1 cup packed brown sugar
1/2 cup butter, cubed
2 tablespoons light corn syrup
2 large tart apples, peeled and cut into 1/4-in. slices
3 large eggs
1 cup whole milk
1 teaspoon vanilla extract
9 slices day-old French bread (3/4 inch thick)
SYRUP:
1 jar (10 ounces) apple jelly
1 cup applesauce
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves

Steps:

  • In a small saucepan, combine the brown sugar, butter and syrup. Cook over medium heat for 5-7 minutes or until thickened. Pour into an ungreased 13x9-in. baking dish. Arrange apples over top., In a large bowl, beat eggs, milk and vanilla. Dip bread slices into the egg mixture 1 minute; place over apples. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Preheat oven to 350°. Bake, uncovered, 35-40 minutes. Meanwhile, in a small saucepan, combine syrup ingredients; heat through. Serve with French toast.

2 medium apples (peeled and sliced)
¾ cup brown sugar
4 tablespoons butter
½ teaspoon vanilla (divided )
1 teaspoon cinnamon (divided)
6-8 slices white bread
2 eggs (lightly beaten)
½ cup milk
1/3 cup (flour)
optional: powdered sugar

Steps:

  • Add apple slices, brown sugar, and butter in a medium sauce pan. Cook over medium high heat until brown sugar has dissolved and butter has melted. Add 1/4 teaspoon vanilla and 1/2 teaspoon cinnamon and reduce heat to simmer. Cook 6-8 minutes longer. Remove from heat and allow to cool slightly and thicken while you prepare toast.
  • In a large, wide bowl whisk together eggs, vanilla, milk, and cinnamon. Stir in flour and whisk until smooth. Completely submerge one slice of bread in the mixture, careful to coat both sides. Lift the bread out of the liquid and allow to drip off excess.
  • Cook toast in a large pan over medium heat 1-2 minutes until lightly browned, then flip and cook other side 1-2 minutes. Repeat with remaining bread slices. Generously top toasts with apple-cinnamon mixture. Sprinkle with powdered sugar if desired.

  • Place two slices of Canadian bacon and one slice of cheese on each of six slices of bread. Top with remaining bread. Place eggnog in a shallow dish. Yes really! This is a pan-fried version of bread and butter pudding, made in the method of a French toast sandwich! A wonderful recipe, which is just the ticket for a lazy weekend breakfast or brunch, OR as a mid-week quick and easy dessert. Although it is not necessary to stamp out the rounds of bread, it DOES look so much nicer - you can use the excess bread to make breadcrumbs for baking, I never seem to have enough! I have also made this recipe with sliced brioche, now that is TOTALLY delicious, especially when served as a dessert with jam, whipped cream or even custard! You can "lighten" this recipe very easily by using low fat cream, low fat spread and fat free milk, then spray the pan with low-fat cooking spray.

16 slices medium white bread
125 g butter, softened
100 g mixed dried fruit
4 medium eggs
150 ml double cream
150 ml 1% low-fat milk
3 drops vanilla extract

2 large navel oranges, juice and zest of
1 lemon, juice and zest of
3 lbs granny smith apples (about 6-8 apples)
3 lbs sweet red apples (about 6-8 apples)
1/2 cup light brown sugar, packed
4 tablespoons unsalted butter
2 teaspoons ground cinnamon
1/2 teaspoon ground allspice

Steps:

  • Preheat oven to 400 degrees.
  • Place the zest and juice of the oranges and lemon in a large bowl. Peel, quarter and core the apples (reserving the peel of 2 of the red apples) and toss them in the juice.
  • Pour the apples, reserved apple peel and juice into a nonreactive Dutch oven or enameled iron pot.
  • Add the brown sugar, butter, cinnamon and allspice and cover the pot. Bake for 1 hour or until all the apples are soft.
  • Remove and discard the red apple peel. Mix with a whisk until smooth and serve warm or at room temperature.

3/4 cup applesauce
2 eggs, beaten
3 (1 g) packets Splenda sugar substitute
1/2 teaspoon vanilla
2 teaspoons Amaretto
2 teaspoons baking powder
3/4 cup flour
1 1/4 cups milk
1/2 cup slivered almonds
2 teaspoons cinnamon (optional)
Pam cooking spray

Steps:

  • Spread applesauce on four slices of toast.
  • In mixing bowl add eggs, Splenda, vanilla, Amaretto, flour, baking powder and milk.
  • Mix well and set aside.
  • Top the applesauce toast with another slice of plain toast.
  • Pour the batter in a flat dish.
  • Carefully place each sandwich in the batter and turn it so each side is coated.Because the bread is lightly toasted the bread will not be soggy.
  • Spray pam in a baking dish.

  • Bake uncovered about 35 minutes. Last ten minutes of baking, sprinkle slivered almonds on top. You may sprinkle cinnamon if desired. The tops should be nicely browned.
  • Serve plain or with karo or maple syrup.
  • Recipe can doubled or tripled.
  • Prepared ahead and refrigerated if desired.
  • Allow an extra 10 minutes baking time if refrigerated.
