Tofu Hoisin With Bok Choy image

This is based on a recipe from "Wild About Greens" by Nava Atlas with some changes so it better fits our Nutritarian eating style. It's colorful and delicious. It takes a little longer to prepare than some of my other recipes but it's worth the extra time. You can reduce prep time by using frozen vegetables.....To chop bok choy: Trim the rough edge off the root ends of the bok choy, then cut across the stem just below the leaf. Slice the white stem portion into 3 or 4 lengthwise strips, then cut across to dice. Slice the leafy top crosswise and then cut each strip into 1 inch pieces.....Pressing tofu: Cut it into 1/2 inch slices. Lay the slices out on a clean kitchen towel that has been folded in half or a couple of layers of paper towel. Fold the kitchen towel over the tofu slices or place additional paper towels on top. Cover with a small cutting board and place 6 to 8 cans on top to weight it down. Let tofu sit 30 minutes before cutting it into 1/2 inch cubes.

16 ounces extra firm tofu
16 ounces bok choy, chopped
1 teaspoon fresh ginger, minced
3 carrots, diced
1 onion, diced
4 mushrooms, cut in half and sliced
1/4 cup hoisin sauce
1/4 cup orange juice, preferably fresh
1 tablespoon low sodium soy sauce
1/2 teaspoon oil (to coat pan)
1/2 cup sliced almonds

Steps:

  • Slice tofu, then press. See Anne Sainz notes above for more detailed instructions.
  • While tofu is being pressed, chop bok choy and set aside. If you haven't worked with bok choy before, see Anne Sainz notes above.
  • Prepare ginger, carrots, onion and mushrooms. Combine and set aside.
  • For sauce, combine hoisin sauce, orange juice and soy sauce and set aside.
  • Cut pressed tofu into 1/2 inch cubes.
  • Coat large covered non-stick frying pan or Dutch oven (at least 5 quarts) with oil and add cubed tofu. Saute with medium high heat until golden brown, stirring frequently. Remove from pan and set aside.
  • Add ginger, carrots, onion and mushrooms to pan. Cook over medium heat, stirring frequently, adding small amounts of water as needed to prevent sticking. Continue cooking until carrots just begin to soften.
  • Add bok choy and sauté until bok choy begins to wilt, 1 to 2 minutes.
  • Add tofu, sauce mixture and almonds. Cook a minute or two longer until heated through, stirring frequently.

The combination of ingredients in this recipe I have to say is perfect. Really delicious and nutritious. This is a Mollie Katzen recipe.

1/2 cup unprocessed peanut butter
1/2 cup hot water
1/4 cup cider vinegar
2 tablespoons tamari
2 tablespoons blackstrap molasses
1/2 teaspoon cayenne pepper
1 (1 lb) bunch fresh broccoli (frozen will do)
3 tablespoons oil
8 cloves garlic, minced
1 lb tofu, cut into small cubes
3 dashes salt
2 cups thinly-sliced onions
1 cup coarsely-chopped raw peanuts
2 -3 tablespoons tamari

Steps:

  • -----------TheSauce-----------.
  • In a small saucepan, whisk together the peanut butter and hot water until uniform in consistency.
  • Whisk in the remaining ingredients.
  • Set aside.
  • -------TheSaute-------------.
  • Cut off the bottom half-inch of the broccoli stems.
  • Shave off the tough outer skins of the stalks with a sharp paring knife or a vegetable peeler.
  • Cut the stalks diagonally into thin slices.
  • Coarsely chop the flowerettes.
  • Set aside.
  • Begin heating the large skillet.
  • When it is hot add 1 tbsp of the oil.
  • Add half the garlic.
  • Salt lightly.
  • Sauté over medium heat for 1 minute, then add the tofu chunks.
  • Turn the heat up a little, and stir-fry the tofu for 5-8 minutes.
  • Transfer it, including whatever liquid it might have expressed, to the saucepanful of peanut sauce.
  • Mix together gently.
  • Wipe the skillet with a paper towel, and return it to the stove to begin heating once again.
  • Add the remaining garlic.
  • Salt lightly.
  • Add the onions, and some black pepper.
  • Sauté, stirring frequently, over medium heat, until the onions are soft.
  • On another burner, begin heating the peanut-tofu sauce on a low heat.
  • It shouldn't actually cook-it only needs to be warmed through.
  • Add the broccoli and the chopped peanuts to the skillet.
  • Add 2-3 tbsp tamari and stir-fry over medium-high heat until the broccoli is bright green and just tender.
  • Pour the heated peanut sauce over the sauté.
  • Toss everything gently until everything is coated with everything else.
  • Serve over long-grained white or brown rice (basmati is good).

This is a great appetizer, or pupu as they call them in Hawaii. Serve a platter of this with toothpicks. Decrease the amount of red pepper if you want it less spicy. This comes from Pupus, an Island Tradition by Sachi Fukuda. This makes about 4-6 appetizer servings

3 tablespoons hoisin sauce
2 tablespoons rice vinegar
2 tablespoons water
2 teaspoons sugar
1/2 teaspoon ground ginger
1/2 teaspoon cornstarch
1/8 teaspoon crushed red pepper flakes
2 tablespoons vegetable oil
14 ounces tofu, drained and cut into 1 inch cubes
1/2 lb medium shrimp, shelled and deveined
1 clove garlic, minced
6 green onions, cut into 1 inch lengths

Steps:

  • Combine hoisin sauce, vinegar, water, sugar, ginger and cornstarch and set aside.
  • Heat 1 tablespoon oil in a large skillet over medium-high heat; add tofu cubes and stir-fry about 2 minutes or until lightly browned on all sides; remove from skillet and set aside.
  • Add 1 tablespoon oil to skillet; stir-fry garlic and shrimp for 2 minutes over medium-high heat, stirring constantly; add green onion and hoisin sauce mixture and red pepper and cook, stirring until thickened and shrimp turns slightly pink, about 3 minutes; add tofu and combine well but stirring very gently so as not to break up the tofu cubes.

