- In a large skillet, cook and crumble sausage over medium heat until no longer pink; drain. Add green pepper and onion; saute until tender. Drain. - Preheat oven to 350° F. Spray 9x13-inch baking dish with nonstick spray.
- Spray a large nonstick skillet with nonstick spray. Heat over medium high. Add the kielbasa and cook, stirring occasionally, until browned, 3 to 4 minutes. Add the onion and garlic; reduce heat and cook, stirring occasionally, until the onion is softened, about 4 minutes. Add all beans, water, ketchup, mustard, vinegar, and brown sugar; cook, stirring occasionally, until the flavors are blended, about 5 minutes. Pour the bean mixture into the baking dish.
- Sprinkle the bean mixture with the cheese. Bake the casserole until bubbling in the center, 35 to 40 minutes. Let stand about 5 minutes before serving.

SAUSAGE & BEAN CASSEROLE

- Heat 2 tbsp olive or rapeseed oil in a large heavy-based pan.
- Add 1 finely chopped onion and cook gently for 5 minutes.
- Add 2 finely chopped medium celery sticks, 1 chopped yellow pepper and 1 chopped red pepper and cook for a further 5 mins.
- Add 6 chorizo sausages and 6 pork sausages and fry for 5 minutes.
- Stir in 3 chopped garlic cloves, 1 ½ tsp sweet smoked paprika, ½ tsp ground cumin and 1 tbsp dried thyme and continue cooking for 1 - 2 mins or until the aromas are released.
- Pour in 125ml white wine and use a wooden spoon to remove any residue stuck to the pan.
- Add two 400g cans of tomatoes, and 2 sprigs of fresh thyme and bring to a simmer. Crumble in the chicken stock cube and stir.
- Cook for 40 minutes. Stir in a 400g drained and rinsed can of aduki beans and cook for a further five minutes.
- Remove the thyme sprigs, season with black pepper and stir through some snipped chives, if using. Serve.

- Heat oven to 220C/200C fan/gas 7. Toss the chipolatas, bacon lardons and 1 tbsp of the oil together in a large roasting tin. Roast for 20-30 mins until everything is turning brown and crisp - you may want to tip off any liquid and stir it halfway. Use a fish slice to scrape up any stuck bits.
- Whisk together the passata, paprika, tomato purée, sugar, brown sauce, 250ml water, a little salt and lots of pepper. Stir into the tin with the beans. Can be made 1 day ahead - cool first, tip into a plastic container, then chill.
- Put the tin back in the oven and bake for another 20 mins until thickened and bubbling (add another 10 mins if cooking from chilled).
- Turn off the oven but leave the tin in to keep warm while you fry the eggs. Heat the remaining oil in a large frying pan, crack in the eggs and fry them to your liking. Serve the fried eggs with the sausage bake and plenty of hot buttered toast.
