This rich, delicious, and luxurious dessert is a great comfort food on a cold winter's night.

1 cup flour
1 teaspoon baking powder
2 ½ ounces dark chocolate, grated
7 ounces chopped pitted dates
1 ¼ cups water
1 teaspoon baking soda
¼ cup softened butter
¾ cup superfine (castor) sugar
2 eggs
1 cup heavy cream
1 cup firmly packed brown sugar
1 cup butter
2 tablespoons confectioners' sugar for dusting
3 cups vanilla ice cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin tin. Whisk together the flour, baking powder, and chocolate in a small bowl, and set aside.
  • Bring the dates and water to a boil in a saucepan over high heat. Remove from the heat, and stir in the baking soda. Allow the mixture to stand for 5 minutes, then scrape into a blender, and carefully puree until smooth; set aside.
  • Cream 1/4 cup of butter together with the superfine sugar until light and fluffy. Add the eggs one at a time, beating well between each addition. Fold in the flour mixture and the date puree until well blended. Spoon into the prepared muffin cups.
  • Bake in the preheated oven for 25 minutes. Meanwhile, stir together the cream, brown sugar, and 1 cup of butter in a saucepan over medium-low heat until the butter melts; set aside.
  • When the puddings have baked for 25 minutes, remove them from the oven, and cool in the pan for 10 minutes. Remove the puddings from the muffin tin, and place them onto a baking sheet. Spoon 2 tablespoons of the sauce over each pudding, then return to the oven and bake for 5 minutes more.
  • To serve, spoon some of the sauce onto the bottom of a dessert plate, and place a pudding on top. Lightly dust with confectioners' sugar, and top with a 1/4 cup scoop of ice cream. Repeat with the remaining date puddings.

1 cup boiling water
2 tablespoons butter
1 cup soft brown sugar
2 eggs
1 1/2 cups self-raising flour, sifted
1 cup soft brown sugar
3/4 cup whipping cream
1 teaspoon vanilla
2 tablespoons butter

Steps:

  • Preheat oven to 180 degrees C.
  • Mix the dates and baking soda in a bowl.
  • Pour boiling water on top and leave until needed.
  • Cream butter and sugar, then add eggs one at a time, beat well after each addition.
  • Fold in the sifted flour, stir in the date mixture, and pour into a greased 18cm or 7" square or round cake tin.
  • Bake for 30-40 minutes, until a skewer comes out clean.
  • For the sauce: Combine sugar, cream, vanilla essence and butter in a saucepan, bring to the boil, stirring, and simmer for five minutes.
  • Set aside until ready to serve.
  • Cut pudding into squares and place each square in the centre of a warm dinner plate.
  • Pour hot toffee sauce (reheat if neccesary) over each square and serve with ice cream.

1 teaspoon butter
8 ounces dates, chopped
2 cups water
1 teaspoon baking soda
1/2 cup butter, room temperature
5 tablespoons granulated sugar
2 eggs
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1 3/4 tablespoons baking powder
1/2 cup butter
1/2 cup heavy cream
1/2 cup brown sugar, packed
1/2 teaspoon vanilla
1 cup heavy cream, whipped

Steps:

  • Butter a 9" round or square baking pan with 1 tbls butter.
  • Place dates in saucepan and cover with water. Bring to a boil, reduce heat and simmer for 3 minutes. Add baking soda, Set aside.
  • In a bowl, cream 1/2 cup butter, the 5 tbls granualted sugar and the eggs, adding one at a time.
  • Mix well after each egg addition. Gently fold in flour, salt and 1/2 tsp vanilla. Slowly stir in baking powder and 1/2 cup of the date cooking liquid until cake mixture resembles thick pancake batter.
  • Discard remaining cooking liquid. Stir in dates.
  • Pour into prepared pan and bake at 350* for 30-40 minutes or until cooked in center.
  • Make a sauce by combining 1/2 cup butter, 1/4 cup heavy cream, brown sugar and 1/2 tsp vanilla in a medium saucepan. Bring to a boil. Reduce heat and simmer for 3 minutes. Drizzle some of the sauce over the cake as it is cooling.
  • Serve the remainder of sauce seperately. Garnish with whipped cream.I sometimes use Cool Whip.to save fat grahams.