1 lb firm tofu
1/4 cup soy sauce
1/4 cup rice wine vinegar
1 teaspoon fresh ginger, finely chopped
2 cloves garlic, finely chopped
1 teaspoon sugar
1/2 teaspoon red pepper flakes (or to taste)
2 tablespoons peanut oil
4 heads broccoli, stalks removed,and cut into stems and florets
1 red pepper, seeded and sliced

Steps:

  • With a sharp knife, cut the tofu into 1/2-inch chunks.
  • In a glass bowl large enough to hold the tofu, mix the soy sauce, vinegar, ginger, 1 clove of the chopped garlic, sugar and red pepper flakes.
  • Add the tofu and mix gently.
  • Set aside for 10 minutes to marinate.
  • In a large saute pan or wok, heat the oil until hot.
  • Add the remaining clove of chopped garlic and saute for 30 seconds.
  • Add the broccoli and red pepper and cook, tossing the vegetables, for 3 minutes.
  • Add the tofu and marinade and cook until heated through.
  • Serve with steamed rice or cooked chinese noodles.

Stir-Fried Tofu and Peppers image

This attractive stir-fry is inspired by a traditional Chinese dish called rainbow beef. The vegetarian version works well, and it's also easier to make. If you prefer a very firm tofu, take the extra time to weight it as directed in step 1. I am happy to skip this step and use firm tofu that hasn't been weighted.

1/2 pound firm tofu
2 tablespoons soy sauce
1 1/2 teaspoons brown sugar
2 tablespoons vegetable, peanut or canola oil
2 teaspoons hoisin sauce
1 teaspoon sesame oil
2 red bell peppers, seeded and cut in 1-inch squares
1 green bell pepper, seeded and cut in 1-inch squares
1 tablespoon minced fresh ginger
2 large garlic cloves, green shoots removed, minced
1/4 to 1/2 teaspoon dried red pepper flakes (to taste)
2 scallions, white and green parts, cut on the diagonal into 1-inch lengths
Cooked rice or noodles for serving

Steps:

  • Optional step for firmer tofu: Blot the tofu dry, wrap in a clean kitchen towel and place a cutting board on top. Let sit for about 15 minutes. Whether weighted or not, slice the tofu about 1/2 inch thick into 1- x 2-inch dominoes.
  • Mix together 1 tablespoon of the soy sauce, 1 teaspoon of the brown sugar and 1 tablespoon of the oil in a medium bowl. Toss with the tofu, and stir to make sure all of the pieces are coated. Let sit for five to 10 minutes while you prepare the other ingredients.
  • In a small bowl, stir together the remaining soy sauce and sugar, hoisin sauce and sesame oil. Set aside.
  • Heat a large nonstick skillet or wok over high heat until a drop of water evaporates on contact. Add the oil, turn the heat to medium-high and add the peppers. Stir-fry for a couple of minutes, until the peppers begin to soften, and add the garlic and ginger. Stir-fry for 20 seconds, until the garlic and ginger begin to smell fragrant, and add the tofu, dried red pepper flakes and green onions. Stir-fry two minutes, give the sauce a stir and add to the pan. Cover and cook for three minutes. Remove the lid, stir the ingredients in the pan, and taste and adjust seasonings. Serve with rice or noodles.

14 ounces extra firm tofu, water-packed, drained
3 tablespoons balsamic vinegar
2 tablespoons reduced sodium soy sauce
1 tablespoon honey or 1 tablespoon agave syrup
2 garlic cloves, minced
1 tablespoon grated ginger
1 tablespoon vegetable oil, for broccoli
1/2 lb broccoli floret
1 tablespoon vegetable oil, for red pepper
1 red pepper, thinly sliced (I use red bell pepper)
1 tablespoon vegetable oil, for tofu
4 scallions, sliced, for garnish

Steps:

  • Cut the tofu across the width into 6 slabs. Cut each slab in half to make 12 squares. Blot the tofu to remove some of the moisture and set aside.
  • Whisk together the balsamic vinegar, soy sauce, honey, garlic, and ginger in a small bowl and set aside.
  • Saute the broccoli in 1 tablespoon of oil over medium-high heat until bright green and starting to brown in places, about 5 minutes. Remove broccoli from the pan.
  • Saute the red pepper in 1 tablespoon of oil over medium-high heat until it starts to brown, about 3 minutes. Remove the red pepper from the pan.
  • Saute the tofu in the remaining 1 tablespoon of vegetable oil over medium-high heat until browned, 2 minutes per side.
  • Add the vinegar mixture to the tofu and simmer until slightly thickened, about 1 minute.
  • Return the broccoli and peppers to the pan and gently toss to coat with the sauce.
  • Garnish with the scallions and serve with brown rice or another whole grain.

  • Combine hoisin, sherry, sesame oil and soy sauce in medium bowl and whisk until smooth to make sauce. Set aside.
  • Cut broccoli into bite sized pieces, then steam until tender crisp, about 6 minutes. Set aside.
  • Coat large skillet with oil. Add tofu and stir-fry on medium high heat until lightly golden all over. Remove from pan and add to sauce mixture.
  • Lower heat to medium. Put garlic, pepper flakes, mushrooms, red bell pepper and walnuts into skillet. Cook 5 minutes or until peppers are tender yet still crunchy, adding small amounts of water if needed to prevent sticking or burning.
  • Add tofu-sauce mixture and mix until sauce coats everything and is thickened.
  • Add broccoli and heat through just before serving.
