450 g ground lamb
1 garlic clove, crushed
1 tablespoon chopped mint
50 g black olives, stoned and chopped
1 teaspoon tomato puree
1 pinch black pepper
100 g feta cheese
1 teaspoon thyme, chopped
1 cucumber, peeled and sliced
4 tomatoes, diced
1 red onion, chopped
100 g black olives, stoned
1 pinch black pepper
3 tablespoons olive oil
1 tablespoon cider vinegar
1 teaspoon honey, preferably Greek
4 slices rustic bread, thick cut
1 garlic clove, peeled
2 tablespoons olive oil
1 tablespoon mayonnaise

Steps:

  • Put the lamb, crushed garlic, mint, chopped olives, tomato puree, salt and freshly ground pepper in a mixing bowl and mix well. Divide into four portions.
  • In a separate bowl, mix the feta cheese with the thyme. It doesn't matter if it crumbles, just gently squeeze together.
  • Take a quarter of the mixture into your hand and roll into a ball. Flatten out, put a quarter of the feta in the middle and then draw the meat up around it.
  • Make sure the cheese is secure within the meat. Repeat with the other three burgers and chill in the fridge for 10 minutes.
  • In the meantime, make the salad by mixing the cucumber, tomatoes, red onion and olives together in a bowl. Season with salt and freshly ground pepper.
  • Whisk the olive oil, cider vinegar and honey together and pour over the salad.
  • Heat a griddle pan until hot. Rub each slice of bread with the garlic clove and sprinkle with olive oil.
  • Cook the bread on the griddle pan until brown on each sides. Keep warm.
  • Now cook the burgers on a griddle pan. Turn once after five minutes, then cook for another 5 minutes on the other side.
  • Spread the mayonnaise on the toasted bread. Top each slice with a freshly griddled lamb burger and a small handful of salad and serve at once.

2 tablespoons lemon juice
2 tablespoons olive oil
2 cloves garlic, smashed
2 tablespoons fresh thyme leaves, finely chopped
Salt and freshly ground black pepper
12 small lamb chops (2 to 2 1/2 pounds total)
4 ounces feta cheese, preferably Greek or French
2 tablespoons chopped mint leaves
Extra-virgin olive oil, to drizzle

Steps:

  • In a wide, shallow dish, mix the lemon juice, olive oil, garlic, 1 tablespoon thyme, 1 teaspoon salt and 1/2 teaspoon pepper. Add the lamb chops and turn until well coated. Cover and refrigerate for at least 1 hour.
  • Preheat a grill to high. Crumble the feta into a small bowl and add the mint and remaining tablespoon of thyme.
  • Grill the lamb, turning once, until both sides are golden and the fat is toasted and bubbling, about 4 minutes per side. Transfer to warm plates. Sprinkle the herbed feta over the lamb, then drizzle each plate with extra-virgin olive oil. Serve immediately.

2 1/4 lbs diced lamb (leg or shoulder)
11 ounces baby carrots
2 tablespoons oil
2 onions, peeled and finely chopped
2 stalks celery, finely chopped
2 garlic cloves, peeled and crushed
2 teaspoons ground cinnamon
1 sprig rosemary
2 (14 ounce) cans chopped tomatoes
1 1/4 cups white wine
2 ounces feta cheese, crumbled
2 ounces black olives, sliced
2 tablespoons of fresh mint, chopped
sea salt and black pepper

Steps:

  • Preheat the oven to 325°F Heat the oil in a large casserole, add the lamb in batches and brown off well. Set the lamb aside.
  • Return the pan to the heat and add the onions, carrots and celery. Cover and cook for 10 mins until the vegetables are starting to soften. Then add the garlic and cinnamon and cook for a further 2 minutes
  • Add rosemary, tomatoes, white wine and season well with sea salt and black pepper. Cover and cook in the preheated oven for 1 1/2 hrs, until the lamb is tender.
  • Stir in the olives and mint and crumble over the feta cheese to serve.

Tasty Baked Lamb With Feta Cheese and Tomatoes image

This is my husband's special dish he makes us for a treat. The flavours are lovely and he impressed me with it before we were married - I couldn't believe he'd cooked it! (I've since learned he is a good cook but keeps it quiet) He normally serves with some fresh steamed broccoli. As its so easy to make he passed the recipe onto a friend who wanted to impress his girlfriend but he didn't serve with any veggies and it does need something with it that's not baked - although she was impressed with the dish she told me. You can play around with the quantities to suit you as long as the basic ingredents are there. Enjoy!

