TOM YAM PASTA WITH SHRIMP AND CHICKEN
Steps:
- 1)Cook the pasta in boiling water for 4-8 min. Drain and run it under tap water. Keep it aside. 2) Add olive oil, and fry the garlic until slightly brown. Add the tom yam paste in with the chicken and the shrimp fry for another 1-2 min. 3) Add the pasta and mix well. Stir in the lemon juice, salt, pepper. 4) Garnish the dish by placing the shrimp at the side and coriander leaves on the top of the pasta serve while hot

I LOVE Thai food!!! Our family eats a lot of foods from around the world and this one is a favorite. This is one soup I could eat every day. In fact, it was one of the only things that I could eat in my 2nd trimester of pregnancy.

Steps:
- Using only the white part of the lemongrass (discard the rest), pound to release the flavor and cut into 2 inch segments.
- Put lemongrass, fish sauce, ginger root and stock into a pot and bring to a simmer. Cover and simmer for another 15 minutes.
- Uncover the pot and add the Kaffir lime leaves, chilies, onion, sugar and chicken pieces (if using prawns, add during last two minutes of cooking).
- Simmer for 2-3 minutes, then add Nam Prik Pao and mushrooms. Simmer for yet another 2 minutes. Now add the green onions and let it simmer for 30 seconds.
- Turn off the heat, add lime juice and garnish with coriander leaves. Test for saltiness and sourness. If required, adjust with more fish sauce (salt) and lemon juice (sour).
- If you can't find Kaffir Lime leaves, lime zest is the closest thing (use 1-2 tsp).

- Clams (mussels): soak them in a bowl of water as soon as you've brought home from the shops, washed, and then pour into the pot, poured the water, then boil, when you see a clam shell opening, please take the pot off the stove. Pour the clam broth in a large bowl, to sediment (sand), and then take the meat inside the shells of clams on a small plate, set aside.
- Boil the water first and then pour shrimp, squid, fish meat -- into the pot about 3 minutes, then remove it to the basket, drained, mixed with a little seasoning salt.
- Place the saucepan on the stove, heat oil, add yellow onions, stir until the wonderful odor emitted, and turn yellow golden. Then add Roasted chilli paste, galangal, lemon grass and stir well to get up the scent.
- Add the diced tomatoes, and continue to stir untill it soft, puor the Tom Yum Paste into it. stir for about 3 minutes.
- Draw off the water (make sure no sand) of clam broth, pour into the pot and boil about 3 minutes to get up the scent.
- Next, increase the heat and bring to the boil, add prawn, squid and fish into the saucepan and heat to boiling for 2 minutes, when shrimp and squid are just cooked, add the clams, mushrooms, the remaining tomatoes, fresh peppers to the pot and stir together briefly.

- Add the shrimp stock, lemongrass, kaffir lime leaves, galangal and chilies to the pot. Bring to a boil and let it boil for 3-4 minutes until you can smell the fragrance of the herbs from the pot.
- When the soup is done simmering, add the oyster mushrooms, and bring the soup back to a boil.
- Once the soup comes back to a boil, add the shrimp and when the soup just starts to bubble again, turn off the heat. Let the residual heat of the soup cook the shrimp completely, another minute or so.
- Add the lime juice, fish sauce, chili paste (if using) and sugar to your soup and stir. Taste and adjust seasoning to your liking. If you're not using the chili paste, you may find you need to add a bit more fish sauce/sugar. But taste it first!
