"Refreshing light summer salad." I like to make this salad in the Summer when my Tomatoes, and Basil are plentiful and Cucumbers are 3 for a dollar at the Grocery stores and farmers markets! A very pretty healthy salad. Try it I don't think you will be dissapointed!

2 large cucumbers, halved lengthwise, seeded and sliced
1/3 cup red wine vinegar
1 tablespoon white sugar
1 teaspoon salt
3 large tomatoes, seeded and coarsely chopped
2/3 cup coarsely chopped red onion
1/2 cup chopped fresh basil leaf
3 tablespoons extra virgin olive oil
salt and pepper

Steps:

  • In a large bowl, toss together the cucumbers, vinegar, sugar and salt. Let stand at room temperature for an hour, stirring occasionally.
  • Add tomatoes, onion, Basil and oil to cucumbers and toss to blend. Season to taste with salt and pepper.

1/4 small red onion, cut into thin slices
1/2 seedless cucumber, cut into 1/3-inch dice
1 pound vine-ripe or Roma tomatoes, cut into 1/3-inch dice

1/4 cup basil-infused olive oil
Kosher salt and freshly cracked black pepper

  • In a small bowl, soak the onion slices in icy cold water for 15 minutes. Remove from the water and pat dry. In a large bowl, add the onions, cucumbers and tomatoes and toss to combine.
  • In a small bowl, whisk together the lemon juice, olive oil and salt and pepper, to taste. Pour over the salad and serve immediately.

1 cup loosely packed fresh basil leaves, torn into bite-size pieces

  • Pour vinegar into small bowl. Gradually whisk in oil. Season vinaigrette to taste with salt and pepper. Place bread in large bowl. Pour in enough cold water (about 8 cups) to cover bread. 1 small purple onion
2-3 tbsp extra virgin olive oil

1/4 c chives (chopped)

4 tbsp capers
chive blossoms (for garnish (optional))
1/2 tsp Fleur de Sel sea salt + more to taste
1 heirloom tomato (peeled)
2 tbsp red wine vinegar

Steps:

  • Using a very sharp knife slice the tomatoes into small wedges and add them to a serving bowl with the capers.
  • Slice the purple onion into thin strips or rounds and sprinkle on top of the tomatoes. Add the fresh oregano, dill, chives and basil.
