4 (4 ounce) fillets tilapia
butter flavored cooking spray
4 teaspoons margarine, melted
2 tablespoons lemon juice
2 tablespoons chopped fresh dill weed
1 tablespoon lemon-pepper seasoning
4 teaspoons cream cheese
5 tablespoons lemon juice, or to taste
2 tablespoons chopped fresh dill weed

Steps:

  • Preheat the oven to 375 degrees F (175 degrees C).
  • Grease a baking sheet with cooking spray. Place the tilapia fillets on the sheet, and coat them lightly with cooking spray. Spoon the melted margarine over each fillet, then drizzle with 2 tablespoons of lemon juice. Season with lemon pepper and 2 tablespoons of dill.
  • Bake for 15 minutes in the preheated oven, or until the fish is opaque and flakes easily.
  • While the fish is baking, combine the cream cheese, 5 tablespoons of lemon juice and 2 tablespoons of dill in a small bowl. Heat in the microwave for 1 minute and 10 seconds, then stir to blend.
  • Place fillets onto serving plates, and spoon sauce around them in a decorative fashion.

Steps:

  • Pat the tilapia dry with paper towels, then season with 1/2 teaspoon salt and a few grinds of pepper. Spread the flour on a plate; dredge the tilapia in the flour, tapping off the excess. Steps:

  • Cook the butter and 2 tablespoons extra-virgin olive oil in a heavy medium saucepan over low to medium heat just until the butter is melted, stirring frequently. Add the anchovies and stir until the anchovies dissolve, about 2 minutes. Add the garlic and cook just until fragrant, about 30 seconds. Remove from the heat. Stir in the orange juice, basil, and lemon and orange zests. Season the sauce, to taste, with salt.

½ cup shallots, minced
¼ cup white wine
Zest of one lemon
3 tablespoons lemon juice

¼ teaspoon garlic powder

Steps:

  • Begin by making the sauce. It can be served room temperature.*
  • In a medium saute pan, melt two tablespoons of the butter over medium low heat and once melted, add the shallots and cook until soft, about four minutes.
  • Add wine and cook to evaporate.
  • Add zest, lemon juice, salt, pepper and thyme and cook for two minutes until most of the liquid has evaporated, leaving about a tablespoon of liquid with the solids.
  • Turn the heat to low and start stirring in four tablespoons of butter letting them melt into the sauce. Add four more tablespoons of butter stirring in to melt and mix in.
  • Remove pan from heat and stir in the last two tablespoons of butter. The sauce will be creamy and slightly thick.
  • Pour this sauce through a strainer and discard solids then set aside. *
  • Pat fish dry with paper towels.
  • In a small bowl, mix flour, garlic powder, onion powder, paprika, salt and pepper. Pour into a small sifter and sift over both sides of the fish.
  • Heat a large skillet or saute pan over medium heat and add the olive oil.
  • Once the oil is hot, add all of the fish filets and cook for about five minutes, turning half way through.
  • Remove to a platter and drizzle some sauce over the fish and serve the rest on the side.

3-4 large tilapia fillets
1/2 cup unsalted butter, divided
1/4 cup fresh lemon juice (~1 large lemon)

Steps:

  • In a shallow dish, combine the flour, paprika, garlic powder, salt and pepper. One side at a time, coat the tilapia fillets in the flour. Set aside.
  • In a large cast iron skillet over medium-high heat, melt 1/4 cup of the butter. Once the butter is melted and beginning to sizzle, add the tilapia fillets side by side in the skillet. Cook the fish for about 5-6 minutes before flipping and cooking for another 5-6 minutes on the other side, or until it flakes easily with a fork*.
  • When the fish is cooked, remove it to a plate and keep warm in the oven. Add the remaining butter to the skillet, and once the butter starts sizzling use a spatula to scrape up any brown bits, and squeeze the lemon juice into the pan. 1 onion

  • Season the fish lightly with salt and pepper. In a large nonstick fry pan over medium heat, melt the butter with the olive oil. Do no allow butter to brown. Arrange the fish in the pan and cook, turning once, until browned on both sides. Easy, quick and inexpensive; fairly healthy as long as you don't go overboard on the butter - you can half the amount of butter or replace with Smart Balance or the like to cut down on the sat fat and still get the same flavor. I prefer Andy's fish fry, but Zatarain's plain works well also. I've changed the amount of lemon from the original also; I'm used to starting 2 lbs of fish and forgot to convert down to 6 servings.

