Use three-cornered leeks or substitute with baby leeks or spring onions and chive flowers to similar effect, making simple scrambled eggs more special for spring

4 eggs
25g salted butter , diced, plus extra for spreading
50g three-cornered leek , save the flowers to serve, or use baby leeks, or spring onions (about 4), washed and roughly chopped, and chive flowers to serve (optional)
2 slices sourdough bread
pink peppercorns or dried chilli flakes, to taste

Steps:

  • Crack the eggs into a bowl or jug. Whisk lightly with a fork, just to break up the yolks, then stir in three-quarters of the diced butter and season.
  • Heat a small non-stick frying pan over a medium heat. Add the remaining butter to the pan, followed by the three-cornered leek. Season with salt and cook for a minute or two, stirring, until it has wilted into the melted butter. Toast the bread and warm two plates.
  • Add the egg mixture to the pan with the leek and cook, stirring, until all the butter has melted and the eggs are just about set but still silky and creamy. Butter the toast and top with the scrambled eggs, season with salt and freshly ground pink or black peppercorns or chilli flakes, then finish with some of the three-cornered leek flowers.

Slow and steady wins the race! Cooking over low heat ensures soft and luscious scrambled eggs. If you like, at the very end stir in 1/2 cup of your favorite shredded cheese, such as aged Cheddar or Gruyere.

8 large eggs
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter

Steps:

  • Lightly beat the eggs, 3/4 teaspoon salt and a few grinds of black pepper in a medium bowl.
  • Melt 1 tablespoon of the butter in a medium nonstick skillet over low heat; swirl to coat the bottom and sides. Add the eggs, and cook slowly, scraping them up with a rubber spatula occasionally, until most of the liquid has thickened and the eggs are soft, about 10 minutes. (If you like your eggs a little firmer, cook them for an additional 2 to 3 minutes.) Remove them from the heat, and gently fold in the remaining 1 tablespoon of butter. Serve hot.

Toast, for serving

Steps:

  • Crack the eggs into a mixing bowl. Whisk the eggs until the yolks and the whites are cohesive and light yellow.
  • Add the butter to a nonstick pan and heat over medium-low heat. When the butter is melted, add the eggs and 1/2 teaspoon salt. Continue moving the eggs with a rubber spatula; after a few minutes, some curds will start forming. Keep stirring and scraping the pan until the eggs come together, are creamy and look almost like a custard. This process can take between 15 to 20 minutes. Remove the pan from heat. Season with salt.
  • To serve, spoon the eggs onto the toast. Top with freshly ground black pepper.

My mom made this on special days for breakfast. It was a family favorite growing up. Now I make for my hubby on those "special" days that I want to say he's tops in my book. You may wish to double this recipe for big eaters or if no fruit and meat accompany the meal.

5 tablespoons butter
4 tablespoons flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon white pepper
1/8 teaspoon ground nutmeg
3 hard-boiled eggs, chopped
3 -4 slices bread, to toast
butter

Steps:

  • Melt butter over medium-high heat.
  • Whisk in flour.
  • When bubbly, whisk in milk a little at a time.
  • Add salt.
  • Continue to whisk til thick and bubbly.
  • Remove from heat and add chopped eggs.
  • Toast and butter slices of bread.
  • Lay slices on individual plates and spoon on Creamed Eggs.
  • Serve.

1 tablespoon sunflower oil
2 teaspoons butter
1 large leek, trimmed and thinly sliced
4 whole wheat English muffins, split, toasted and lightly buttered
salt and pepper

Steps:

  • Put the eggs in a bowl and use a fork to whisk together, set aside.
  • Heat the oil with half the butter in a large skillet over a medium-high heat until frothy. Reduce the heat to medium, add the leeks, and stir around for about 5 minutes until wilted. Use a slotted spoon to remove the leeks from the skillet and set aside.
  • Add the remaining butter to the oil in the skillet. Season the eggs to taste with salt and pepper, then pour them into the skillet, reduce the heat to medium low and cook stirring for 1.5 minutes. or until the eggs begin to set.
  • Return the leeks to the skillet and stir into the eggs until the eggs have reached desired consistency.
  • Spoon the egg and leeks over the hot muffins and serve.
