VEGAN CRUMBLE RECIPE
A classic British vegan fruit crumble, with a delicious buttery topping and sweet, sharp fruit filling. Perfect for blackberries, plums and apples!

Steps:
- In a medium bowl, combine the vegan butter and plain white flour. Using two knives or a pastry cutter, chop up the vegan butter into tiny pieces until evenly distributed throughout the flour.
- Add the rolled oats, sugar, flaky sea salt and cinnamon. Combine again with the pastry cutter until crumbly and sandy textured with some larger lumps of the vegan butter. Set aside.
- Pre-heat the oven to 180c.
- If using stone fruit, remove the stones and slice into bite-size pieces. If using blackberries, give them a wash. If using apples, peel, core and dice them into 2cm cubes.
- In a medium bowl, combine the fruit, sugar, corn starch and lemon juice. Toss and stir to combine until all the fruit is coated.
- Place the fruit and all the juices in a pie dish, casserole dish or deep baking tray.
- Top the fruit with the crumble and place in the oven. Bake for 30 - 40 minutes or until the crumble is golden brown and some juices are bubbling through the surface.
- Remove form the oven and serve with your favourite vegan ice cream.

- Preheat oven to 350 degrees F.
- In a mixing bowl, sift the flour, then add the butter & rub it in using your fingertips. When mixture resembles coarse breadcrumbs, stir in the GROUND almonds & brown sugar, then set aside.
- Peel & core the apples & pears, then cut them into thin slices & place in a baking dish.
- Cut the plums in half & remove the pit before adding them to the other fruit. Sprinkle the granulated sugar over the fruit.
- Top evenly with the flour mixture, but DO NOT PRESS DOWN ON IT!
- Bake for 25 minutes, then remove from the oven & sprinkle the SLIVERED almonds over the top of the crumble & return it to the oven to bake another 10-15 minutes or until golden & crisp in places.
- Serve hot with cream or a sauce OR ice cream & ENJOY!

Steps:
- Heat the oven to 180C/160C fan/gas 4. Mix together the fruit and granulated sugar (you will need less sugar for canned fruit) so it's evenly coated. Tip into a pie dish where it fits snugly.
- Rub the butter into the flour to make a light breadcrumb texture. Do not overwork it or the crumble will become heavy. Add in the demerara sugar until combined and spread over the fruit until completely covered.
- Bake for 35-50 mins until golden brown and bubbling, and the fruit is tender. Leave to cool for 5 mins before serving.

VEGAN APPLE CRUMBLE
What says comfort food more than apple crumble? Bake this vegan version as a satisfying treat for all the family - perfect with dairy-free cream or custard

- Heat the oven to 190C/170 fan/gas 5. Toss the apples with 2 tbsp golden caster sugar and put in a 23cm round baking dish at least 5cm deep, or a 20cm square dish. Flatten down with your hand.
- For the crumble topping, mix the flour and sugar in a bowl with a good pinch of salt. Rub the dairy-free spread in with your fingertips until the mixture looks like moist breadcrumbs. Shake the bowl and any big bits will come to the surface - rub these in too.
- Pour the crumble mix over the apples to form a pile in the centre, then use a fork to even out. Gently press the surface with the back of the fork so the crumble holds together and goes crisp, then lightly drag the fork over the top for a decorative finish. Sprinkle the oats and demerara sugar over evenly.
- Place on a baking tray and put in the oven for 35-40 mins, until the top is golden and the apples feel very soft when you insert a small, sharp knife. Leave to cool for 10 mins before serving.

- Pour the stock into a pan and bring to the boil. Tip in the celeriac, carrots and sweet potato, then add the leeks. Cover the pan and cook for 10 mins.
- Beat the crème fraîche with the flour and mustard. Stir into the vegetables until thickened, then add the thyme and season. Remove from the heat.
- For the crumble, rub the butter into the flour and ground almonds. Season, then stir in the Parmesan and flaked almonds. Spoon the filling into small ovenproof dishes and scatter the crumble on top. If freezing, wrap in cling film, then foil. To defrost, thaw overnight in the fridge.
- To cook, heat oven to 190C/170C fan/gas 5 and bake for 30-35 mins until golden.

TESS' ANY FRUIT CRUMBLE
I've been looking for the perfect crumble recipe for a long time and my friend Tess had it! I've made this different times with peaches, apples, plums, and rhubarb/strawberry but really any fruit or berries will do. It is easy to change the serving size or make more fruity or more crumbly as long as the crumble ingredients remain equal parts.

- Mix fruit wiht 1 T flour, 1 T sugar and the cinnamon.
- Crumble together flour, brown sugar, butter and oatmeal.
- Butter a 9x9 pan and pour in fruit. Top with crumble and bake at 350 degrees until browned and bubbly.
