TOM YUM KUNG

Tom Yum Kung image

So easy to prepare. So good to eat. Thin sliced chicken can be subbed for the shrimp. Mushrooms may be omitted. You can add more vegetables (like eggplant, celery, tomatoes, etc). Serve with rice or noodles. Any type of mushroom can be used in the recipe. This is an online recipe that I modified slightly.

Time 20m

Yield 3 serving(s)

Number Of Ingredients 13

3 cups chicken stock
1 tablespoon lime juice
1 stalk lemongrass, sliced thinly (tough outer leaves and bulb removed)
1 1/2 teaspoons galanga powder (Thai ginger)
3 kaffir lime leaves, thinly sliced (or one large strip of lime peel)
3 garlic cloves, minced
1 -2 small chili pepper, de-seeded and sliced (as hot as you like or mild)
1 medium bell pepper, sliced (any color)
1/3 cup cilantro
2 tablespoons fish sauce
1 1/2 cups shiitake mushrooms, sliced thinly (or any small mushroom)
12 large raw shrimp, shells removed
1 (11 ounce) can coconut milk

Steps:

  • Pour stock and lime juice into a deep cooking pot.
  • Place lemongrass in a food processor and process until finely grated. Add to pot. The bulb can be thrown into the pot for additional flavor (remove before serving).
  • Add the galanga powder to the pot.
  • Add garlic, chilies, peppers, and Kaffir leaves (or lime peel). Bring to a mild boil.
  • Add the mushrooms and shrimp. Gently simmer 'til shrimp is pink.
  • Turn down the heat to low then add the coconut milk and fish sauce. Taste to adjust seasonings, adding more chilies and/or fish sauce (instead of salt) as desired.
  • Serve in bowls with cilantro sprinkled over. And on the side, steamed jasmine rice and quarters of fresh lime.

Provided by Seonkyoung Longest

Time 18m

Yield 4

Number Of Ingredients 16

3 cups water
3 cups chicken stock
3 shallots, small diced
2 oz galangal, sliced
3 cloves garlic, chopped
3 lemongrass, cut into 3" long and smashed
3 to 4 kaffir lime leaves
4 tbsp fish sauce
4 tbsp Thai chili paste (adjust to your taste)
8 to 10 oz mushrooms (I used shimeji & oyster mushrooms but you can use any mushrooms you have)
1 lb whole prawn or U13-15 shrimp, head removed & deveined (you can peel if you prefer)
3 to 6 Thai chilies, smashed
2 tomatoes, diced, optional
4 to 5 limes
1/2 cup evaporated milk, optional
Handful cilantro, chopped

Steps:

  • Combine water, chicken stock in a large pot. Add shallot, galangal, garlic, lemongrass, & lime leaves and bring it to boil over high heat.
  • When it's boiling, stir in fish sauce and Thai chili paste to season. Squeeze shrimp heads into pot if you are using. Add mushrooms as well.
  • Bring back to boil and add prepared shrimp. Cook shrimp until 3/4way cooked (cooking time depends on size of shrimp you're using & depends on if skin is on or off. Small to medium, 1 to 2 minutes. Large to jumbo 2 to 4 minutes. Head-on prawns 5 minutes.)
  • Now, reduce heat to low and squeeze all of lime into pot. Add 3 limes first, then adjust to your taste. Remove from heat, add evaporated milk if you are using and chopped cilantro. Stir well and serve in a bowl, garnish with some cilantro and shredded lime leaves if you'd like. Serve with lime wedge and extra chili oil and enjoy!

TRADITIONAL TOM YUM KUNG

Traditional Tom Yum Kung image

This traditional Tom Yum Kung recipe (meaning "without coconut milk") features all four of the famous Thai flavors: salty, sour, sweet, and spicy.

Provided by Darlene Schmidt

Categories     Dinner     Lunch     Soup

Time 20m

Number Of Ingredients 17

6 cups chicken stock
2 to 3 makrut lime leaves , or 1/2 teaspoon lime zest
2 stalks lemongrass , minced; or 3 tablespoons prepared lemongrass or with 3 lemon slices
3 to 4 cloves garlic, minced
1 teaspoon galangal , or ginger; grated
1 fresh red chili , minced, or 1 to 2 teaspoons Thai chili sauce
1 handful shiitake mushrooms, fresh and sliced
2 tablespoons lime juice, plus more to taste
2 tablespoons fish sauce
1 tablespoon soy sauce, plus more to taste
12 medium shrimp, shelled and deveined
1 teaspoon sugar, plus more to taste
1/4 cup fresh cilantro leaves
Optional: 1 handful of broccoli florets
Optional: 1 handful cherry tomatoes, halved
Optional: 1 small baby bok choy, sliced
Optional: 1/2 cup coconut milk, or evaporated milk

Steps:

  • Gather ingredients.
  • Place the stock in a large pot over high heat. Add the minced makrut lime leaves, minced lemongrass, and any leftover lemongrass stalks if you're using fresh lemongrass. Bring to a boil.
  • When the soup reaches a bubbling boil, reduce the heat to medium or a steady simmer. Add the garlic, galangal, chile, mushrooms, lime juice, fish sauce, soy sauce, and sugar. Simmer for 3 minutes, stirring occasionally.
  • Add the shrimp and any other vegetables, if using. Simmer until shrimp are pink and plump, about 3 minutes. Remove and discard any lemongrass stalks, if used.
  • Reduce the heat to medium-low and add the coconut milk or evaporated milk, if using. Taste-test the soup, looking for a balance of salty, sour, and spicy. If not salty or flavorful enough, add 1 additional tablespoon of fish sauce or soy sauce. If too sour, add more sugar. If too spicy and/or salty, add another squeeze of lime juice.
  • Ladle the soup into bowls and serve topped with a generous sprinkling of fresh cilantro leaves.

TOM YUM KOONG SOUP

Tom Yum Koong Soup image

Many of these ingredients can be found in Asian or specialty shops. Chili paste with soy bean oil comes in small jars and can be found in most Asian markets. Galangal, a member of the ginger family, is a knobby root that tastes like a cross between ginger and pepper. Tom Yum Soup paste can be found in Asian shops, or you can use Thai Red Curry paste. Kaffir lime leaves have an aromatic citrus-like smell and flavor. Garnish with fresh coriander leaves.

The first record of ‘tom yum’ was found in an 1888 document, from the reign of King Rama V, but it referred to fish, not to prawns. It wasn’t until 1964 that tom yum surfaced in M.R.