20 grams (2/3 ounce) baking soda
250 grams (8 3/4 ounces) granulated sugar
230 grams (8 1/8 ounces) unsalted butter
3 eggs
750 grams (26 1/2 ounces) all-purpose flour
20 grams (2/3 ounce) baking powder
700 grams (24 2/3 ounces) brown sugar
300 grams (10 1/2 ounces) heavy cream
250 grams (8 3/4 ounces) unsalted butter
200 grams (7 ounces) bourbon
1 vanilla bean, split and scraped

Steps:

  • For the pudding: Preheat the oven to 330 degrees F. Bring 400 grams (14 1/8 ounces) water to a boil and pour over the dates. Let sit for 2 minutes, then add the baking soda. Blend the date mixture in a food processor, leaving some chunks.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream the granulated sugar and butter until soft. Add the eggs one at a time, scraping down the sides of the bowl between additions. Add the flour and baking powder, and mix until combined. Add the date mixture to the batter and mix until combined.
  • Fill the mold three-quarters full. Cover with oven-safe plastic wrap. Place the mold in a water bath filled halfway up the sides of the pudding. Bake until golden brown, 15 to 30 minutes.
  • For the sauce: In a saucepot, combine the brown sugar, cream, butter, bourbon and vanilla seeds. Bring to a boil, then reduce the heat to a simmer; cook until the sugar dissolves. Keep warm until ready to serve.
  • Pour the warm sauce over the pudding and serve.

1 cup hot water
1 teaspoon baking soda
1 cup white sugar
2 tablespoons butter
1 egg
1 1/2 cups flour
1 teaspoon baking powder
1/2 cup pecans
1 cup brown sugar
2/3 cup water
2/3 cup chopped dates

Steps:

  • Mix together 1 cup dates, 1 cup hot water and baking soda. Let stand several minutes.
  • Add remaining ingredients (white sugar, butter, egg, flour, baking powder and pecans). Mix well.
  • Pour into 9x9 inch greased pan.
  • Bake at 400 degrees for 30 minutes.
  • Mix brown sugar, 2/3 cup water and 2/3 cup dates in saucepan.
  • Cook for 3 minutes over medium heat,stirring constantly.
  • Pour on top of date pudding immediately, or it can be spooned on after it is cut into pieces.

Steps:

  • For Pudding.
  • Put 300ml water in a saucepan, add dates and bring to the boil. Remove from heat, add bicarb soda, stir and set aside.
  • Cream butter and sugar until light and fluffy. Add eggs one by one, beating well each time. Fold in flour, stir in date mixture and vanilla, and pour into a greased 18cm square cake tin.
  • Bake at 160C for 50 minutes, or until cooked when tested with a skewer.
  • For Sauce
  • Combine sugar and butter in a pan and stir over low heat until melted. Add cream and vinegar, bring to the boil, remove from heat and serve warm not hot.

250 ml soya milk
100 ml water
200 g dates
1 teaspoon bicarbonate of soda
115 g vegan margarine
115 g soft brown sugar
200 g white self raising flour
1/8 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
100 g golden syrup
200 g soft brown sugar
150 g vegan margarine
1 teaspoon vanilla essence

Steps:

  • Pre-heat the oven to 190°C-Gas5.
  • Chop the dates in half and put them in a small saucepan and cover with the soya milk and water; simmer until the dates are soft.
  • Take off the heat and stir in the bicarbonate of soda, which will froth as you add it to the date mixture. Leave to cool.
  • Beat together the margarine and sugar until pale and creamy.
  • Add the date mixture and stir.
  • Mix the spices into the flour. Sieve the flour and fold into the sponge mixture.
  • Spoon the sponge mixture into a 20cm x 20cm tin.
  • Bake in the preheated oven for 30 minutes or until cooked and the sponge bounces back when pressed.
  • To make the sauce: melt the syrup, margarine, sugar and vanilla essence in a small saucepan; simmer for 5 minutes without stirring.
  • Prick the pudding all over and pour half the hot toffee sauce over the pudding. Serve the rest of the sauce with the pudding.
  • It freezes well, cut into individual servings and place in the freezer. Defrost in the microwave for 2 minutes.

275 g dates, pitted and chopped
60 ml whiskey
1 teaspoon baking powder
125 g butter
125 g sugar
2 eggs
125 g self-raising flour
150 g butter
200 g dark muscovado sugar
250 ml heavy cream (double cream)

Steps:

  • Preheat oven to 190ºC/fan 170ºC/gas5.
  • Put dates in a saucepan with the whisky and 150ml water; Bring to the boil, then add the baking powder (it will froth a bit) and leave the dates to soak until cool.
  • Beat the butter and sugar until smooth and creamy.
  • Beat the eggs one at a time, stir in the flour, then the date mixture.
  • Pour into a buttered brownie tin 22cm square; Bake for 30 minutes or until cooked through (test with a skewer).
  • For the sauce, put the butter, muscovado sugar and double cream in a saucepan and bring it to the boil slowly, stirring, then simmer for 3 minutes.
  • When the pudding is ready, remove from the oven and pour over enough sauce to make a sticky glaze.
  • Return it to the oven for about 2 minutes.
  • Serve it cut into squares with more sauce poured over.
  • I served it with cream because I found it too sweet on its own although I don't have as much of a sweet tooth as many zaarites out there!
