TOM YAM PLA (THAI SPICY AND SOUR SOUP WITH FISH)



Tom Yam Pla (Thai Spicy and Sour Soup with Fish) image

This recipe for tom yam pla uses a whole fish. The head and bones fortify the stock and the flesh is marinated in fish sauce. The soup is seasoned with chiles, galangal, lemongrass, shallots, tomatoes, makrut lime leaves, lime juice, and culantro.

For the Fish:
2 1/2 pounds (1.1kg) head-on whole red snapper, scaled, gutted, filleted, and fillets cut into 2-inch pieces (reserve head and bones for stock; see note)
2 teaspoons fish sauce
For the Fish Stock:
1 cup grape tomatoes (5 1/2 ounces; 160g)
2 stalks lemongrass, bottom 6 inches only, outer leaves discarded, tender core lightly smashed and cut into 2-inch lengths (about 80g)
1/2 white onion (4 ounces; 115g), peeled and sliced in half
One 4-inch piece fresh galangal (50g), peeled and roughly smashed in a mortar and pestle
10 fresh or frozen makrut lime leaves (6g), roughly torn
1 tablespoon (15ml) fish sauce
For the Soup:
10 to 15 dried Thai chiles (5g), stemmed
1/2 cup grape tomatoes (2 3/4 ounces; 80g)
One 4-inch piece fresh galangal (50g), peeled and thinly sliced
4 stalks lemongrass, bottom 6 inches only, outer leaves discarded, tender core lightly smashed and cut on a bias into 2-inch lengths (about 160g)
4 small shallots (50g), peeled and roughly smashed in a mortar and pestle
10 fresh or frozen makrut lime leaves (6g), middle ribs removed (see note)
5 to 7 fresh green Thai chiles (6g), stemmed and roughly smashed in a mortar and pestle
1/4 cup (60ml) fish sauce
1/4 cup (60ml) fresh lime juice from 2 limes
5 sprigs (12g) fresh culantro leaves and tender stems, cut into 1/2-inch pieces (see note)
Cooked jasmine rice , for serving

Steps:

  • For the Fish: Place snapper in a medium bowl, add fish sauce, and toss to coat. Cover tightly with plastic wrap and refrigerate for at least 20 minutes or up to 4 hours.
  • For the Fish Stock: Meanwhile, in a large pot, combine tomatoes, lemongrass, onion, galangal, lime leaves, fish sauce, and 2 quarts (1.9L) water and bring to a bowl over high heat. Add reserved head and bones, then lower heat to maintain a simmer. Cook, skimming any scum that accumulates on the surface, until liquid is reduced by half, about 30 minutes. Strain liquid through a fine-mesh strainer set over a 2-quart saucepan (you should have about 1 quart; 945ml) and set aside. Discard head, bones, and aromatics.
  • For the Soup: Heat a 10-inch cast iron skillet or carbon steel pan over high heat until lightly smoking. Add dried chiles and cook until lightly charred on one side, making sure to move them around to avoid burning, 20 to 30 seconds. Transfer chiles to a small bowl. Add tomatoes to pan and cook over high heat until charred on all sides, making sure to move them around to avoid burning, about 3 minutes. Transfer to the bowl with chiles and set aside.
  • Bring reserved fish stock in saucepan to a boil over high heat. Add galangal, lemongrass, and shallots, along with charred chiles and tomatoes, and allow aromatics to infuse stock, about 1 minute. Add snapper, making sure it is submerged in the stock, and cook until snapper is opaque and just cooked through, about 2 minutes. Add lime leaves, fresh chiles, and fish sauce, and remove from heat. Stir in lime juice (the color of the stock will turn opaque) and culantro. Serve immediately with cooked jasmine rice.