6 tilapia fillets
1 cup fish-fry mix
4 tablespoons unsalted butter or 4 tablespoons Smart Balance butter spread
1 large lemon
1 cup milk
2 tablespoons light olive oil

Steps:

  • Prep the tilapia - Defrost in package, if necessary, rinse and place in glass or plastic bowl. Cover with milk and set aside for 30 minute to soak out as much of the strong flavor as possible - the milk will turn pink.
  • Using a microplane, zest the lemon, removing as much as possible without getting any of the pith. Juice the lemon and set both the juice and zest aside.
  • Preheat an electric skillet to 375°F.
  • Remove the tilapia from the milk and discard the milk. Lightly bread the fish with the fish fry. Add a small amount of olive oil to the skillet and distribute evenly. Place the filets in the oil and fry until the fish is just flaky and the breading is a medium brown.
  • While the fish is cooking, melt the butter in a small saucepan. add the lemon zest and stir until combined. Whisk in the lemon juice until fully incorporated. You can add more fresh not-from-concentrate lemon juice to taste.
  • Remove the cooked filets from the skillet, drain on a paper towel. Plate the fish and drizzle the sauce over to taste. Serve with risotto or pilaf and a green vegetable such as asparagus or broccoli.

  • Dry the fillets with paper towels and sprinkle both sides with salt and pepper. Spread the flour out on a plate.
  • Heat the olive oil and 1 tablespoon of the butter over medium heat until the butter sizzles. Lightly dredge the fillets in the flour, shake off the excess and put them in the pan.
  • Pan fry the fillets until lightly browned on both sides, about 2 to 3 minutes per side. Remove the fish from the pan and keep it warm.
  • Raise the heat to medium-high and add the wine to the pan, stirring up any browned bits of flour. Add the shallots and cook for 1 to 2 minutes, or until shallots are softened.

1 tbsp white wine
1 tbsp lemon juice (from half of one lemon)
1 tsp lemon zest (from half of one lemon)
3 cloves garlic (minced)
¼ cup capers (drained, or more, if desired)
3 lemon wedges (cut from other half of lemon)
2 tbsp parsley (chopped, for garnish (optional))

Steps:

  • Preheat oven to 425°F.
  • Lightly oil the baking dish with the cooking spray.
  • Arrange the tilapia in the dish. (It's okay if the edges overlap a little).
  • Liberally sprinkle salt all over the tops and bottoms of the fillets. Lightly sprinkle with pepper and oregano all over the fillets.
  • In a small bowl, mix together the melted butter, extra-virgin olive oil, white wine, lemon juice, lemon zest, and garlic. Carefully pour the liquid all over the fish in the dish. Top with the capers.
  • Bake, uncovered, for 12 to 14 minutes, or until the fish flakes easily with a fork and an internal temperature of 145°F is reached. Remove and serve at once, drizzling the sauce over the fillets. Garnish with chopped parsley, if desired.

2 tablespoons all-purpose flour
Salt and freshly ground black pepper
1 pound tilapia fillets
1 tablespoon olive oil
1 tablespoon butter
1/2 cup freshly squeezed orange juice or high-quality store-bought orange juice
1 lemon, zested and juiced
1/2 teaspoon grated fresh ginger

Steps:

  • 1. On a plate, combine the flour and a sprinkle of salt and pepper. Lightly dredge the tilapia in the flour.
  • 2. In a large skillet over medium heat, add the oil and butter. When the butter has melted, add the fish and cook for 2 to 3 minutes per side, or until golden and just cooked through. Remove the fish and set aside.
  • 3. Add the orange juice, 2 tablespoons of the lemon juice, and the ginger to the skillet. Increase the heat and simmer for 1 to 2 minutes, or until thickened, stirring occasionally. Taste and add lemon zest or more lemon juice if necessary. Return the fish to the skillet, coat with sauce, and cook for 1 to 2 minutes, or until heated through.