14 ounces lamb necks (lamb neck Fillet)
8 fresh tomatoes
7 ounces feta cheese
1/4 cup olive oil
2 tablespoons dried herbs, of your choice (normally we use Italian mixed and basil)
salt and pepper

Steps:

  • Cube the neck fillet and place on the base of a 9inch square oven dish.
  • Change the dish size to suit you but we normally have enough lamb to cover the base of the dish - this makes a large meal for us two!
  • Salt and pepper the lamb.
  • Then cube feta cheese and sprinkle over the top.
  • Thinly slice the tomatoes and layer over the top so that the dish is covered.
  • Sprinkle on dried herbs.
  • Sprinkle over the olive oil.
  • Bake in the oven for 60 to 90 mins (we normally go for 90) at Gas mark 5 or 190°C.
  • Half way through the baking time take the dish out and use a baster to draw out the juices at the bottom of the dish and squirt on the top.

FETA-CRUSTED LAMB WITH RICH TOMATO SAUCE

7-or 8-bone rack of lamb , trimmed of fat, then cut into two racks
few thyme sprigs, left whole, plus extra sprigs to serve
1 tbsp extra-virgin olive oil , plus extra for frying and drizzling
zest ½ lemon
2 garlic cloves , crushed
1 tsp dried oregano
20g pack flat-leaf parsley
1 fat or 2 regular garlic cloves , crushed
400g can cherry tomatoes
50g feta cheese , finely crumbled
zest ½ lemon
pinch dried oregano
½ slice white bread (use day-old if you can), whizzed into crumbs

Steps:

  • Marinate the lamb first. Put the racks into a non-metallic dish and mix the thyme, oil, lemon zest, garlic and half the oregano in a bowl. Rub this all over the lamb, then leave to marinate for at least 30 mins or up to 24 hrs. It's important that you cook the lamb from room temperature rather than fridge cold, so if you're cooking within 1 hr or so, leave it out of the fridge.
  • For the sauce, finely chop the parsley stalks. Heat a large ovenproof frying pan or wide casserole, then add 1 tbsp olive oil. Add the garlic and the stalks, then soften for 1 min. Add the tomatoes and remaining oregano, then simmer for 5 mins until saucy, popping the cherry tomatoes with your wooden spoon to release all the juices and seeds. Chop the parsley leaves roughly and add half to the pan. Heat oven to 230C/fan 210C/ gas 8. Make the crust by mixing the remaining parsley leaves, feta, zest, oregano and breadcrumbs in a bowl.
  • When you're ready to cook the lamb, leave most of the tasty marinade on the meat, season it well with salt and freshly ground pepper, then press the crust onto one side of each piece. Sit the racks in the sauce, with the crust-side facing upwards. Strew the thyme sprigs from the marinade over the lamb and into the sauce, then drizzle everything with a little extra virgin olive oil. Roast the lamb in the sauce, uncovered, for 20 mins (for pink and juicy meat) until the crust is golden and the sauce thickened. Leave to rest for 10 mins, loosely covered, so that the crust doesn't go soggy, then carve the lamb between each bone to make cutlets. Serve the crusted cutlets with spoonfuls of the intense, roasted-down tomato sauce, and the Easy buttered onion pilaf and Lemony greens (recipes below). Garnish with thyme.

2 lbs bone-in lamb shanks
1 teaspoon dried oregano
1 teaspoon course sea salt
1/2 teaspoon fresh ground pepper
1/4 teaspoon cinnamon
4 tablespoons olive oil
1 medium sized red onion, diced
1 carrot, diced
4 garlic cloves, diced
1 cup red wine
26 ounces chopped tomatoes
1 cinnamon stick
2 bay leaves
3 sprigs fresh thyme
1 teaspoon course sea salt
1 lb orzo pasta (optional) or 1 lb hilopitaki pasta (optional)

Steps:

