GRILLED OR BROILED LAMB CHOPS
Many years ago when I was part of a family with English heritage this is the way we grilled lamb chops. I've stumbled upon the basic recipe in Mark Bittman's How to Cook Everything but this also is the way I remember grilling it (except for the garlic). I had to acquire a taste for lamb but once I did I loved it. In this recipe I'm giving instructions for cooking to medium-rare.

Steps:
- Heat grill or broiler until moderately hot for double chops or very hot for single chops and place rack about 4 inches from heat source.
- Sprinkle chops with salt and pepper.
- Cut clove of garlic and rub over meat if desired.
- If broiling, about 10 minutes before you're ready to cook, put a cast iron or other sturdy, heatproof skillet on the rack.
- Grill or broil chops, 3 or 4 inches from the heat source, until they are nicely browned on both sides.
- Single chops require only 2 or 3 minutes per side at most.
- For double chops cooking time will still be less than 10 minutes. You don't want to overcook the chops.
- Serve with lemon wedges, sauce or jelly.

BROILED MARINATED LEG OF LAMB
Serve with a tasty mint sauce ,potatoes of your choice and veg.I like roasted potatoes and some asparagus.

Steps:
- Combine oil, lemon juice, mustard, garlic, oregano and pepper in a plastic food-storage bag.
- Place lamb in bag, seal and refrigerate 6 to 24 hours.
- Heat broiler. Drain lamb, reserving any marinade.
- Place lamb on a rack in a roasting pan.
- Broil 6 inches from heat, 15 minutes on each side.
- Baste meat once or twice with reserved marinade.
- Tent foil over lamb and continue cooking 10 to 15 minutes more or until an instant-read thermometer registers an internal temperature of 145 degrees F. for medium-rare or 160 degrees F. for medium.
- Remove lamb; let stand, covered with foil, 10 minutes before slicing.
- To Grill Lamb: Prepare a charcoal grill with hot coals, or heat a gas grill to high.
- Place lamb on grill rack and sear, turning once, until well browned on both sides, about 10 minutes total.
- Lower heat to medium or move lamb to cooler edge of grill; cook 15 to 20 minutes longer or to desired doneness.
- Baste meat once or twice with reserved marinade.
- Season with salt and pepper to taste.
- Remove lamb; let stand, covered with foil, 10 minutes before slicing.

BROILED OR GRILLED BUTTERFLIED LAMB
This is our new favorite for Easter. It came from an article in the Costco Connections (March 2010) when they did an interview with Ethan Becker, The Joy of Cooking Lamb. Stated time does not include marinating in the refrigerator for 1 to 24 hours.

Steps:
- Trim the lamb to an even thickness of 2-2 1/2 inches and pat dry.
- For paste, combine the rest of the ingredients in a small bowl and mix.
- Coat the entire surface of the lamb with the paste.
- At this point, the lamb may be placed in a zip bag or on a baking sheet and covered.
- Place in refrigerator and allow to marinate from 1 to 24 hours.
- Position a broiler pan 4 to 5 inches away from the heating element and preheat the broiler and broiler pan or prepare a medium hot grill fire.
- Place the lamb, fat side down, on the broiler pan grill rack.
- Cook, turning once, until well seared but still juicy and pink on the inside, about 12 minutes on each side. (Cook a few minutes more on each side for medium.).
- Remove lamb from the oven or grill and let stand for 6-8 minutes, loosly covered with aluminum foil.
- Cut lamb into 1/2 inch slices.

GRILLED OR BROILED LAMB RIBS
Steps:
- Start a charcoal or wood fire, or preheat a gas grill or broiler; the fire should be only moderately hot, and the rack should be at least 4 inches from the heat source. Bring a large pot of water to a boil; salt it. Add the lamb, and simmer for 10 minutes.
- Drain ribs. Grill or broil them for about 10 minutes, turning once or twice and sprinkling them with a little salt and pepper. Meanwhile, process the honey, mustard and onion in a blender until smooth.
- When ribs begin to brown, brush them with sauce, and continue to cook, watching so they do not catch fire. When they are brown and crisp all over - in about 10 to 15 minutes - remove from grill, and serve.
