This Almond Crusted Tilapia recipe is one of my very favorite dinners. It's quick and easy to make and the fish comes out moist and flaky with a crunchy crust.

1 C sliced or slivered almonds, divided in two parts
1/4 C ground flaxseed (or flour - any kind)
4 (6 oz) tilapia fillets
1/2 tsp. salt
2 Tbsp. olive oil (or 1 Tbsp. olive oil and 1 Tbsp. butter)

Steps:

  • Finely chop almonds (or buy them pre-chopped) and combine half of them (1/2 C) with the ground flaxseed or flour in a shallow bowl.
  • Sprinkle fish evenly with salt; dredge in almond/flaxseed or flour mixture.
  • Add the olive oil (and butter, if using) to a large heavy skillet over medium heat; add fish and cook 4 minutes on each side or until golden brown. Remove fillets to a serving plate.
  • Add remaining 1/2 cup almonds to skillet and cook, stirring often, 1 minute or until golden brown. Remove almonds and sprinkle over fish. The almonds get really crunchy and toasty - so good!
  • Enjoy!

2 eggs
1 teaspoon lemon pepper
1 teaspoon garlic pepper
1 cup ground almonds
1 cup freshly grated Parmesan cheese
8 (6 ounce) tilapia fillets
¼ cup all-purpose flour for dusting
6 tablespoons butter
salt to taste
1 cup freshly grated Parmesan cheese
8 sprigs parsley
8 lemon wedges

Steps:

  • Beat the eggs with the lemon pepper and garlic pepper until blended; set aside. Stir together ground almonds with 1 cup of Parmesan cheese in a shallow dish until combined; set aside. Dust the tilapia fillets with flour, and shake off excess. Dip the tilapia in egg, then press into the almond mixture.
  • Melt butter in a large skillet over medium-high heat. Cook tilapia in melted butter until golden brown on both sides, 2 to 3 minutes per side. Reduce heat to medium, and season fillets with salt if desired. Sprinkle the tilapia with the remaining Parmesan cheese, cover, and continue cooking until the Parmesan cheese has melted, about 5 minutes.
  • Transfer the tilapia to a serving dish, and garnish with parsley springs and lemon wedges to serve.

1 teaspoon ground mustard

1 tablespoon butter
2 large eggs
1/2 cup all-purpose flour
2 6-8-ounce Tilapia fillets

Steps:

  • Place the almonds in a food processor and pulse until finely ground. Mix together with bread crumbs, lemon pepper, ground mustard, onion, garlic powder, salt, and pepper. Place the breading mixture into a shallow bowl or pie dish.
  • Whisk together the eggs and place them in a shallow bowl or pie dish. Place the flour in another shallow bowl or pie dish.
  • Dip the tilapia fillets into flour and shake off the excess. Then dip into the egg wash and coat both sides. Then coat both sides of the fish with almond breading.
  • Preheat a medium skillet over medium heat. Add the canola oil and butter. Place the fish in the skillet and cook on each side for about 2-3 minutes, or until golden brown. Flip and cook the other side. Fish will flake apart when done.
  • Serve immediately with mashed red potatoes with chives and green beans.

3/4 cup almonds, finely chopped
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1 cup buttermilk
1/2 cup flour
4 (6 ounce) tilapia fillets or 4 (6 ounce) red snapper
2 tablespoons oil
4 lemon wedges

Steps:

  • Combine bread crumbs, almonds, salt, garlic powder and black pepper in a shallow dish.
  • Pour buttermilk in another shallow dish.
  • Pour flour on a sheet of wax paper.
  • Rinse the fillets with water and pat them dry with paper towels. Dredge the fillets in the flour, then dip them in buttermilk. Dredge them in the almond mixture. Place the fillets on a small cookie pan that has been dusted with a bit of the almond mix and chill for about 20 minutes for the almond crust to set.
  • Heat one tablespoon of oil in a skillet over medium-high heat. Add two fillets, cook them about three minutes on each side until they are browned and the fish flakes when tested with a fork.
  • Remove them to a platter to keep warm. Add the remaining tablespoon of oil to the skillet and cook the remaining fillets. If you have a large skillet, you can do all four at once.
  • Serve with lemon wedges.

1/4 cup flour
1 egg, lightly beaten
1 cup sliced almonds
salt
pepper
Old Bay Seasoning
1 lemon
2 tablespoons butter

2 scallions, sliced

Steps:

  • Season tilapia with salt, pepper and old bay.
  • Dust with flour then dip into egg.
  • Press almond slices into the fish.
  • Heat butter and oil in an oven proof pan.
  • Carefully (so not to lose any almonds) place fillets into hot pan brown for 1 minute and flip gentle (again so not to lose any almonds) squeeze half of the lemon on the fish and place in a preheated 350 degree oven for 10-15 minutes.

  • 2. Cut 4 pieces 7 inch pieces of Reynolds Wrap Foil. Coat the bottom of each piece with 1/2 tbsp olive oil.
  • 2. In a large bowl, combine sliced onions with balsamic vinegar, honey, remaining olive oil and a pinch of salt, mixing well so the onions are well coated.
  • 3. In a medium bowl, combine ground almonds with lemon zest and a pinch of salt.
