- Line a 13-in. x 9-in. pan with foil; coat the foil with cooking spray and set aside. Butter the sides of a large heavy saucepan with 2 teaspoons butter. Cube remaining butter; place in pan. Add the sugar, water and corn syrup. Cook and stir until mixture turns golden brown and a candy thermometer reads 300° (hard crack stage)., Remove from the heat; stir in hazelnuts. Pour into prepared pan without scraping; spread evenly. Let stand at room temperature until cool, about 1 hour., In a microwave, melt chocolate chips; stir until smooth. Spread evenly over toffee. Sprinkle with hazelnuts, pressing down gently. Let stand for 1 hour. , Break into bite-sized pieces. Store in the refrigerator.

- In a large bowl, combine the sugar, butter, corn syrup, cinnamon, salt and nutmeg. Add peanuts; toss to coat. Transfer to a greased 15x10x1-in. baking pan. , Bake at 300° for 20-25 minutes or until bubbly and golden brown, stirring once. Cool on a wire rack; break apart if necessary. Store in an airtight container.

Steps:
- Line a 9 inch square pan with enough aluminum foil to extend a little past the edges, and butter the foil.
- Place chocolate chips in a glass bowl, and cook in the microwave, stirring every 20 to 30 seconds until melted and smooth. Spread the melted chocolate in the bottom of the prepared pan. Set aside in the refrigerator to cool while you make the candy part.
- In a small saucepan over medium heat, combine the sugar, butter, hazelnuts and corn syrup. Bring to a boil, stirring to blend as the butter melts. Heat the mixture to 250 to 265 degrees F (121 to 129 degrees C), or until a small amount of syrup dropped into cold water forms a rigid ball.
- Pour over the cooled chocolate, and spread into an even layer. Return to the refrigerator to cool. When completely cool, break into bite size pieces, and store in an airtight container.

- In a large heavy bottomed saucepan, combine the butter, sugar and salt. Cook over medium heat, stirring until the butter is melted. Allow to come to a boil, and cook until the mixture becomes a dark amber color, and the temperature has reached 285 degrees F (137 degrees C). Stir occasionally.
- While the toffee is cooking, cover a large baking sheet with aluminum foil or parchment paper.
- As soon as the toffee reaches the proper temperature, pour it out onto the prepared baking sheet. Sprinkle the chocolate over the top, and let it set for a minute or two to soften. Spread the chocolate into a thin even layer once it is melted. Sprinkle the nuts over the chocolate, and press in slightly. Putting a plastic bag over your hand will minimize the mess.
- Place the toffee in the refrigerator to chill until set. Break into pieces, and store in an airtight container.

- Combine the sugar and water in a large saucepan over medium heat and stir until the sugar dissolves. Bring to the boil, reduce the heat to low and simmer for 20-25 minutes until golden.
- Meanwhile, line a large baking tray with baking paper. Put the nuts on the tray and cover with another layer of baking paper. Crush the nuts with a rolling pin and set aside.
- Remove the sugar and water from the heat and carefully add the butter and crushed nuts and quickly pour onto the baking paper-lined tray.
- Spread the mixture evenly across the tray and set aside to cool.
- Break into pieces and serve.
- Store in the pantry in an airtight container for up to 10 days.

- Melt butter in a large saucepan.
- Add sugar, corn syrup, and water.
- Cook over medium heat, stirring now and then, to hard-crack stage (300 F on your candy thermometer)- watch carefully after temperature reaches 280°F.
- Quickly stir in coarsely chopped nuts; spread in well-greased 13x9 inch pan.
- Cool thoroughly.
- Turn out on waxed paper; spread top with the melted chocolate; sprinkle with half the finely chopped nuts.
- Cover with waxed paper; invert; spread with melted cinnamon chips.
- Sprinkle top with remaining nuts.
- (Unless you want to get creative and swirl 1/2 of each(melted chocolate and melted cinnamon) into each other!).
- If necessary, chill to firm.

- Warm the milk in a saucepan. Add the butter and set aside until the milk has cooled to hand temperature and the butter has melted. Put the flour in a large bowl with the yeast, sugar, cinnamon and 1⁄2 tsp salt, mix well. Make a well in the centre and pour in the warm milk mixture, egg and apple. Combine with a wooden spoon, then tip out onto a work surface and knead for a few mins to combine. Pop into a lightly oiled bowl, cover with oiled cling film and leave somewhere warm to rise until doubled in size - about 2 hrs.
- Lightly grease 2 large baking trays. Uncover the dough and knock out all the air. Remove a lump of dough, roughly the size of a walnut, and roll into a smooth ball. Put on a tray and squash gently with your palm. Repeat with the remaining dough - you should make about 20 doughnuts in total. Cover the trays with a sheet of oiled cling film and leave to prove until doubled in size again - about 30 mins.
- Line a large plate or baking tray with kitchen paper, and mix the remaining sugar and cinnamon on another. Pour enough oil to come halfway up the sides of a large saucepan. If you have a thermometer the temperature should reach 180C. If you don't have one, drop in a small chunk of bread. The oil is ready when it browns in about 30 secs. Drop in 3-4 doughnuts at a time (depending on the size of your pan) and cook for 4-5 mins until each one is deep golden brown and puffed up. Drain on the kitchen paper, then quickly toss in the cinnamon sugar mixture. Repeat with the remaining doughnuts.
- To fill the doughnuts, use a skewer or cocktail stick to make a hole in each one. Wiggle it around in the middle to create a cavity. Transfer the caramel to a piping bag fitted with small nozzle, insert the nozzle into the doughnut and squeeze as you pull it out, filling generously. Continue with the remaining doughnuts. Serve with extra caramel for dunking.

- Cool completely. Break into pieces.
