FRIED RICE WITH SCALLIONS, EDAMAME AND TOFU

Steps:
- Heat 1 tablespoon of oil in a wok or large skillet until very hot. Add the garlic, scallions and ginger and cook, stirring, until softened and aromatic, about 2 to 3 minutes. Add the rice, red pepper, edamame, corn and tofu and cook, stirring, until heated through, about 5 minutes. Make a 3-inch well in the center of the rice mixture. Add 1 teaspoon of canola oil, then add the eggs and cook until nearly fully scrambled. Stir the eggs into the rice mixture, then add soy sauce and incorporate thoroughly. Serve hot.

SCALLION OIL

- Wash and trim scallions. Bring large pot of water to a boil. Have a large bowl of ice water nearby. When water boils, add salt, when it comes back to the boil, drop in half of the scallions and blanch for 10 seconds. Remove scallions from water with tongs and drop in ice bath. Plunge remaining scallions for 10 seconds and drop into ice water. When scallions are thoroughly chilled, drain them and squeeze dry. Roughly chop the blanched scallions. Place scallions in blender. Add 1/4 cup oil. Puree scallions, stopping frequently to scrape down sides of blender, until coarsely pureed. Add rest of oil and whirl until well blended. Pour mixture through a coarse sieve into a bowl, then pass again through a fine sieve. Use as garnish. Will hold 2 to 3 days.
- Make sure to choose very fresh, very green scallions for the best flavor and color.
TOFU WITH SIZZLING SCALLION OIL
This refreshing weeknight meal comes together in less than 15 minutes and barely requires turning on the stove. Aromatic garlic, ginger and scallions are gently heated in oil until they sizzle and infuse it, turning into a fragrant, lively sauce for mild silken tofu. Peppery arugula and a final drizzle of tangy cilantro sauce brighten the dish. Enjoy with steamed rice for a heftier meal, or top with fried eggs. Leftover tofu can be stored in the scallion oil and refrigerated; it will have absorbed even more flavor the next day.

- Remove the tofu from its package; drain the tofu then pat it dry. Scoop spoonfuls of the tofu onto a large platter and arrange in an even layer. Season with salt and pepper.
- In a small saucepan, combine neutral oil, sesame oil, scallions, garlic and ginger. Cook over medium-low, stirring occasionally, until oil is sizzling and garlic, ginger and scallions are softened but not browned, about 3 minutes.
- Meanwhile, in a small bowl, combine soy sauce, cilantro and vinegar.
- Spoon hot scallion mixture over the tofu. Top with arugula and drizzle with the cilantro sauce. Serve warm or at room temperature.
MISO-SCALLION TOFU DIP

- Heat 2 tablespoons vegetable oil in a large skillet over medium heat. Add 4 thinly sliced scallions (pale parts only; reserve the dark parts for topping) and cook until softened, 2 minutes. Add one 15-ounce can cannellini beans (drained and rinsed) and 3 tablespoons miso paste and cook, stirring, until coated, 2 to 3 minutes; season with pepper. Remove from the heat and stir in 4 teaspoons soy sauce and 1 teaspoon superfine sugar; cook until glazed. Puree the bean mixture in a food processor with one 14-ounce package soft tofu (drained) and 3 tablespoons rice wine vinegar. Chill before serving. Top with the reserved scallion greens and sesame seeds.
THAI TOFU W/RED CURRY SAUCE OVER COCONUT SCALLION RICE
I got this from a friend who adapted it from Vegetarian Planet cookbook. The rice is especially good the next day.

- If using lime leaves (dried), soak in hot water for 30 minutes.
- Bring coconut milk, 2 1/2 cups water, 1 tsp salt to a boil, then add rice.
- Cover the pan and reduce heat to lowest setting.
- Cook for 25 minutes.
- Pan fry tofu until golden brown.
- Drain on papertowel & set aside.
- Chop lime leaves in small pieces.
- In a food processor or blender, combine lime rind/leaves, 2/3 cup cilantro, garlic, & peanuts.
- Run the machine in spurts.
- With the machine running, add the fish sauce & 3 TBSP oil, then the chili sauce.
- Transfer mixture to bowl.
- Put broccoli and 1/2 cup water in pan.
- Cover and steam for 2 minutes.
- Add sauce, stir for 1 minute, then add tofu.
- Stir scallions into rice.
- Serve tofu curry over rice.

SCALLION RICE

Steps:
- Place a medium-size pot with a lid over medium-high heat with about 2 tablespoons of oil.
- Add the rice to the pan and cook it for a minute, then add the chicken stock.
- Bring the liquids up to a bubble, then put the lid on the pot, reduce the heat and cook until the rice has absorbed all of the liquid, 40-45 minutes (18-20 minutes for white rice).
- Fluff the cooked rice with a fork and stir in scallions.
- Alternately you can cook this in your rice cooker, according to cooking directions. I have to presoak brown rice. Just skip the browning, oil is optional, and add scallions at the end. Fluff and serve.
TOFU AND SCALLIONS
An excellent yet simple tofu recipe that brings out the essential creaminess of soft tofu by contrasting it with bright touches of ginger and rich shitake mushrooms. We eat this for breakfast several times a week.

- First cover the mushrooms in roughly four cups of boiling water and soak while you're preparing the rest of the ingredients.
- Mince the ginger, slice the tofu into 1 inch cubes, julienne the scallions. Mix the thickener (arrowroot, water, oyster sauce and sesame oil) in a small bowl.
- Heat a nonstick frying pan or wok on the stove. When it's hot add the oil and then the ginger. When the ginger starts to turn golden then add the tofu and shitake mushrooms. Almost immediately add about a cup of the mushroom soaking liquid and soy sauce.
- Cook for 5 minutes turning once (be careful not to break up the tofu cubes). Toss the scallions on top, stir in the thickener and cook until the arrowroot turns clear. Serve with steamed rice.
