SOBA IN TOASTED SESAME SEED SAUCE

Soba in Toasted Sesame Seed Sauce image

Popular in Japan, Soba noodles are made of buckwheat and offer a nice change of pace from other pastas. Though this dish is usually made with Chinese black vinegar, I've used balsamic vinegar with good results. One could include some thinly shaved slices of poached chicken or julienned strips of tofu if desired. You can also vary the vegetables -- in my picture I used a combination of broccoli and carrots. Cooking time includes the 30 minutes waiting time,

Categories     One Dish Meal

Time 1h5m

Yield 4 serving(s)

Number Of Ingredients 11

1/2 cup sesame seeds
8 ounces dried soba noodles
1/4 cup balsamic vinegar
4 teaspoons white sugar or 4 teaspoons Splenda Sugar Blend for Baking
2 1/2 tablespoons soy sauce
1 garlic clove, minced
1 1/2 teaspoons sesame oil
5 green onions, chopped
3 cups broccoli florets
1/2 cup thinly sliced chicken breast, poached (optional)
1/2 cup firm tofu, julienned (optional)

Steps:

  • Preheat the oven to 375°F.
  • Pour the sesame seeds onto a rimmed baking sheet. Toast the seeds in the oven for 12 to 15 minutes, until they are a rich brown around the edges.
  • Meanwhile, bring a large pot of salted water to a boil. Add the noodles and cook them for 4 to 6 minutes, or until they are just tender. (Check the package for best cooking time as it will vary by the thickness of your noodles.) Drain them, rinse them well with cold water, and drain them again.
  • In a large mixing bowl, mix together the vinegar, sugar, soy sauce, garlic, sesame oil and green onions. Add the noodles, and the toasted sesame seeds. Toss well, then stir in the broccoli.
  • Let the dish sit for 20 minutes at room temperature before serving.

BAKED FISH WITH TOASTED SESAME SEEDS

Baked Fish With Toasted Sesame Seeds image

This recipe works best with a nice, firm white fish, such as red snapper, grouper, or tilapia. Cooking time does not include the 2 hours of marinating time.

Provided by breezermom

Categories     High Protein

Time 30m

Yield 4 serving(s)

Number Of Ingredients 9

1/4 cup orange juice
1 tablespoon brown sugar
2 tablespoons ketchup
2 tablespoons soy sauce
1 tablespoon lemon juice
1 teaspoon vegetable oil (I have used 3/4 tsp veg oil and 1/4 tsp sesame oil as well)
1/4 teaspoon black pepper, freshly ground
16 ounces fish fillets, preferably a nice firm white fish, such as red snapper, grouper, cod, tilapia (cut into 4 serving size pieces)
1 tablespoon sesame seeds, toasted

Steps:

  • Place the orange juice, brown sugar, ketchup, soy sauce, lemon juice, oil, and black pepper in a small bowl; stir well to combine.
  • Arrange the fish in a single layer in a baking dish. Pour the orange juice mixture over the fillets. Cover and marinate in the refrigerator for 2 hours, turning once.
  • Remove the fillets from the marinade, reserving the marinade. Pour the marinade into a small saucepan. Bring to a boil; reduce heat, and simmer for 5 minutes. Set half of the marinade aside.
  • Place fillets on a lightly greased rack in a shallow roasting pan. Broil fillets 6 inches from heat for 10 to 12 minutes, or until the fish flakes easily when tested with a fork, basting occasionally with the marinade.
  • Transfer fish to a serving platter. Sprinkle the toasted sesame seeds (I toast mine in a skillet while the fish is in the oven) over the fillets, and serve with the reserved marinade.

  • Place the seeds in a dry skillet (no oil) over medium heat. Heat, shaking the pan and stirring often with a wooden spoon, until the seeds are fragrant and golden brown, about 3 minutes. Stay at the stove because the seeds can easily burn! Remove immediately from the heat and transfer to a plate to stop the cooking.
  • Preheat the oven to 350 degrees Fahrenheit. Place the seeds on a baking sheet in a single layer. Bake for about 4 to 5 minutes until fragrant and golden brown, stirring once. Do not stray far from the oven, since the seeds can go from toasted to burned quickly. Remove immediately and transfer to a plate to stop the cooking.
  • Use immediately. Or, allow to cool completely and store in an airtight container at room temperature for 3 months and refrigerated at least 6 months. (You also can extend the life by freezing the seeds.)
