5-INGREDIENT ALMOND-CRUSTED BAKED TILAPIA
This almond crusted baked tilapia is super easy and super flavorful. A delicious, easy and healthy meal that's perfect for weeknights!

Steps:
- Preheat oven to BROIL.
- Spray a large, rimmed baking sheet with cooking spray. Set aside.
- Combine almonds and Parmesan cheese in a small bowl and set aside.
- Combine melted butter and garlic powder in a small bowl. Brush the butter mixture on both sides of the fish.
- Place the fish on the prepared baking sheet, bottom side UP, and broil for 4 minutes.
- Flip the fish over, sprinkle with Parmesan cheese and almonds, and return to the broiler for about 3-5 more minutes, or until topping is golden brown and the fish flakes easily with a fork.
- Garnish with lemon wedges and herbs.
- *I use my Cuisinart Mini Prep Food Processor to chop the raw almonds in about 30 seconds!

What a quick and easy dinner for two. The almond crust fries perfectly and has a slightly nutty flavor. We love the savoriness of the Parmesan cheese. It's delicious on the tender, delicate tilapia.

- 1. In a shallow dish beat egg and add spices, then set aside.
- 2. In a second shallow dish, mix finely chopped almonds with Parmesan cheese and set aside.
- 3. Lightly dust each fillet with flour on both sides.
- 4. Melt butter in a non-stick skillet over medium-high heat.
- 5. Dip floured fillets into egg mixture.
- 6. Then dip into almonds and cheese mixture. Press down to collect as much coating as possible on both sides of each piece.
- 7. When skillet is hot, saute the fillets turning only once till golden brown (approximately 2-1/2 minutes per side).
- 8. Serve with lemon wedge garnish.

ALMOND CRUSTED TILAPIA
This almond crusted tilapia has just 5 ingredients and is light, healthy, and super easy. Crushed almonds give perfect texture and flavor to the tilapia.

- Place the almonds and breadcrumbs in a food processor and pulse until coarsely ground into a crumb-like mixture. Place the crumb mixture on a plate or in a shallow bowl.
- Heat oil and butter in a frying pan over medium-high heat.
- Spread each tilapia filet with 1 tablespoon Dijon mustard on both sides. Press the tilapia into the crumbs to get it coated on both sides. I usually do this several times to make sure the whole thing gets covered.
- Place the fish into the frying pan and cook for several minutes on each side, until the outside is browned and the fish is fully cooked. I usually just check the middle of the fish for doneness - pieces will flake off easily when it's done.
- Serve with parmesan, sea salt, or lemon.

TILAPIA WITH ALMOND BUTTER
For a main dish in less than 30 minutes, try this white fish served over cooked pea pods with a topping of toasted almonds.

- In a large saucepan bring lightly salted water to boiling. Add pea pods. Cook for 2 minutes. Drain and set aside.
- Meanwhile, season fish with salt and pepper; sprinkle with flour. Cook fish in hot oil for 4 to 5 minutes or until it is easy to remove with a spatula. (If necessary, cook fish half at a time.) Gently turn fish and cook for 2 to 3 minutes more or until fish flakes easily when tested with a fork. Place peas on serving plates; arrange fish on top of peas.
- Reduce heat to medium. Add butter to skillet. When butter begins to melt, stir in almonds. Cook for 30 to 60 seconds or until nuts are lightly toasted (do not let butter burn). Spoon butter mixture over fish fillets.

- Beat the eggs with the lemon pepper and garlic pepper until blended; set aside. Stir together ground almonds with 1 cup of Parmesan cheese in a shallow dish until combined; set aside. Dust the tilapia fillets with flour, and shake off excess. Dip the tilapia in egg, then press into the almond mixture.
- Melt butter in a large skillet over medium-high heat. Cook tilapia in melted butter until golden brown on both sides, 2 to 3 minutes per side. Reduce heat to medium, and season fillets with salt if desired. Sprinkle the tilapia with the remaining Parmesan cheese, cover, and continue cooking until the Parmesan cheese has melted, about 5 minutes.
- Transfer the tilapia to a serving dish, and garnish with parsley springs and lemon wedges to serve.

- Season tilapia with salt, pepper and old bay.
- Dust with flour then dip into egg.
- Press almond slices into the fish.
- Heat butter and oil in an oven proof pan.
- Carefully (so not to lose any almonds) place fillets into hot pan brown for 1 minute and flip gentle (again so not to lose any almonds) squeeze half of the lemon on the fish and place in a preheated 350 degree oven for 10-15 minutes.
- Remove gently to a platter squeeze remaining lemon.
- Garnish with scallions and serve.

- Combine the melted butter and lemon juice in a shallow dish. Dip the fish fillets in the butter mixture, and place in an ungreased 13x9x2 inch baking dish.
- Sprinkle the fillets evenly with the Creole seasoning. Bake, uncovered, at 375 degrees for 15 minutes. Sprinkle the fillets with the sliced almonds, and bake an addtional 10 minutes or until the fish flakes easily. (Cooking time varies with the thickness of your fish).
