2 slices sourdough bread
1 tablespoon mayonnaise
1 large egg
1 slice cheddar cheese
2 cooked bacon strips

Steps:

  • Using a biscuit cutter or round cookie cutter, cut out center of 1 slice of bread (discard center or save for another use). Spread mayonnaise on 1 side of bread slices. In a large skillet coated with cooking spray, lightly toast cutout slice, mayonnaise side down, over medium-low heat. Flip slice; crack an egg into center. Add remaining bread slice mayonnaise side down, to skillet; layer with cheese and bacon. , Cook, covered, until egg white is set, yolk is soft-set and cheese begins to melt. If needed, flip slice with egg to finish cooking. To assemble sandwich, use solid slice as bottom and cutout slice as top.

oil , for frying
4 rashers smoked streaky bacon
2 thick slices sourdough
1 tbsp mayonnaise
1 small egg
1 tbsp ketchup or brown sauce, to serve

Steps:

  • Heat a splash of oil in a large, non-stick frying pan. Fry the bacon until crispy, then put on a plate covered with foil to keep warm.
  • Using a cookie cutter, cut a hole in 1 slice of bread, then spread mayonnaise on one side of both slices. Fry the bread in the same pan. When browned on one side, flip both over and crack the egg into the hole. Fry for 2-3 mins, then turn down the heat and cover the pan until the white of the egg is set but the yolk is still runny. Remove everything from the pan.
  • Spread the non-egg slice with the sauce, add the bacon, then top with the egg slice. Halve and tuck in.

You know that something with a name like this is going to be good and this truly is! The traditional recipe itself is very simple but the method for making it is not, so I developed this "cold oven cheater method" which is much safer and easier. The end result is an amazing flavor and texture combination of fatty sausage links, crispy, puffed, and tender Yorkshire pudding, and delicious onion gravy. And the gravy is so good you'll want to eat it on just about anything (and everything!)

4 large eggs
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 pinches cayenne pepper
1 cup all-purpose flour
1 tablespoon all-purpose flour
¾ cup whole milk
¼ cup cold water
¼ cup vegetable oil
4 links pork sausage
2 tablespoons butter
1 large red onion, minced
kosher salt to taste
3 tablespoons all-purpose flour
2 cups chicken broth
¼ teaspoon Worcestershire sauce
1 teaspoon balsamic vinegar
2 tablespoons Onions, spring or scallions (includes tops and bulb), raw
1 teaspoon chopped fresh chives, or to taste

Steps:

  • Prepare batter: Combine eggs, salt, pepper, cayenne, 1 cup plus 1 tablespoon flour, and milk in a large bowl; whisk thoroughly until batter is very smooth and no lumps remain. Whisk in water. Cover and let rest at room temperature for 1 hour.
  • Prepare sausages: Heat vegetable oil in a skillet over medium-high heat. Add sausages and cook until browned, 2 to 3 minutes per side. Remove from the heat and transfer to a buttered 9x12- or 9x13-inch baking dish. Pour oil from the skillet over the sausages; brush oil with a pastry brush all over the bottom and up the sides of the dish.
  • Start onion gravy: Melt butter in the same skillet over medium-high heat. Add onion and salt; saute until soft and starting to brown, 5 to 6 minutes.
  • While onion is cooking, pour batter in and around the sausages. Place in the center of a cold oven and turn temperature to 500 degrees F (260 degrees C). Set oven timer for 30 minutes.
  • While toad in the hole cooks, finish onion gravy: Stir in flour and cook for about 2 minutes. Whisk in chicken broth and return to a simmer. Add Worcestershire sauce and balsamic vinegar and simmer until gravy thickens up and reduces, about 5 minutes. Reduce heat to low and stir in green onions. Taste and adjust seasoning.
  • When timer goes off, remove toad in the hole from the oven; it should be browned and puffed. Spoon gravy over the sausages and garnish with green onions and chives.
  • Serve with extra gravy.

