lining a deep dish pie pan with the rolls.
- Bake crust for 10 minutes or until slightly golden.
- Peel and slice tomatoes
- Place in a single layer in a colander.
- Sprinkle with salt and allow to drain for about 10 minutes.
- Layer tomato slices, onions and basil in shell.
- Season with salt and pepper.
- Combine mayonnaise and cheese.
- Spread on top of the tomatoes.
- Bake for 30 minutes or until lightly browned.
- Cut into wedges and serve warm.

- Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat until the meat is no longer pink; drain. Stir in tomato sauce, mushrooms, parsley, salt, oregano and pepper; set aside., Unroll 1 tube of crescent dough and separate dough into eight triangles. Arrange in a single layer in a lightly greased 9-in. pie plate. Press into dish to form a crust and seal seams. - Unroll crescent dough into one long rectangle and press into an ungreased 9x13 baking pan.
- Seal seams and perforations and bake at 375° for 14 minutes or until golden brown.
- Meanwhile, in a skillet, saute garlic and basil in oil over low heat just until garlic softens - but do not brown the garlic.
- Sprinkle half of mozzarella over the crust.

- Preheat oven to 400°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate.
