SOUTHERN BAKED MAC AND CHEESE
This rich and decadent baked pasta is a Southern Black staple for holidays and special occasions. Steering away from the standard stovetop mac, this version includes three kinds of cheese and bakes up like a casserole with a crispy, golden top. The addition of eggs makes it similar to a cheesy, savory custard. Warning: This is not diet food!

Steps:
- Preheat the oven to 375 degrees F. Bring a large pot of salted water to a boil.
- Cook the macaroni according to the package directions until 3 minutes less than fully cooked. Drain and rinse under cold water until cooled; drain well. Add the cooked pasta back to the pot.
- Put the eggs, heavy cream, Cajun seasoning, ground mustard, nutmeg and a big pinch of salt in a medium bowl and whisk to combine. Pour over the cooked pasta and stir to combine.
- Toss together the Cheddar, mozzarella and Gouda in a large bowl. Add the cheeses to the pot and stir to evenly combine. Transfer the mixture to a 9-by-13-inch baking dish.
- Bake until the center of the mac and cheese is set and the top is golden brown, 60 to 70 minutes. Let cool about 10 minutes before serving.
SUPER DECADENT MAC AND CHEESE

- Preheat the oven to 350 degrees F. Grease a 9- by 13-inch baking dish with butter.
- Bring a large pot of salted water to a boil, add the macaroni and cook, stirring occasionally, until al dente, about 7 minutes. Strain in a colander, run cold water over the pasta and set aside.
- Using the same pot the macaroni was cooked in, melt the 1/4 cup butter over medium heat, add the flour and whisk until smooth. While whisking constantly, slowly add the milk and then the cream. Bring to a simmer, add the cream cheese and the shredded Cheddar except for 1/2 cup and stir until melted. Stir in the granulated garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper. Remove the cheese sauce from the heat and stir in the macaroni. Season with salt and pepper.
- Whisk together the eggs and sour cream in a small bowl and then fold into the macaroni and cheese. Spread the mixture into the prepared baking dish, fold in the cubed Cheddar and top with the reserved 1/2 cup shredded Cheddar. Bake until the top just begins to brown, about 20 minutes. Loosely cover with foil and bake 10 to 15 minutes more.
GOURMET MAC & CHEESE

- Preheat oven to 350 degrees F.
- Boil pasta in boiling salted water until very al dente?about 3 minutes less than the box instructions (it will finish in the oven).
- Render pancetta in a large oven-safe pan or French braiser over medium heat until still chewy and not quite crispy, about 20 minutes (it will finish crisping in the oven). Remove pancetta and drain all but 1 tablespoon rendered fat. Add butter, melt and then add flour to make roux. Whisk until smooth, then cook until blonde in color, 2 to 3 minutes. Add garlic, Dijon and hot sauce. Whisking vigorously, slowly add milk. Bring to simmer, whisking constantly, then cook, whisking occasionally, about 5 minutes.
- Add fontina, Gruyere, Havarti and blue cheese and season with salt and pepper. Mix in pasta until fully coated. Cover entire top with pancetta and bake until bubbly and gooey, 10 to 15 minutes. Sprinkle with chives and serve immediately.
- Unbaked Gourmet Mac & Cheese can be made ahead of time and stored in the fridge. Bring to room temperature before baking, and add on another 10 minutes in the oven.
BAKED MACARONI AND CHEESE

- Preheat oven to 350 degrees F.
- In a large pot of boiling, salted water cook the pasta to al dente.
- While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
- Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.
- Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.
- Remember to save leftovers for fried Macaroni and Cheese.

- Fill a large pot with about 6 quarts water and place over high heat.
- Warm the milk in a small saucepan over medium heat, or in a glass measuring cup in a microwave, for about 1 minute.
- In a medium saucepan, melt the butter over medium heat, then stir in the flour-whisk until the mixture turns a deep golden, about 2 minutes.
- Add in the warmed milk all at once and continue to whisk constantly until the mixture thickens and comes to a full boil, 4-5 minutes (whisk diligently and there will be no lumps).
- Stir in the salsa, remove from heat, then stir in the cheese, stirring until cheese is melted.
- Taste and season with salt.
- When the water comes to a boil, add in pasta.
- Stir so no pieces stick together; boil until pasta is al dente, about 8-10 minutes.
- Drain pasta well and return to the pot.
- Stir in the cheese sauce, then spoon mixture into a serving dish; sprinkle with cilantro.
- *If you want a crusted macaroni and cheese-spoon mixture into a buttered baking dish; top with ½ cup bread crumbs mixed with 1 tablespoon melted butter and bake at 375° for 10-12 minutes, until richly browned and crisp.