American Toad in a hole is one of the first recipes I had my children prepare when they were learning to cook. Much easier than the European version, this fun egg-in-a-hole is sure to please. Steps:

  • Cut a 3-in. hole in the middle of the bread and discard. In a small skillet, melt the butter; place the bread in the skillet. , Place egg in the hole. Cook for about 2 minutes over medium heat until the bread is lightly browned. Turn and cook the other side until egg yolk is almost set. Season with salt and pepper.

8 irish sausages
8 slices bacon (unsmoked if available)
1 onion, sliced
4 tablespoons vegetable oil
1/4 lb plain flour
1 pinch salt
1 large egg
1 cup milk
1 tablespoon coarse grain mustard
2 tablespoons vegetable oil
1 small onion, sliced
2 teaspoons plain flour
2 teaspoons coarse grain mustard
2 teaspoons Worcestershire sauce
2 1/2 cups chicken stock (20 oz.)

Steps:

  • Preheat oven to 375ºF/190ºC.
  • The Toad:.
  • Wrap the sausages in the bacon and place in a large roasting tin.
  • Scatter the onion over it.
  • Drizzle the oil over it and bake for 20 minutes.
  • The Hole:.
  • Sieve the flour and the salt into a bowl. Make a well in the center add the egg and gradually beat in half of the milk for two minutes.
  • Stir in the rest of the milk and mustard.
  • Remove the roasting tin from the oven when the sausages are just turning brown and pour the batter over them.
  • Cook for a further 40 minutes or until done. The batter should have risen and it will be a lovely golden brown.
  • Note: This can burn easily so keep an eye on it. :D You.
  • The Gravy:.
  • Heat the oil in a saucepan and sauté the onion for five minutes.
  • Stir in the flour and cook for a minute then add the mustard, Worcestershire sauce and chicken stock.
  • Bring to the boil, stirring all the time.
  • Simmer for 15 minutes, checking the seasoning.
  • Serve the Toad in the Hole with the gravy poured over it with mashed potatoes and veggies on the side.

8 slices white bread
1/4 cup mayonnaise
4 slices American cheese
4 slices Muenster or pepper jack cheese
4 tablespoons unsalted butter
4 large eggs
Kosher salt and freshly ground black pepper

Steps:

  • Spread 1 side of each slice of bread with the mayonnaise. Top 4 slices of the bread with 1 slice of the American cheese and 1 slice of the Muenster cheese; top with the remaining 4 slices of bread. Cut the center out of each sandwich with a 2 1/2-inch ring mold.
  • Melt 2 tablespoons of the butter in a large nonstick skillet over medium-low heat and swirl to coat the bottom. Arrange the inner and outer parts of 2 of the sandwiches in the skillet, and cook until golden brown on the bottom, 4 to 5 minutes. Turn each over, crack an egg into each hole, sprinkle the egg with salt and pepper and cook until the bottoms of the sandwiches are golden brown, the egg whites are set and the yolk is still runny, 4 to 5 minutes. For the last minute of cooking, cover the pan with a lid to cook the egg white completely through. (The round sandwiches may finish cooking faster.) Transfer the egg sandwiches and the round sandwiches to serving plates and keep warm. Wipe out the skillet and melt the remaining 2 tablespoons of butter and repeat with the remaining 2 sandwiches and 2 rounds.
  • Serve each egg sandwich along with a round sandwich to dip into the egg yolk.

1 egg, beaten
1/2 pint milk, divided
1 tablespoon oil
6 -8 sausages

Steps:

  • Sift flour and salt into a bowl.
  • Add beaten egg, along with some of the milk; beat for a minute or two.
  • Add remaining milk.
  • Place the batter mixture into the refrigerator for an hour or so to get really cold.
  • Preheat oven 420 degrees Fahrenheit (210 degrees Celsius).
  • Use a medium roasting dish and place oil in the pan.
  • Heat in the oven until the oil is really hot; if you flick a spot or two of water in the oil and it really sizzles then it is hot enough.
  • Quickly pour in all the batter and add the sausages, spaced a bit apart.
  • Cook for 30 to 40 minutes .
  • Lovely served with fresh vegetables of your choice and a gravy. I often freeze gravy to use with this type of dish.
