TOFU CHOCOLATE CAKE
A creamy, rich chocolate cake that can be adapted for vegans by using margarine instead of butter. Do not use the silken tofu for this recipe, as it is too watery, and the cake will not set.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Lightly grease a 9 inch springform pan.
- In a medium bowl, mix together the flour, ground almonds and 1 tablespoon of the brown sugar. Knead in the butter to form a dough. Press the dough firmly into the bottom of the prepared pan.
- Using a blender, combine the tofu, remaining sugar, oil, orange juice, chocolate liqueur, cocoa, and almond extract. Blend until smooth and creamy. Spread the batter in an even layer over the prepared crust.
- Bake for 1 hour and 15 minutes in the preheated oven. Allow cake to cool to room temperature, then refrigerate overnight. This cake must be thoroughly cold to set properly, otherwise it will be runny like a pudding.

- With a food processor or blender, mix cake mix and tofu together.
- Once mixed, add 1/4 cup water and blend again until smooth.
- Pour into baking dish and cook according to the directions on the cake mix box, depending what type of dish you use. Sometimes I make cupcakes, sometimes I make a cake and cut it into squares.
- DO NOT add the oil/egg/whatever else the cake mix box says you need - the tofu takes the place of all of these!

- Chocolate Ganche:.
- Bring the soy milk and vegan margarine to a simmer. Chop the chocolate into small pieces and add to milk. Continue to heat, stir constantly until chocolate melts then cool slightly.
- Use Immediately or it might separate. IF it does so they recommend heating and stirring vigorously.
- Note you can also use Carob chips in place of tofu chocolate.
- Bitter Chocolate Ganche:.
- Bring soy milk and syrup to simmer. Chop both kinds of chocolate into small pieces and add to milk. Stir until chocolate has melted. Remove from heat. IF separates, add more chocolate. When smooth and of desired consistency, stir in the vanilla.
- Carob Ganche:.
- Heat brown rice, soy milk and sucanat to a brief simmer. Add carob chips, vegan margarine and cocoa [if using] and cook for about a minute. Remove from heat and stir in the vanilla.
- To Ice a cake. Place cake on wire rack and slp a clean baking sheet under. This will catch the drips and you can reuse the runoff.
- You can also use this as a dip for fresh fruit, dried fruit, or confections. Heat a small amount to start. As you use it add a little more. Avoid warming more than you will need.

- Preheat oven to 325°F. Line a 8½-inch round springform cake tin with non-stick baking paper. To make the base, combine the coconut, cashew butter and maple. Press into the prepared tin and bake for 10 minutes or until lightly golden brown.
- To make the filling, place the tofu, brown sugar, chocolate, cocoa and cornflour into the bowl of a food processor and process until smooth. Pour over the base and bake for 30 minutes or until just set. Set aside for 30 minutes, then chill for 2 hours or until cold. Serve in wedges with blueberries and whipped coconut cream.

- Grease one 9-inch (23 cm) pan.
- Preheat oven to 350F (180C).
- Puree tofu in food processor or blender.
- In medium sized mixing bowl, cream margarine and sugar together.
- Add vanilla and pureed tofu; set aside.

- Preheat oven to 350 degrees. Coat a 10-inch glass pie plate with 3 sprays of the vegetable oil.
- In the bowl of a food processor, combine the tofu, ricotta cheese, cream cheese, maple syrup, cocoa powder, egg whites, cinnamon, and the liqueurs.
- Puree until smooth and pour into the prepared pie plate.
- Place the pie plate on the center rack of the oven.
- On the bottom rack, place a baking pan filled halfway with water.
- Bake for 1 hour.
- While the cake is baking, combine all the topping ingredients in a small bowl and whisk thoroughly.
- When the cake has cooked for an hour, remove it from the oven, spread the topping on evenly, decorate if you wish, and return it to the oven.
- Bake for about 10 minutes more until the topping sets.
- Refrigerate for 2 hours before serving.
