ROASTED ONION DIP

Steps:
- Preheat the oven to 400 degrees F.
- Add the onions to a foil-lined baking sheet, drizzle with olive oil and sprinkle with salt and pepper. Toss everything together. Transfer to the oven and roast for 35 minutes, or until the onions are tender and golden. Set aside to cool completely.
- In a stand mixer fitted with a paddle attachment, combine the cream cheese, sour cream, Parmesan, mayonnaise, Worcestershire, chives and the roasted onions. Beat until light and fluffy and well-combined. Scrape the mixture into a serving bowl using a rubber spatula. Sprinkle the remaining chives over the top and serve.
ROASTED ONION DIP
Steps:
- Toss 1 roughly chopped red onion with 2 tablespoons olive oil on a foil-lined baking sheet; season with salt and pepper. Roast at 400˚, stirring occasionally, until golden, 25 to 35 minutes. Set aside to cool. Beat 8 ounces softened cream cheese with a mixer on medium-high speed until creamy, 1 to 2 minutes. Add 1/2 cup sour cream, 1/4 cup grated parmesan, 1 teaspoon Worcestershire sauce, 2 tablespoons each mayonnaise and sliced chives and the roasted onions. Beat until combined. Scrape into a serving bowl.
ONION DIP FROM SCRATCH
Steps:
- In a saute pan over medium heat add oil, heat and add onions and salt. Cook the onions until they are caramelized, about 20 minutes. Remove from heat and set aside to cool. Mix the rest of the ingredients, and then add the cooled onions. Refrigerate and stir again before serving.
CARAMELIZED ONION TOASTS

- Preheat the oven to 400 degrees F.
- Heat 4 tablespoons butter in a large skillet over medium heat. Add the onions, chopped anchovies, thyme, salt and pepper and cook until the onions are sweet and golden brown, about 20 minutes.
- Meanwhile, holding the knife parallel to the cutting board, shave off the rounded top and bottom of the baguette with a serrated knife so that it lies flat. Then cut the baguette in half lengthwise to make 2 long slices of bread. Brush both sides of each with the remaining 4 tablespoons butter.
- When the onions are cooked, put the bread slices on a baking sheet and spread with the onions. Garnish with olives and drizzle with olive oil. Place in the oven and bake until the bread is crispy, about 15 minutes. Shower with Parmigiano. Cut into pieces and serve hot.
- Serve the onion toasts alongside an assortment of Italian meats.
FRENCH ONION DIP WITH GRUYERE TOASTS

- Heat the oven to 400 degrees, and line a baking sheet with parchment paper. Arrange the onion slices in a single layer on the prepared sheet, leaving room between each. (Use 2 baking sheets if the onions won't all fit comfortably on 1.) Drizzle with olive oil, sprinkle with 1 teaspoon salt and the sugar and gently flip to coat, keeping the rings as intact as possible. Cook for 30 to 40 minutes, turning once, until soft and browning (It's O.K. if some parts get crisp and charred).
- Let the onions cool slightly, then transfer to a cutting board and roughly chop. (You want to have small pieces of onion without making a paste.)
- Transfer the onions to a medium bowl and add the sour cream, yogurt, mayonnaise, garlic, remaining 3/4 teaspoon salt, lemon juice and black pepper. Fold to combine.
- Transfer to a serving dish and garnish with minced chives. Serve with potato chips.

- Preheat oven to 375°. Place onions in a greased 15x10x1-in. baking pan. In a small bowl, mix honey, 1 tablespoon oil, vinegar, mustard and pepper. Drizzle over onions; toss to coat. Roast 40-45 minutes or until golden brown, stirring occasionally., Remove papery outer skin from garlic bulbs, but do not peel or separate the cloves. Cut off top of garlic bulbs, exposing individual cloves. Drizzle cut cloves with remaining oil. Wrap in foil. Bake 30-45 minutes or until cloves are soft. Unwrap and cool 10 minutes. Squeeze garlic from skins., Transfer onions and pan drippings to a food processor; add garlic. Pulse until finely chopped. Add cream cheese and salt; pulse until blended. Transfer to a small bowl. Refrigerate until serving. Serve with vegetables.

CARAMELIZED ONION DIP
My mom made this at a dinner party she had when dh and I went home recently. She served it with homemade chips made of toasted foccia bread. This has a bit more zip than the traditional onion soup mix dips without having to use the mix!

- Cut onion in half and slice thinly (I use food processor).
- Heat oil and butter in large frying pan over medium heat.
- Add onion, cayenne, salt & pepper and saute for 10 minutes.
- Reduce heat to medium low and cook, stirring occasionally for 20 minutes more, until onions are browned and caramelized.
- cool.
- Beat cheese, sour cream and mayonnaise until smooth.
- Add onions and mix well.
- Serve immediately or chill for a couple hours prior to serving.
- Serve with potato chips, crackers or toasted bread below.
- Bread preparation:.
- Preheat oven to 300-325 degrees.
- Thinly slice a loaf of Foccia bread.
- Brush bread slices with olive oil.
- Sprinkle optional parmesan cheese on top.
- Place on cookie sheet and Bake for 5 minutes or until lightly browned.
- Cool and break apart to large sized chip pieces.
- Serve with a knife to spread the dip in case the dip is chilled.