1 lb shrimp or 1 lb chicken, cut up
4 -5 kaffir lime leaves
1/4 cup tomatoes, chopped
1 1/2 cups mushrooms, sliced
3 cups water
1 stalk lemongrass, cut into 1/2-inch pieces
4 -5 tablespoons fish sauce
7 -8 tablespoons lime juice
2 tablespoons red chili peppers, freshly ground (or to taste)
1 tablespoon chili paste, in soy bean oil (Thai name -- Nam Prik Pao, can be found in Asian grocery store)

Steps:

  • Pour water into medium saucepan and place over high head on stove; bring to boil and add Kaffir lime leaves & lemon grass; cook for 2 minutes.
  • Reduce to low heat, add fish sauce, lime juice, fresh ground red chili, and chili paste in soy bean oil.
  • Add mushrooms & tomatoes; cook for several minutes.
  • Add shrimp or chicken.
  • Turn heat to high, do not stir.
  • When shrimp or chicken is cooked, continue to cook for 2 minutes more.
  • Serve with hot rice.

A friend gave me some sample curry pastes from the company Blue Elephant:Royal Thai Cuisine, and oh joy, they have recipes on the back! This one uses the Tom Yam Chili Paste(Hot), the description reads "Combined with lemongrass and galanga, this aromatic paste will give you a hot and sour "Tom Yam" soup..". Kaffir lime leaves are available in most Asian supermarkets. Storing it here, when I've made it, I'll update.

500 ml water
1 chicken stock cube
5 g galangal, sliced
1 lemongrass, sliced and crushed
2 kaffir lime leaves
2 small red chilies, crushed
8 mushrooms, quartered
6 prawns, headless
1 1/2 tablespoons fish sauce
20 g chili paste
1 tablespoon lime juice
5 g coriander leaves

Steps:

  • Bring 500 ml water to the boil, add chicken stock cube.
  • Add sliced galangal, lemongrass, kaffir lime leaves, crushed chillies and quartered mushrooms.
  • Bring back to the boil.
  • Add prawns, fish sauce and chilli paste.
  • Simmer until cooked through.
  • Remove from heat, add lime juice.
  • Garnish with fresh coriander.

2 liters fish stock, 1% pt
4 tablespoons oil
6 tablespoons sugar
2 cups tom yam paste
2 stalks lemongrass, sliced into rings
8 slices fresh galangal root
8 kaffir lime leaves, torn into three pieces each leaf (Thai lime leaves taste like grapefruit leaves of Vietnam)
3 tablespoons chili paste, roasted (or dried chilli powder)
8 hot chili peppers, to taste
16 button mushrooms, cut in half (straw or abalone mushrooms are fine)
16 king prawns (raws)
8 large squid, cut its horizontally body, into rings, size approximately 1or 2 inch thick
8 pieces fish fillets (Red snapper, mackerel, salmon or snakehead fish, etc..., option)
3 lbs clams (or mussels)
8 tablespoons lime juice, fresh
9 tablespoons fish sauce
2 tablespoons coriander, chopped (special coriander, called ''Rau ram'' in Vietnamese)
2 tablespoons spring onions, finely sliced
5 tomatoes, the average size, 2 tomatoes cut into six equal pieces. 3 tomatoes cut into diced
2 yellow onions, sliced
16 coriander leaves, just to garnish
2 cups coconut milk (if you like)

Steps:

  • Preparation.
  • - Clams (mussels): soak them in a bowl of water as soon as you've brought home from the shops, washed, and then pour into the pot, poured the water, then boil, when you see a clam shell opening, please take the pot off the stove. Pour the clam broth in a large bowl, to sediment (sand), and then take the meat inside the shells of clams on a small plate, set aside.
  • - Boil the water first and then pour shrimp, squid, fish meat -- into the pot about 3 minutes, then remove it to the basket, drained, mixed with a little seasoning salt.
  • - Place the saucepan on the stove, heat oil, add yellow onions, stir until the wonderful odor emitted, and turn yellow golden. Then add Roasted chilli paste, galangal, lemon grass and stir well to get up the scent.
  • Add the diced tomatoes, and continue to stir untill it soft, puor the Tom Yum Paste into it. stir for about 3 minutes.
  • Draw off the water (make sure no sand) of clam broth, pour into the pot and boil about 3 minutes to get up the scent.
  • - Next, increase the heat and bring to the boil, add prawn, squid and fish into the saucepan and heat to boiling for 2 minutes, when shrimp and squid are just cooked, add the clams, mushrooms, the remaining tomatoes, fresh peppers to the pot and stir together briefly.
