TERIYAKI CHICKEN FRIED RICE

Cancel the takeout order. Chicken, veggies and cooked rice coated in a teriyaki sauce make a tasty and hearty dinner that gets to the table fast.

2 large eggs
Kosher salt
2 tablespoons vegetable oil
1 boneless, skinless chicken breast (about 8 ounces), diced
1 cup frozen peas and carrots, thawed
1 small red bell pepper, diced
1 bunch scallions, chopped
1 tablespoon grated fresh ginger
3 cups cooked white rice, cold or at room temperature
1/2 cup Food Network Kitchen™ Inspirations Japanese Style Teriyaki Cooking Sauce

Steps:

  • Whisk the eggs with a pinch of salt in a small bowl. Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat. Add the eggs and cook, without stirring, until almost set, about 1 minute. Flip the egg pancake with a rubber spatula and cook until just set on the other side, about 1 minute. Transfer to a cutting board and cut into thin strips.
  • Heat the remaining 1 tablespoon oil in the same skillet over high heat. Add the chicken and cook, stirring, until almost cooked through, about 2 minutes. Add the peas and carrots, peppers and scallions and continue to cook, stirring, until crisp-tender, about 2 minutes. Add the ginger and cook, stirring, 1 minute. Add the rice and Japanese Style Teriyaki Cooking Sauce and cook, stirring, until warmed through. Stir in the egg strips and divide among 4 bowls.

2 cups enriched white rice
4 cups water
⅔ cup chopped baby carrots
½ cup frozen green peas
2 tablespoons vegetable oil
2 eggs
soy sauce to taste
2 tablespoons sesame oil, to taste

Steps:

  • In a saucepan, combine rice and water. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
  • In a small saucepan, boil carrots in water about 3 to 5 minutes. Drop peas into boiling water, and drain.
  • Heat wok over high heat. Pour in oil, then stir in carrots and peas; cook about 30 seconds. Crack in eggs, stirring quickly to scramble eggs with vegetables. Stir in cooked rice. Shake in soy sauce, and toss rice to coat. Drizzle with sesame oil, and toss again.

6 c cooked brown rice
1/2 bag(s) frozen green veggie
left over cubed meat
1/2 red onion-chopped
1 avocado-cubed
2 eggs-beaten
coconut oil
soy sauce
garlic
cumin
sesame seeds
lime juice
fresh cilantro for garnish
green onion for garnish

Steps:

  • 1. Make a big pot of brown rice following packaging directions. I make it a day or two before so the grains are nice and separate for frying. I used about 6 cups in this recipe but you can use more or less.
  • 2. Heat up some coconut oil in a frying pan. When melted add the chopped onion and garlic and fry for a bit until fragrant.
  • 3. Dump in the cooked rice and stir to coat all the grains with the oil.
  • 4. Now add your left over meat. I usually use pork roast but you can use anything you like.
  • 5. When the meat is heated through add the vegetables. I used broccoli this time but my favorite is peas. If you want to use fresh veggies, probably cook them first or stir fry with the onion in the first step.
  • 6. Push everything in the skillet to the edges so you have an open space in the middle of the pan. Add a little more coconut oil if there is no liquid flowing in to the center.
  • 7. Pour in the beaten eggs and after they are somewhat set, break them up and stir into the rice. Once again push all to the edges. (maybe a little more oil again)
  • 8. Put the sesame seeds and cumin in the center and fry again until toasted. Add a splash of lime juice and some soy sauce. Incorporate everything together once again. Taste to make sure there is enough soy sauce flavor.
  • 9. Stir in avocado and top with green onions and cilantro for garnish if desired.

2 eggs, beaten
1 tablespoon butter or 1 tablespoon margarine
1/4 cup chopped onion
1/4 cup chopped green pepper (optional)
2 cups rice, prepared and cooled
1/2 cup cooked shrimp (optional) or 1/2 cup cooked chicken (optional)
1/4 cup soy sauce
1/2 cup cooked peas (optional)

Steps:

  • Melt 1 tablespoon butter in skillet or wok.
  • Scramble eggs in butter, breaking up the cooked eggs into small pieces.
  • Set aside.
  • Melt 1 tablespoon butter in skillet or wok.
  • Saute onions and/or green peppers in butter for 3 minutes.
  • Combine eggs, onions, rice, and meat.
  • Stir in soy sauce until color of rice is uniform.
  • Stir in peas.
  • Heat only until warm.

1 egg , beaten
2 rashers bacon , chopped
175g mushrooms , sliced
200g frozen peas
1 garlic clove , crushed
small knob of ginger , grated
2 tsp dark soy sauce , plus extra to serve
1 tsp sugar
250g cooked basmati rice

Steps:

  • Heat the oil in a frying pan, then tip in the egg. Leave to set for 30 secs-1 min, swirling every now and again, then tip it out and finely slice. Add the bacon and mushrooms to pan, then fry until golden, about 3 mins. Add the peas, garlic and ginger, then cook for 1 min.
  • Mix the soy sauce and sugar together. Turn up the heat, add the cooked rice to the pan, heat through, then splash in the sweet soy sauce. Stir through the egg and serve straight away, with more soy sauce if you like.
