Simple Toaster Oven Honey Cornbread image

This simple toaster oven honey cornbread is perfect as a little breakfast, side, or a snack. You can even half it to make it in the toaster oven too!

1/2 cup flour
1/2 cup cornmeal
2.5 tbsp sugar
1/4 tsp salt
2.5 tbsp honey
1 tsp baking powder
1/4 cup 2% milk
1/4 cup heavy cream
1/8 cup vegetable oil
1 eggs
1 cup all-purpose flour
1 cup cornmeal
1/3 cup sugar
1/2 tsp salt
1/3 cup honey
2 tsp baking powder
1/2 cup 2% milk
1/2 cup heavy cream
1/4 cup vegetable oil
2 eggs

Steps:

  • For the toaster oven just make sure your controls are set to bake and 400 degrees you don't need to preheat the toaster oven it heats up fast enough but for the oven, version preheat oven to 400 degrees F (200 degrees C). Lightly grease a 5/7 baking dish for the toaster oven or an 11x7 inch baking pan for the oven, set to the side.
  • In a medium/large bowl, stir together flour, cornmeal, sugar, salt, and baking powder. Make a well in the center of the dry ingredients. Add the milk, cream, oil, honey, and egg/eggs; stir to combine. Pour batter into prepared baking pan.
  • Bake in the toaster oven/preheated oven for 25 to 30 minutes, until a toothpick inserted into the center, comes out clean.

I wanted to show that my toaster oven was useful for more than just small warm-ups and toast. I tried a corn bread and I was very pleased with the results. Obviously, this can be done in a full size oven, but It worked well. Oh, and I used my Magic Bullet to make Oat flour. How cool is that?

1 cup Yellow Cornmeal
1 1/2 cup Old Fashioned Quaker Oatmeal
1/4 tsp Salt
1/4 cup Granulated Sugar
2 tsp Baking Powder
1 cup soy milk
1 large egg
1/2 cup Applesauce, unsweetened
1/4 tsp chili powder (optional)

Steps:

  • Put the Oatmeal into a blender or food processor and process until it forms a powder. Add to a bowl with the cornmeal, salt, sugar, and baking powder and stir to blend. Add the soy milk, egg, and applesauce and stir until blended. Add it chili powder if desired.
  • Pour batter into a 6 x 8 that fits into your toaster oven. Set to bake at 400ºF for 20 minutes.

2 cups coarse yellow cornmeal
2 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon kosher salt
1 1/2 cups whole milk
2/3 cup honey, warmed
2 large eggs, beaten
1/2 cup unsalted butter, melted

Steps:

  • Preheat the oven to 350°F
  • Oil a 9-by-13-inch metal baking pan.
  • In a medium skillet, toast the cornmeal over moderately high heat, stirring constantly, until lightly browned, about 5 minutes.
  • Transfer to a large bowl and whisk in the flour, baking powder and salt. Set aside.
  • In a separate bowl, whisk the milk with the honey and eggs.
  • Add the liquid to the dry ingredients and whisk until moistened.
  • Add the butter and whisk until smooth.
  • Pour the batter into the prepared pan and bake for 30 minutes, until golden and a toothpick inserted in the center comes out clean.
  • Let the corn bread cool on a rack for 15 minutes.
  • Cut into squares and serve warm or at room temperature.
