PINEAPPLE CASSEROLE
Sweet-and-salty pineapple casserole is a childhood favorite for many Southerners, and with good reason -- it is just as irresistible with a baked ham as it is on the Thanksgiving table. Here, we've given the classic side dish a few tweaks to make it truly memorable.

- Preheat the oven to 350 degrees F.
- Drain the pineapple juice into a liquid measuring cup; you should have 1 1/2 cups. Whisk in the sugar and cornstarch until the sugar dissolves. Spread the pineapple chunks in the bottom of a 13-by-9-inch baking dish and pour over the pineapple juice mixture, stirring to coat the chunks evenly.
- In a large bowl, stir together the crushed crackers, cheese and butter, then sprinkle the topping evenly over the pineapple. Bake the casserole until the topping is golden brown, the cheese is melted and the pineapple is bubbling in the center of the dish, 35 to 40 minutes. Let the casserole cool for 5 minutes, then serve warm.

- Butter baking dish. Empty pineapple into baking dish. Combine flower, sugar and cheese and spread dry ingredients evenly on top of pineapple. Crush crackers and cover casserole. Melt butter and spoon on top. Bake for 35 to 45 minutes in 350°F oven.

- Preheat oven to 350 degrees.
- Grease a 2-quart casserole dish with 1 T. butter.
- Drain pineapple.
- Place crushed pineapple evenly along the bottom of prepared casserole dish.
- Mix together the flour, sugar and cheese.
- Sprinkle evenly on top of pineapple.
- Cover with Ritz cracker crumbs.
- Melt butter and pour over the top of cracker crumbs.
- Bake for 30 minutes in preheated oven.
PINEAPPLE CASSEROLE
My boyfriend's mother taught me this recipe and I love it. So does my dad, and anyone I have ever made it for. Goes great with Ham, but seriously could be a desert!

- 1. Drain Pineapple and reserve juice (I use two cans to be quite honest.) Combine Sugar Flour and juice.
- 2. Add Cheese, pineapple chunks, and mix with flour, juice and sugar.
- 3. Heat oven to 350. Grease 9X13 caserole dish. Put mixture in dish. Crush crackers and then sprinkle over mixture. Drizzle with melted butter.
- 4. Bake for 25-30 minutes.
CHICKEN PINEAPPLE CASSEROLE
This was the first meal Andrew made for me, when we first starting going out years ago. Must have been good! I like it with lots of sauce so I use two cans of soup but Andrew says the original recipe only called for one can of soup so please adjust to your taste.

- Combine all ingredients, except for 1/2 cup oriental noodles, in a casserole dish.
- Bake for 45-60 minutes at 350F, adding the reserved noodles on top in the last few minutes of cooking.
