Number Of Ingredients 9

3.333 cups Tofu (cut into thin strips)
4 Tbsps olive oil
1.75 cups Lentils
2 cups vegetable stock (approx.)
4 tomatoes
juiced and zested, untreated Limes (from one lime)
1 bunch chopped mint
salt
freshly ground peppers

Steps:

  • Put the vegetable stock into a pan and bring to the boil. Add the lentils, cover and simmer gently for 10-15 minutes. The liquid should be absorbed - add a little more stock or take some away if necessary. Then leave to cool slightly, uncovered.
  • Wash, core and dice the tomatoes. Put into a bowl with the chopped mint and mix. Mix in 2 tbsp olive oil, the lime juice and zest and the lentils and season to taste with salt and pepper.
  • Heat the rest of the oil and fry the tofu on both sides until golden brown. Season with salt and pepper and serve on the lentils.

1-cal oil spray
1 large courgette , finely diced
100g smoked tofu , finely diced
½ tsp smoked paprika
1 ½ tbsp balsamic vinegar
250g sachet cooked puy lentils
1 red onion , finely chopped
1 medium roasted red pepper from a jar (not in oil), about 85g, sliced
good handful pea shoots or rocket

Steps:

  • Spray a non-stick pan with 3 sprays of oil and add the courgettes, tofu and smoked paprika. Cook for a few mins to soften the courgettes. Stir in the balsamic vinegar and allow to sizzle and reduce.
  • Meanwhile, tip the lentils, onion and pepper into a bowl and toss gently to break up any clumps of lentils. Add the tofu and courgettes, and toss again. Will keep for 2 days in the fridge. Scatter over the pea shoots just before serving.

  • Cut the tofu into desired shapes and place in a bowl. Toss with a generous splash of soy sauce or tamari and a good sprinkle of garlic powder and black pepper. Lay the pieces on a parchment or silicone mat-lined baking tray.
  • Slice your sweet potato and lay the slices on a parchment or silicone mat-lined baking tray. Place the sweet potato and tofu in the oven at the same time and bake for 30-40 minutes, flipping them both half way through. When the sweet potato is tender and the tofu is nice and browned, they’re done.
  • To make the broccoli and mushrooms, add the chopped pecies to a non-stick skillet and cook over medium-high heat for 10 minutes until browned and tender. Only stir or shake the pan occasionally so they can get nice and browned.
