STUFFED TOMATOES
Steps:
- Preheat oven to 400°F.
- Rinse tomatoes and cut the tops off.
- Using a spoon, scrape out the insides of the tomato. Chop the insides and the tops.
- Cook sausage, onion and garlic in a skillet until no pink remains. Drain fat.
- Add tomato tops, white wine, tomato paste, salt, and Italian seasoning. Cook an additional 5 minutes or until most of the liquid has evaporated. Stir in rice and cook until heated through.
- Reserve 2 tablespoons mozzarella cheese and 2 tablespoons parmesan cheese for topping. Stir remaning mozzarella and parmesan into the rice mixture.
- Place tomatoes in a baking dish and gently fill with rice mixture (extra filling can be placed in the pan next to the tomatoes if desired . Top with remaining cheese.
- Bake 20-25 minutes or until tomatoes are cooked and filling is heated through. Do not overcook.

- Preheat oven to 350°. Cut a thin slice off the top of each tomato. Scoop out pulp, leaving a 1/2-in. shell. Invert shells onto paper towels to drain. Mix stuffing ingredients except parsley; spoon stuffing into tomatoes. Sprinkle with parsley. , Place tomatoes in a baking dish; cover with aluminum foil to prevent over-browning of stuffing. Bake until tomatoes are tender and stuffing is hot, about 30 minutes.

TOE AND DON'S CHEESE & CRACKER STUFFED TOMATOES
This is one of my beloved family recipes. My Grandmom Toe and Grandfather Don lived outside of Meadville PA. Her family had a restaurant in the 30's and I believe that is where this came from. You can take the pulp of the tomatoes and make a casserole with it and extra cracker mixture if you want. This was my Grandfather's favorite. They are just as good re-heated and it's one of those things that I have to keep eating until it's gone! YUM!

Steps:
- Cut tops off of tomatoes and scoop out pulp leaving shell.
- If you want to save the pulp, put it in a casserole dish at this point.
- Crush saltine crackers (I just do it carefully right in the unopened sleeve) to say pea size, put in bowl.
- Grate the cheese into the bowl, turning with your hands every few minutes so the cheese doesn't stick together and gets mixed in nicely with crackers.
- Carefully but firmly stuff tomatoes with mixture.
- Dot each tomato with a pat of butter.
- Bake 1 hour or until tomatoes are soft.
- If making the casserole cut tomato count to six and use extra crumbs on pulp.

DRAGON TOES
Steps:
- Preheat the oven to 400 degrees F.
- Slice the tops of the peppers off and discard the tops but keep the membranes. Place the scallops inside the peppers. Starting at one end, roll each pepper in 1 slice of bacon. Skewer the dragon toe through the center, placing 3 toes per skewer.
- Roast in the oven for 12 minutes.

- Begin by cutting 1/8 of an inch off the top of the tomatoes.
- Use a spoon to scoop out the core and seeds of the tomatoes.
- Place the tomatoes upside down on a doubled paper towel to drain residual liquid.
- Rinse the shrimp, pat dry, and refrigerate.
- Mix Mayo, Dijon mustard, dill, chives and lemon juice in a mixing bowl. Add salt and pepper to taste. Mix in shrimp.
- Place tomatoes in a muffin tin and "stuff" with shrimp mixture.
- Garnish with slices of avocado.
- Chill for 20 minutes.
