CLASSIC THUMBPRINT COOKIES

Crisco® Original No-Stick Cooking Spray
1/2 cup firmly packed brown sugar
1 Crisco® Baking Sticks Butter Flavor All-Vegetable Shortening, cut into slices
or 1 cup Crisco® Butter Flavor All-Vegetable Shortening
3 large eggs, separated
2 tbsps. water
1 1/2 tsps. vanilla extract
1/4 tsp. salt
2 cups Pillsbury BEST® All Purpose Flour
2 cups finely chopped pecans
1 cup Smucker's® Strawberry Preserves, or any Smucker's® Preserves, Jam or Jelly

Steps:

  • HEAT oven to 350 degrees F. Adjust rack to middle position. Coat two cookie sheets lightly with no-stick cooking spray.
  • BEAT brown sugar and shortening in medium bowl with an electric mixer at medium speed for 2 minutes or until fluffy. Scrape down sides of bowl. Add egg yolks, water, vanilla and salt. Beat until well combined. Add flour on low speed until well blended.
  • BEAT egg whites in a shallow bowl until foamy. Place pecans in a separate shallow bowl. Measure about 2 teaspoons dough for each cookie. Roll into balls. Dip each dough ball into egg whites, then roll into pecans. Place on prepared cookie sheet. Using the back of a teaspoon or your thumb, make a rounded indentation in the top of each cookie.
  • BAKE 10 minutes. Remove from oven. It may be necessary to create the indentation once again with a spoon. Place about 1 teaspoon preserves into the indentation of each cookie. Bake an additional 5 to 7 minutes or until lightly browned. Remove from oven. Cool on baking sheet for several minutes. Remove to wire rack to cool completely.

1 batch Basic Vanilla Cookie Dough or Chocolate Dough (or 1/2 batch each for marbleized cookies)
3/4 cup chopped pistachios, crushed peppermints, or sanding sugar
1/2 cup apricot jam, raspberry jam, or 1 batch Ganache
1 cup chopped dried fruit mixed with 1 tablespoon fruit jam or 1 cup chopped candied orange peel
1/2 cup sanding sugar or 1 cup crushed peppermints
1 1/2 cups melted chocolate (12 ounces) plus 1/3 cup crushed peppermints

Steps:

  • Roll dough into 1-inch balls. (For marbleized cookies, roll out a 1/2-inch-thick rope each of vanilla and chocolate dough. Pinch 3/4-inch piece from each rope and roll together into a ball.) Roll in finely chopped nuts, crushed candies, or sanding sugar, if using. Arrange on parchment-lined baking sheets, spacing each 1 inch apart.
  • For thumbprints: Press a well into the center of each using your finger. Refrigerate until firm, about 30 minutes. Bake at 350 degrees for 7 minutes. Remove from oven, and press well again with handle end of a wooden spoon. Bake until firm, 7 to 9 minutes more.For ball cookies: Refrigerate until firm, about 30 minutes. Bake at 350 degrees until firm, 14 to 16 minutes.
  • Let cool completely. Spoon jam, ganache, dried fruit, or candied orange filling into thumbprints. For chocolate-dipped ball cookies, dip cooled cookies in melted chocolate; sprinkle with candies, and let set in refrigerator.

BAKE AND SLICE THUMBPRINT COOKIES

Thumbprint cookies just got a lot easier with this bake and slice version. Instead of pressing divots into multiple mounds of cookie dough and filling each with jam, we shaped the dough into a log with a trough and flooded the center in one go. We used raspberry and apricot jam, but it's easy to swap out for whatever you have on hand. Once the cookie logs are baked, let them cool and then slice into strips.

2 cups all-purpose flour, plus more for dusting (see Cook's Note)
1/2 teaspoon baking powder
1/2 teaspoon fine salt
1 1/2 sticks unsalted butter (12 tablespoons), at room temperature
2/3 cup sugar
1 large egg, at room temperature
1 teaspoon vanilla bean paste
1/4 cup raspberry jam
1/4 cup apricot jam

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone baking mats.
  • Whisk together the flour, baking powder and salt in a medium bowl.
  • Add the butter and sugar to the bowl of a stand mixer fitted with a paddle attachment (or a large bowl if using a hand mixer). Beat on medium-high speed until fluffy, about 5 minutes. Add the egg and vanilla and beat until combined. With the mixer on low speed, gradually add the dry ingredients and beat until just combined.
  • Turn out the dough onto a floured surface and flatten into a disk. Divide into 4 equal portions. Roll each portion into a cylinder about 10 inches long and 1-inch wide. Transfer the cylinders to the prepared baking sheets. Lightly press the tops of the cylinders with your fingers to flatten.
  • Press the handle of wooden spoon with a 1/2-inch thick handle into the center of each cylinder to create a long trough about 1/2-inch deep, leaving a small border all around. (The cylinders will spread to about 1 1/2 inches wide.) (See Cook's Note.)
  • Put the raspberry jam in a small piping bag and pipe it into the indentations of 2 of the cylinders. Repeat with the apricot jam and the remaining 2 cylinders.
  • Bake until the edges of the cylinders are golden, 22 to 25 minutes, rotating the pans from top to bottom halfway through. Transfer the baking sheets to wire racks to cool, about 10 minutes.
  • Carefully transfer each cylinder to a cutting board and cut them on the diagonal into 1-inch pieces. Transfer the cookies to the wire rack and cool completely.

