This Tom Collins recipe is the best! Tom Collins cocktails are made with gin, lemon, club soda and simple syrup. They're delightfully fizzy, delicious and refreshing. Recipe yields 1 cocktail, so multiply as needed (you can mix several at once in a cocktail shaker).

Ice
2 ounces gin*
1 ounce lemon juice
1/2 ounce simple syrup, recipe below
Club soda or sparkling water (I like Topo Chico)
1 lemon round or 1/2 orange round, for garnish
1 Luxardo cherry or other cocktail cherry, for garnish
¼ cup sugar (traditional) or honey (my favorite)
¼ cup water

Steps:

  • To make the simple syrup: Combine the sugar (or honey) and water in a small saucepan. Warm over medium heat, whisking occasionally, just until the sweetener has fully dissolved into the water. Remove the pot from the heat and set it aside to cool.
  • To make a cocktail: Fill a cocktail shaker with ice. Pour in the gin, lemon juice and simple syrup. Shake for 20 to 30 seconds, until the outside of the shaker is really cold.
  • Fill a Collins (tall) glass with ice. Strain the contents of the shaker into the glass. Fill the rest of the glass with club soda, and give it a gentle stir with a spoon.
  • Garnish with a lemon round or 1/2 of an orange round, plus a cocktail cherry. Enjoy.

¾ fluid ounce lemon juice
½ fluid ounce simple syrup
1 cup ice
2 fluid ounces club soda
1 lemon wedge

Steps:

  • Fill a Collins glass with 1 1/2 cups ice, set aside in the freezer. Combine gin, lemon juice, and simple syrup in a cocktail shaker. Add 1 cup ice, cover and shake until chilled. Strain into the chilled Collins glass.
  • Top with club soda and garnish with a lemon wedge.

This was my mom's favorite drink when I was younger. I remember my uncle making these for her and I always asked her for the maraschino cherry. Found the recipe on a popular mix drink website.

1 ounce lemon juice
2 ounces gin
1 slice orange
3 ounces club soda
1 maraschino cherry
1 teaspoon superfine sugar

Steps:

  • Fill a shaker half way with ice cubes.
  • Add gin, lemon juice and sugar, shake well.
  • Strain mix into a collins glass that is almost filled to the top with ice cubes and add the club soda. Stir well and garnish with the cherry and orange slice.

  • Build the drink over plenty of ice in a Collins glass, stir gently and garnish with a slice of lemon. 3 TWISTSRaspberry CollinsRaspberries give this twist on the classic Collins a pretty splash of colour.
