CHEESE TORTELLINI WITH SQUASH

- Place a baking sheet on the middle oven rack and preheat to 450˚ F. Toss the squash, mushrooms, olive oil and a big pinch each of salt and pepper in a large bowl. Spread out on the hot baking sheet and roast, tossing once or twice, until the vegetables are browned around the edges and tender, 20 to 25 minutes.
- Meanwhile, bring a large pot of salted water to a boil. Combine the heavy cream, garlic, sage and a pinch of salt in a small saucepan. Bring to a boil, then reduce to a simmer and cook until reduced by about one-third, 5 to 7 minutes. Remove from the heat and stir in 1 teaspoon lemon juice; add more lemon juice to taste.
- Add the tortellini to the boiling water and cook as the label directs. Reserve 1 cup cooking water, then drain (reserve the pot).
- Strain the cream mixture through a fine-mesh sieve into the reserved pot. Add the tortellini and 1/2 cup reserved cooking water; toss over medium heat until coated, adding a few more tablespoons cooking water as needed to loosen.
- Divide the roasted vegetables among shallow bowls. Spoon the tortellini and sauce on top. Sprinkle with Parmesan and chives.

11/20/13 UPDATE: Finally got around to making this and it was easy and delicious! I used mushroom filled pasta and YUM! Found this in The Healthy Heart Cookbook. Sounds good and easy!

Steps:
- Cook tortellini according to package. Drain, keep warm.
- Combine rest of ingredients in a small saucepan, bring to a boil. Cover, reduce heat, simmer 5 minutes. Stir in parmesan.
- Transfer sauce to serving bowl and add tortellini.

- In a medium saucepan, sauté shallots and garlic in butter until softened.
- Add flour; cook and stir one minute.
- Stir in wine; cook one minute more.
- Slowly add cream, mixing until smooth. Add cheese; cook over medium heat until smooth and thick.
- Add fresh basil; mix well and pour over hot, cooked tortellini.
- Garnish with basil leaves.

This is a great pasta salad with cheese tortellini and sweet basil. Plan ahead, because it should chill for a couple hours to allow flavors to blend.

- Cook tortellini as directed on package.
- Drain and rinse with cold water.
- Mix remaining ingredients in a medium bowl.
- Add tortellini and toss until well combined.
- Cover and refrigerate at least 2 hours.
- Toss again before serving with additional parmesan cheese.

- To make the squash, spread the squash in an even layer on a baking sheet. Drizzle the oil and sprinkle the salt over the top, then stir the squash around to coat it. Roast the squash for 20 minutes, or until it starts to turn golden and caramelized. Remove it from the oven and lower the temperature to 350°F (175°C).
- To make the sauce, melt the butter in a 2-quart (2-L) saucepan over medium heat. Add the flour and stir until it forms a loose paste. Slowly add the milk, whisking continuously, until the milk is combined with the flour and butter and there are no lumps. Lower the heat to medium-low and add the onion, garlic and salt. Cook the sauce for 10 minutes, stirring occasionally. Adjust the heat if needed to prevent it from boiling.
- When the sauce lightly coats the back of a spoon, remove and discard the onion and garlic. Add the goat cheese and stir until it melts into the sauce, 2 to 3 minutes. Add the black pepper and basil.