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
3/4 cup (1-1/2 sticks) butter, softened
1 cup sugar
2 tsp. vanilla
2-1/4 cups flour
1/2 tsp. baking soda
1 cup PLANTERS Chopped Pecans
1-1/4 cups raspberry preserves

Steps:

  • Heat oven to 350°F. Beat cream cheese, butter, sugar and vanilla with mixer until blended. Add flour, baking soda and pecans; mix well. Refrigerate 30 min.
  • Shape dough into 1-inch balls. Place, 2 inches apart, on baking sheets. Indent centers.
  • Bake 10 min. Fill each cookie with about 1 tsp. preserves. Bake 8 to 10 min. or until golden brown. Cool on baking sheets 2 min. Remove to wire racks; cool completely.

I started looking for a thumbprint recipe and found this one I have changed it a bit to fit my families tastes. These are a great holiday cookies. I have also dyed the dough orange for Halloween. These are very versatile.

3/4 cup margarine
2/3 cup sugar
2 teaspoons vanilla
1 egg
2 cups flour
1/2 teaspoon baking powder
3/4 cup red jelly preserves
1/2 cup of chopped nuts (optional)

Steps:

  • Preheat oven to 350°F.
  • Beat margarine and sugar together until fluffy; add vanilla and egg and beat well.
  • Stir in flour and baking powder.
  • Roll into balls and press thumb into the middle of the cookie, fill with half a tsp or so of jelly.
  • Bake for 12 to 15 minutes.

1/2 teaspoon baking powder
1/2 teaspoon fine salt
3/4 cup unsalted butter (1 1/2 sticks), softened

1 large egg
1/2 vanilla bean, seeds scraped from pod, or 1/8 teaspoon vanilla bean paste or 1 teaspoon pure vanilla extract
1/3 cup raspberry, cherry or strawberry jam

Steps:

  • Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone mats.
  • Whisk the flour, baking powder and salt together in a bowl.
  • In another bowl, whip the butter and the sugar with a hand-held mixer until fluffy, about 5 minutes. Beat in the egg and vanilla until just combined. Slowly beat in the dry ingredients in 2 additions, mixing just until incorporated.
  • Scoop the dough into 1-inch balls with a cookie or ice cream scoop and roll in sugar. Place about 2-inches apart on the prepared baking sheets. Press a thumbprint into the center of each ball, about 1/2-inch deep. Fill each indentation with about 3/4 teaspoon jam.
  • Bake cookies until the edges are golden, about 15 minutes. (For even color, rotate the pans from top to bottom about halfway through baking.) Cool cookies on the baking sheets. Serve.
  • Store cookies in a tightly sealed container for up to 5 days.

JAM THUMBPRINT COOKIES

3/4 pound (3 sticks) unsalted butter, at room temperature
1 cup sugar
1 teaspoon pure vanilla extract
3 1/2 cups all-purpose flour
1/4 teaspoon kosher salt
1 egg beaten with 1 tablespoon water, for egg wash
7 ounces sweetened flaked coconut
Raspberry and/or apricot jam

Steps:

  • Preheat the oven to 350 degrees F.
  • In an electric mixer fitted with the paddle attachment, cream together the butter and sugar until they are just combined and then add the vanilla. Separately, sift together the flour and salt. With the mixer on low speed, add the flour mixture to the creamed butter and sugar. Mix until the dough starts to come together. Dump on a floured board and roll together into a flat disk. Wrap in plastic and chill for 30 minutes.
  • Roll the dough into 1 1/4-inch balls. (If you have a scale they should each weigh 1 ounce.) Dip each ball into the egg wash and then roll it in coconut. Place the balls on an ungreased cookie sheet and press a light indentation into the top of each with your finger. Drop 1/4 teaspoon of jam into each indentation. Bake for 20 to 25 minutes, until the coconut is a golden brown. Cool and serve.

My mom used to make these and fill them with grape or strawberry jelly. Now, I make them for the Christmas cookie trays with a red or green maraschino cherry or a Hershey's kiss pressed into the thumbprint.

1 teaspoon salt
3/4 cup margarine, softened
2 egg yolks
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2 cups flour
2 egg whites
1 -2 cup chopped walnuts
any flavor jam
maraschino cherry
Hershey chocolate kiss

Steps:

  • Cream together margarine and sugar.
  • Add salt, lightly beaten egg yolks, vanilla, and almond extract, and mix thoroughly.
  • Gradually add flour and stir until well blended.
  • Roll dough into one inch balls.
  • Beat egg whites until frothy.
  • Dip dough balls into egg whites and roll in chopped nuts.
  • Place on cookie sheet about two inches apart and press a deep thrumbprint into each center.
  • Bake at 350 degrees 10-12 minutes.
  • While cookies are still warm, fill thumbprints with jelly or press a maraschino cherry or Hershey's kiss into the thumbprint.

250g plain flour
70g icing sugar, plus about 2 tbsp for dusting
8g vanilla sugar, or 8g caster sugar plus 1 tsp vanilla extract
1 tsp lemon zest
150g butter, cut into cubes
2 egg yolks
100g redcurrant jelly (or raspberry jam)

Steps:

  • For the shortcrust pastry, sift the flour and icing sugar into a mixing bowl. Add the vanilla sugar, lemon zest and a pinch of salt. Rub the butter into the flour mixture until it is incorporated and then mix in egg yolks. Knead everything into a compact smooth dough. Wrap the dough and chill it for 1 hour.
  • Remove the dough from the refrigerator and bring it to room temperature for 10 minutes. Form the dough into a long roll and divide it into 60 equal portions. Form a small ball from each portion and place it on a baking sheet covered with baking parchment (you will need two or more sheets). Press a dip (for the jam) into each ball with the handle of a wooden spoon.
  • Heat the oven to 200C/fan 180C/gas 6. Heat the jelly or jam in a saucepan until it melts. Use a teaspoon to fill the dips in the dough balls.
  • Bake for 12-15 minutes, then allow to cool completely. Finally, dust the cookies with some icing sugar. The cookies can be stored in an airtight container for several weeks.
