MARINATED TOMATO SALAD WITH HERBS

Steps:
- Cut the tomatoes into 4 wedges, then cut the wedges in half and add to a bowl. Lop off the tops of the green onions, then slice the white and mostly light green parts really thin. Add to the tomatoes.
- Add the olive oil, balsamic vinegar, brown sugar, dash of salt and pepper to a jar. Screw on the lid and shake to combine. Pour the dressing over the tomatoes and toss.
- Add the herbs and gently toss to combine. Cover and refrigerate for a couple of hours before serving.

- In a small skillet, heat the olive oil over medium-high heat. Add the garlic and stir, lightly frying for about a minute and removing from the heat before the garlic gets too brown (it can be golden). Pour it into a mixing bowl and allow to cool slightly. Add the tomatoes, balsamic, basil and some salt and pepper to the bowl. Toss to combine, and then taste and add more basil if needed, and more salt if needed.

- Cut tomatoes in quarters or eighths, depending on size.
- Roughly chop basil and place in glass container.
- Add garlic.
- Mix together thoroughly balsamic vinegar and olive oil.
- (A couple of tbsp of each), and pour over basil-garlic mix.
- Season with salt and pepper.
- Cover tightly and marinate at room temperature for 6-8 hours.
- Do not refrigerate before serving.
PIONEER WOMAN'S QUICK MARINATED CHERRY TOMATO SALA
Watching Pioneer Woman's tv show and this salad(along with the patty melts,potatoes and bananas foster) looked so tasty,I decide to re-created it. This is the recipe as posted but I made the some changes and it was DELICIOUS! I had too many letters it's Salad!

- 1. Halve the tomatoes and add them to a large zipper bag with the sliced red onion. Add the olive oil, balsamic, parsley, pesto, sugar, garlic and sprinkle with salt and pepper. Seal the bag, getting all the air out. Place into the fridge until ready for dinner. Place the iceberg lettuce in a large bowl and pour on the tomatoes. Toss and serve!
- 2. My changes: I used white wine vinegar instead of balsamic vinegar;omitted the sugar,homemade pesto,2 garlic cloves. I used 1/2 head of iceberg;there was dressing left over,Thank goodness because the dressing was delicious!

I got this recipe from The New American Heart Association Cookbook. Low fat, low calories, great taste...what's not to love! I usually add more cheese. Refrigerate the tomatoes for at least an hour before serving to let them soak in all that wonderful dressing!

A great salad dressing from America's Test Kitchen. I usually mix mine in a food processor, chopping the scallions and garlic first then adding the tomato and basil and finally the liquids and salt and pepper.

- Shake all of the ingredients together in a jar with a tight fitting lid (or mix in food processor as described above).
- The dressing can be refrigerated for up to 3 days; bring to room temperature then shake vigorously to recombine before using.

This salad is really simple (and you can probably substitute whatever vinegar you have, making it even more simple) and delicious. I didn't precisely measure my ingredients, so you can start with smaller quantities and make it 'to taste' if you don't have my sour tooth!

- Slice tomatoes in half and put into a medium sized bowl.
- Sprinkle tomatoes with salt, dress with vinegar and oil and toss together.
- Cut basil leaves into chiffonade (roll leaves together as if making a cigar and run your knife perpendicular through at very thin intervals--the result will be little strips of basil).
- Sprinkle basil over tomatoes, add pepper, toss and serve.
- Notes: I thought that the salad tasted the best after a few hours. The downside is that your basil can turn a little dark. I'd still say it is worth letting the salad mascerate for a couple hours--maybe adding basil leaves in an hour before serving.
