This quick & easy side dish is zesty & full of flavor!

1 tablespoon olive oil
½ cup onion (diced)
1 cup white rice
2 cups chicken broth
1 ripe tomato (diced with juices, plus extra for garnish)
2 cloves garlic (minced)
salt and pepper (to taste )
3 tablespoons parmesan cheese (grated, divided)
2 tablespoons fresh basil (chopped)

Steps:

  • In a medium saucepan, cook onion in olive oil until it begins to soften, about 4 minutes. Add rice and cook 2-3 minutes or until the rice starts to brown a little bit.
  • Stir in chicken broth, tomatoes (with any juices), and garlic. Add salt & pepper to taste.
  • Bring to a boil, cover and reduce heat to a simmer. Cook 20 minutes without lifting the lid.
  • Remove from heat and rest 5 minutes before removing the lid. Add 2 tablespoons parmesan cheese and basil. Mix well.
  • Place in a bowl, garnish with remaining parmesan cheese, additional basil and fresh tomatoes if desired.

Recipe video above. This is a copycat of the Tomato Basil Rice convenience packs sold at supermarkets. It's a seasoned rice flavoured enough that you can eat it plain. Ideal served on the side of many mains! Makes 3 cups of cooked rice.

1 1/2 tbsp olive oil ((or butter))
2 garlic cloves (, finely chopped)
1/2 brown onion (, finely chopped)
1 1/4 tsp dried basil
1 cup (180g) long grain white rice (, uncooked (Note 1))
1 3/4 cups (435 ml) chicken broth (, full salt (or Veg broth))
2 1/2 tbsp tomato paste
3/4 tsp paprika (, sweet or normal (not smoked))
1 tsp sugar ((any))
1 sprig of basil with leaves
1/3 cup finely chopped basil

Steps:

  • Heat oil in a large saucepan over medium heat. Add garlic and onion, cook until translucent, 2 - 3 minutes. Add basil and cook for 20 seconds - don't let it burn.
  • Add remaining ingredients except basil. Mix until tomato paste is dissolved.
  • Crush basil sprig in hand, drop on surface then push in (leave on surface, don't stir).
  • Cover and bring to simmer, then immediately turn down heat to medium low (or low if stove is strong) and cook for 15 minutes or until liquid is fully absorbed - tilt saucepan to check.
  • Remove from heat and set aside, covered, for 10 minutes.
  • Remove basil sprig. Fluff with fork, taste for salt. Then leave to stand for another 5 minutes, uncovered. Stir through fresh basil. Serve immediately.

1 cup long-grain rice
1 cup diced tomato (fresh or canned)
1 cup hot water (3/4 cup if using canned tomatoes)
1 -2 garlic clove, cut into thin slices
2 tablespoons fresh basil, chopped (use 1 t dried basil alternatively)
3/4 teaspoon salt
1/8 teaspoon red pepper flakes (optional)
1/4 teaspoon black pepper, to taste
1 tablespoon olive oil
1/2 teaspoon sugar (optional)

Steps:

  • Heat oil, fry garlic until fragant but don't let it brown; Add tomates, stir until hot.
  • Add rice, basil, salt,(sugar, red pepper) and water; Bring to a boil, reduce heat to minimum and cook covered until done, 18-20 minutes.
  • Add black pepper and a little more fresh chopped basil if you like and serve garnished with some basil leaves.

1 1/2 lbs tomatoes, cut in half (about 3 large vine-ripened tomatoes)
1/4 cup minced fresh herb (basil, parsley, marjoram)
1/2 cup grated dry breadcrumbs
1/2 cup shredded parmesan cheese or 1/2 cup asiago cheese
2 -4 garlic cloves, finely minced
1 pinch salt
1 pinch fresh ground black pepper
3 tablespoons extra virgin olive oil

Steps:

  • Preheat the oven to 350°F.
  • Put the tomatoes in a nonstick baking dish, cut sides up.
  • Combine the herbs, bread crumbs, cheese, garlic, salt, pepper, and oil in a small bowl.
  • Sprinkle each tomato with an equal portion of the mixture.
  • Bake for 30 minutes or until crusty.
  • Tomatoes will be soft yet hold their shape.

250g medium rice noodles
85g sundried tomatoes plus 2 tbsp of their oil
3 garlic cloves
25g parmesan (or vegetarian alternative), shaved or grated
large handful basil leaves , torn

Steps:

  • Prepare the noodles according to pack instructions, then drain. Heat the oil, then fry the tomatoes and garlic for 3 mins. Toss the noodles and most of the cheese and basil into the pan, season, then scatter over the remaining cheese and basil.

  • Turn your Instant Pot to the saute setting. When the display says HOT add in the oil and swirl it around. Add in the onion and saute for 4 minutes. Add in the garlic and saute for 20 seconds.
  • Add in the broth and scrape the bottom of the pot. Add in the rice. Then dump the tomato sauce on top without stirring.
