THREE GLAZES FOR CHICKEN OR FISH
These glazes dress up and give some extra taste to baked,grilled or broiled chicken or fish.Use 1/4 Cup jelly. (it shows as 0 on the submission. They are simple & interchangeable.You make them the same way. Remember to use 2 spices with the jelly. Sugar free jelly is fine to use also. Use sugar free jelly if desired. Sometimes I will take a spice from one glaze and a jelly from another.

Steps:
- Heat three ingredients, one jelly and two spices in a microwave proof bowl covered until jelly is melted and spices blended.
- Take out and stir.
- Brush the glaze on the last 15 minutes of cooking.
- Note: I have used some of the glazes on baked applies, baked pears, baked sliced oranges and bananas and pineapple slices.
- If you cannot have sugar or salt in your diet, this is a great substitute for your meats or fish.

MANGO GLAZE FOR FISH, CHICKEN, OR PORK
Steps:
- Heat the vinegar in a saucepan over medium heat. Add the sugar and cook until thickened slightly. Add jalapeno, ginger, and mango and continue cooking until softened. Add the lime juice. Transfer to a food processor and puree until smooth. Strain, if necessary. Consistency will be thick and jam-like, but can be thinned to more of a glaze consistency with honey or water.
HONEY GLAZED CHICKEN
An easy and delicious twist to classic roast chicken

Steps:
- Put 2 chicken breasts, skin side up in a small baking dish and season.
- Squeeze the lemon into a bowl and stir in the honey and soy sauce. Spoon the mixture over the chicken, then tuck the squeezed-out half of lemon between the pieces (this will moisten and add flavour to the chicken).
- Roast the chicken breasts in a baking dish, uncovered, for 30-35 minutes in a preheated oven (190C/gas 5/fan oven 170C). Cook until done and richly glazed, basting with the juices at least twice. To check if they are done, prod the chicken with your finger - if it's still a bit soft, give it a bit longer.
- Serve with salad and potatoes roasted with herbs and garlic.
MOROCCAN SPICE GLAZE
The third of three glazes from the Montreal Gazette. Goes well with beef, chicken, pork or fish (I keep kosher, so I wouldn't put any of these glazes on pork, but everyone else is free to do so). It would be nice if people would review these glazes and let me know which glaze works best with what meat. The combinations appear endless, so some people should find the making of these recipes interesting and fun!

Tempura-style battered chicken tidbits soaked in a lemon glaze --- this can also be make using a meaty fish such a cod or halibut cut into small pieces, if you prefer a less sweeter glaze then reduce the sugar by a couple tablespoons --- serve with rice :)

- Slice the breasts into about 1-1/2-inch cubes (or smaller) then place in a large bowl.
- Toss the chicken strips with 2 tablespoons soy sauce and 1/2 teaspoon salt; cover and chill for 20 minutes.
- For the batter; in a small bowl beat the eggs with 1/4 cup cornstarch, baking powder and pinch white pepper.
- Heat 2 cups vegetable oil in a wok to 350 degrees F.
- Using clean hands completely coat/toss the chicken with the cornstarch batter.
- Place chicken in the hot oil and fry (in batches) until browned and cooked through; set aside to a large serving plate and tent loosely with foil to keep warm while making the lemon sauce.
- For the lemon glaze; in a medium bowl combine 1/3 cup sugar, 2 tablespoons cornstarch, 1 cup chicken broth, 2 tablespoons lemon juice, 3/4 teaspoon salt and food coloring (if using) mix until combined then add in the peeled lemon slices.
- Heat 2 tablespoons oil in the wok and slowly stir in the lemon glaze mixture; cook stirring until the glaze is clear (at this point you can remove the lemon slices or leave in the sauce).
- Drizzle the glaze over the chicken.
- Place fresh lemon slices on top if desired.
- Serve with cooked rice.
