TOMATO BRAISED CAULIFLOWER

Cauliflower with flavor is Tomato Braised Cauliflower. This is an excellent side dish, but it also makes a great sauce for pasta or, when topped with shaved Pecorino Romano cheese, a delicious appetizer. It is also wonderful as a topping for bruschetta.

1 heads cauliflower
3 tablespoons extra-virgin olive oil
1 cup onion, diced
4 garlic cloves, peeled and crushed
2 bay leaves
½ teaspoon peperoncino
salt
2 cups ripe plum tomatoes, peeled and seeded

Steps:

  • Pull off the cauliflower leaves and cut out the core. Break the cauliflower head into florets.
  • In a large casserole, heat the olive oil over medium heat. Add the onion and garlic and cook until wilted, about 4 minutes. Add cauliflower, bay leaves and peperoncino and season lightly with salt. Cook for 5 minutes, stirring occasionally. Meanwhile, crush the tomatoes coarsely by hand.
  • Add the tomatoes to the cauliflower and cook, covered, until the cauliflower is very tender and most of the liquid has been absorbed, about 30 minutes. Check the cauliflower after about 20 minutes: There should be just enough liquid to lightly coat the cauliflower. If there is more, finish cooking the cauliflower uncovered. Season with salt and serve hot.
  • Serve on top of pasta or rice, or dip fresh bread into the sauce, enjoy!

Cauliflower often gets a bad reputation as a "boring" vegetable, but don't be fooled: It can make a showstopping entree when it's cooked the right way.

1 head cauliflower, large outside leaves removed
1 25-ounce jar tomato sauce
1/4 cup chopped parsley stalks
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1 tablespoon onion powder
Freshly ground pepper
4 anchovy filets, drained and chopped
1 handful pitted kalamata olives
1 tablespoon red wine vinegar
1 tablespoon olive oil
Chopped flat-leaf parsley, to garnish

Steps:

  • Place whole head of cauliflower in a large pot. It should fit comfortably, with 1 to 2 inches of room left on all sides.Pour in tomato sauce, then add parsley stalks, chili powder, smoked paprika, onion powder, and freshly ground pepper. Bring to sauce to a simmer over medium heat.Stir in anchovies, olives, and red-wine vinegar, then bring to a low boil.Gently push whole head of cauliflower down into the sauce. (Sauce should come halfway up the sides of the cauliflower). Drizzle with olive oil and cover.Let cook over low heat for 45 minutes. To serve, garnish with chopped parsley.

An Indian dish that is not only tasty but colorful. Turmeric gives it a bright yellow color. Goes well with fried meat, green salad and bread.

3 tablespoons oil
1 inch piece fresh ginger
1 -2 chili pepper, seeded (see NOTE)
1/2 teaspoon brown mustard seeds
1 teaspoon cumin seed (not ground)
2 1/2-3 lbs cauliflower (about 1 large)
1 tablespoon ground coriander
1/2 teaspoon turmeric
1 teaspoon salt
1 lb tomatoes (about 3 medium)
1 tablespoon water
1/2 teaspoon garam masala
3 tablespoons fresh cilantro or 3 tablespoons fresh parsley, minced

Steps:

  • NOTE: I use one 2 inch long medium hot jalapeno, but I am not very daring when it comes to chilis.
  • Wash and cut cauliflower into small flowerets, about 1x2 inches. Peel ginger, cut into thin matchsticks. Cut jalapenos into thin strips. Wash and cut tomatoes into eight wedges each.
  • Heat oil in a large non-stick skillet over medium to medium high heat.
  • When hot add ginger, jalapenos, cumin and mustard, cook until mustard pops and cumin has darkened a few shades, about 1-2 minutes.
  • Add coriander, salt and turmeric, stir once, add cauliflower and stir-fry until cauliflower is slightly browned, about 5 minutes.
  • Reduce heat to low, add tomatoes and water, stir once and cover. Cook covered for 15-20 minutes until cauliflower is just tender. Shake pan occasionally to avoid sticking, don't stir.
  • When done, uncover and evaporate excess liquid on high heat, stirring carefully.
  • Serve sprinkled with herbs and garam masala.

4 tablespoons ghee
1 inch gingerroot
2 green chilies, minced
1/2 teaspoon black mustard seeds
1 teaspoon cumin seed
1 large cauliflower, cut into florets
1 tablespoon coriander
1/2 teaspoon turmeric
1 teaspoon salt
3 diced tomatoes
1 teaspoon garam masala
3 tablespoons minced coriander

Steps:

  • Heat ghee in a large casserole.
  • When hot, toss in the ginger, chilies, mustard and cumin seeds.
  • Fry till the mustard seeds start to pop.
  • Stir in the cauliflower, coriander, turmeric and salt.
  • Stir fry for a couple of minutes, till the cauliflower starts to turn brown.
  • Then add the tomatoes.
  • Cover, reduce heat to low.
  • Cook for 15 minutes, stirring occasionally.
  • Remove the lid and stir fry for a few minutes till the liquid has evaporated.
  • Sprinkle with garam masala and coriander greens and serve.

We saw Lidia Bastianich cook this on CreateTV this morning and had to try it! I had to guess-timate some of the times/amounts, but as she said, "You want to adjust the amounts based on the size of your cauliflower!" Easy and so tasty -- could be either a side dish or an entree.

1 cauliflower
2 tablespoons olive oil
3 -4 garlic cloves, smashed and peeled
1/4 lb thick slab bacon (but large enough that you get an occasional bite) or 1/4 lb pancetta, cut in small pieces (but large enough that you get an occasional bite)
1 large yellow onion, halved and thinly sliced
1 (28 ounce) can whole tomatoes, crushed in your hands (use good ones!)
1/2 teaspoon crushed red pepper flakes (or more or less, to taste)
salt and pepper, to taste

Steps:

  • Remove stem from cauliflower (but you can keep the leaves, if any -- they're delicious!).
  • Sauté garlic and bacon in olive oil in a large heavy pot until lightly browned. Add onions and continue to sauté until onions are softened.
  • Add cauliflower stem-side down. Pour tomatoes over and season with salt, pepper, and red pepper flakes. Bring to a boil, cover, and simmer on low for about an hour or until done (will depend on size of cauliflower -- mine took about 70 minutes).
  • Remove cauliflower, bring sauce to simmer and let reduce for a little while, then pour over cauliflower and serve.