  • Rinse the lamb in cold water, pat dry with a paper towel, then coat with 1 tablespoon olive oil.
  • In a small bowl, combine the oregano, salt, pepper, and cinnamon to create a dry rub. Rub this mixture on the lamb coating all sides.
  • Heat 3 tablespoons olive oil in a large dutch oven pot over medium high heat. Add the lamb to the pot. Brown the lamb on all sides (approx 1-2 mins per side).
  • After the lamb is browned on all sides, transfer the lamb to a plate and allow to rest while you prepare the sauce and preheat the oven. Note: You may turn the stove off at this point, but do not throw out the oil nor clean the pan yet.
  • Preheat your oven to 300 degrees farenheit (or if you prefer to use a crockpot, start preheating your crockpot).
  • Dice the onion, carrot, and garlic. In the same pan that was used for the lamb, cook the onion, carrot, and garlic on medium heat until soft (approximately 5 minutes). Then add the red wine, tomatoes, cinnamon, bay leaves, thyme, and salt to the pot. Stir. Reduce the heat to low to simmer for 5 more minutes.
  • Submerge the lamb in the pot with the tomato sauce, cover with a lid and cook slowly in your oven or crockpot until lamb reaches a safe temperature (145-medium rare, 160-medium, 170-well done). Oven time at 300 degrees is approximately 1 and 1/2 hours.
  • When the lamb is done cooking, remove from oven and skim the fat off the top and throw away.
  • (Optional) Serve over a bed of hilopitaki or orzo pasta.

12 lamb cutlets
3 thyme sprigs, leaves picked
1 tsp chilli flakes
2 tbsp extra virgin olive oil
235g roasted red peppers from a jar, drained
175g feta, crumbled
2 spring onions, finely chopped
2 garlic cloves very finely chopped
2 thyme sprigs, leaves picked
4 tbsp extra virgin olive oil
squeeze of lemon juice (optional)

Steps:

  • Put the lamb cutlets in a bowl with the thyme, chilli flakes and oil. Toss together to coat, then leave to marinate in the fridge for 30 mins-1 hr.
  • For the htipiti, cut the peppers into small pieces. Put in a bowl and add all the other ingredients. Leave for about 15 mins for the flavour to infuse.
  • Heat a griddle pan or frying pan. When it's really hot, lift the chops out of the marinade. Cook them, a few at a time, for 3 mins either side, seasoning as you go. Serve the chops with the sauce, and some baby potatoes, if you like.

Evelyn I hope that you like this recipe. I created it and I am dedicating it to Evelyn/Athens as a thank-you for your efforts in RSC7. The recipe suggests 6 oz burgers but make them smaller if you wish. You may either pan fry or BBQ the patties. The Feta needs to be pan fried along with the mushrooms. Butter your buns if you wish.

24 ounces lean ground lamb
3 tablespoons of fresh mint, finely chopped
2 tablespoons fresh oregano, finely chopped or 1 tablespoon dried oregano

4 large buns, lightly toasted
4 lettuce leaves
16 slices cucumbers, peeled
8 slices tomatoes (if the tomatoes are small then have two slices on each burger)
4 slices sweet onions

Steps:

  • Mix the mint, oregano,chili salt & pepper into the ground hamburger.
  • Form into 4 patties.

  • Cook over medium heat for 4 minutes, flip very carefully and finsh cooking the other side apprx 5 minutes.
  • During the last 5 minutes cooking brown the feta in a lightly buttered fry pan over medium heat - cook the mushrooms in the same pan.
  • Pan Fried Instructions:.
  • With the heat on hi gh brown one side of the burgers, carefujlly flip, turn the heat to low medium, add mushrooms to the pan and cover. cook apprx 8 minutes.
  • Flip the burgers once more and add the feta cheese to the pan, cover.
  • Cook for just a minute or two until the feta starts to melt and is slightly brown.
  • Build you burgers by putting the burger on the bun with the feta cheese, add the other condiments & serve.

2 tbsp olive oil
2 tbsp chopped thyme leaves
4 lamb chops
2 small courgettes , sliced into 1cm-thick rounds
200g mangetout
1 tbsp red wine vinegar
½ tsp Dijon mustard
¼ tsp chilli flakes (optional)
small handful mint leaves , roughly chopped
small handful basil leaves , roughly chopped
25g feta , crumbled

Steps:

  • Heat a griddle over a high heat. Mix 1 tbsp oil with the thyme and seasoning, and brush over the lamb chops. Cook the chops for 3-4 mins each side, then stand them up and griddle the fat for 1-2 mins. Remove to a plate, wrap in foil and leave to rest.
  • Brush the courgettes with the remaining oil and season. Griddle for 2-3 mins each side until they are soft and have griddle marks - you may need to do this in 2 batches. Meanwhile, cook the mangetout for 2-3 mins in a medium pan of boiling water. Drain and tip into a large bowl with the courgettes. To make a dressing, mix the vinegar, mustard, chilli flakes (if using), mint and basil. Toss the courgettes and mangetout in the dressing. Crumble over the feta and serve the veg with the lamb chops.
