Ever wondered how to roast poblano peppers? Keep reading for 4 easy methods of roasting all varieties of peppers: oven, broiler, grill, and stovetop.

Poblano peppers

Steps:

  • Roast in Oven (preferred method for larger batches)
  • Preheat oven to 400ºF. Place whole poblano peppers on a baking sheet (line with foil for easy clean-up) and roast for 35-40 minutes or until skins are blackened, flipping once.
  • Place peppers in a plastic bag, or a bowl covered with plastic wrap and let cool for 10-15 minutes.
  • When cool enough to handle, peel off skins using your hands or a paper towel. Discard skin. Remove stems and seeds, if desired.
  • Broiler
  • Position oven rack 6 inches from broiler flame and preheat oven broiler to high.
  • Place whole poblano peppers on a baking sheet (line with foil for easy clean-up) and broil for 10 minutes, flipping once, until all sides are blackened.
  • Place peppers in a plastic bag, or a bowl covered with plastic wrap and let cool for 10-15 minutes.
  • When cool enough to handle, peel off skins using your hands or a paper towel. Discard skin. If desired for recipe, remove stems and seeds.
  • Grill
  • With grill heated to a high temperature, place poblano pepper directly on grill grates.
  • Use tongs to flip pepper occasionally, until the skin blackens and bubbles (3-4 minutes on each side). Don't allow it to turn white or catch fire.
  • Place peppers in a plastic bag, or a bowl covered with plastic wrap and let cool for 10-15 minutes.
  • When cool enough to handle, peel off skins using your hands or a paper towel. Discard skin. If desired for recipe, remove stems and seeds.
  • Gas Stovetop
  • Place poblano pepper directly over an open flame.
  • Use tongs to flip pepper occasionally, until the skin blackens and bubbles. Don't allow it to turn white or catch fire.
  • Place peppers in a plastic bag, or a bowl covered with plastic wrap and let cool for 10-15 minutes.
  • When cool enough to handle, peel off skins using your hands or a paper towel. Discard skin. If desired for recipe, remove stems and seeds.

Roasted Poblano & Bell Pepper Chicken Taco image

Found in Fine Cooking: Delicious Chicken 2006 magazine. Slightly modified to use rotisserie chicken from the supermarket. The magazine also suggests that you should experiment with the recipe, adding toppings you like, or using shredded beef instead of chicken. I usually serve this with soutwestern rice and fried plantains.

1/2 red bell pepper, stemmed, seeded and flattened
1 poblano chile, stemmed, seeded, and flattened
1 1/2 cups shredded rotisserie cooked chicken
2 tablespoons extra virgin olive oil
1 pinch cayenne
1/2 teaspoon cumin
1 minced garlic clove
1/2 lime, juice of
1 pinch kosher salt
1/2 cup sour cream
1 tablespoon finely chopped yellow onion
2 tablespoons finely chopped fresh cilantro, plus more for garnish
4 small corn tortillas
1/4 cup cheddar cheese, grated
1/2 cup salsa, for serving

Steps:

  • Position an oven rack close to the broiler and heat the broiler.
  • Put the peppers skin side up on a baking sheet and broil until blackened.
  • Transfer the peppers to a small bowl, cover the bowl with plastic wrap, and let cool.
  • Reduce the oven to 400 degrees F.
  • In a medium bowl, combine the olive oil, cumin, cayenne, half of the garlic, and the lime juice. Season with salt.
  • Add the chicken to the bowl and toss to coat it well with the vinaigrette.
  • When the peppers are cool enough to handle, remove the blackened skin, and chop the peppers finely.
  • In a small bowl, combine the sour cream, onion, the other half of the garlic, the cilantro, and the chopped peppers.
  • Put the tortillas on a baking sheet. Divide the chicken among the tortillas leaving a little space around the edges. Top with the sour cream mixture and then the cheese.
  • Bake until the cheese is melted, about 5 minutes. Garnish with a little fresh cilantro and serve with some salsa.
  • Eat as is with a knife and fork or roll the tortilla up and eat with your hands.

4 chilies (Poblanos jalapenos or what you choose)
vegetable oil

Steps:

  • Stove top the most common method:.
  • Place clean and towel dried Poblanos right on the open medium flame turning with tongs as it is charred.(black and blistered). Takes about 5-10 minutes depending on the heat of flame and size of chilies.
  • Immediately place in a paper bag or closed container to steam for 15 minutes. Called letting the chilies sweat! This makes the skin easier to remove and cool enough to handle, as they continue to cook.
  • On a Comal or heavy skillet:.
  • Heat skillet to medium high.
  • Place chilies on pan turning till charred being careful not to scorch as for they will have a bitter taste. Takes about 5-10 minutes depending on the heat of flame and size of chilies.
  • Immediately place in a paper bag or closed container to steam for 15 minutes.
  • In the Broiler:.
  • Heat broiler to medium high.
  • Lightly brush with oil.
  • Place chilies in pan and place in broiler. Char as above.
  • In oil:.
  • This method is used for stuffing them a time saver when making many.
  • Heat oil over medium high heat. Place 1-2 at a time in oil. using a slotted spoon to turn and fry till golden brown and skins swell about 5-10 seconds. Transfer to a bowl of cold water and use finger to peel off the skins.
  • I like to dry peel so not to loose any flavor.
  • But you can peel the skins under running water but do not soak them. Use a parring knife to remove any skin that won`t be finger removed.
