1 medium green pepper, chopped
1 medium onion, chopped
1 can (31 ounces) pork and beans
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (15-1/2 ounces) black-eyed peas, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (15 ounces) chickpeas, rinsed and drained
1-1/2 cups ketchup
3/4 cup packed brown sugar
2 teaspoons ground mustard

Steps:

  • In a large skillet, cook and crumble sausage over medium heat until no longer pink; drain. Add green pepper and onion; saute until tender. Drain. Add remaining ingredients., Pour into a greased 13x9-in. baking dish. Cover and bake at 325° for 1 hour. Uncover; bake 20-30 minutes longer or until bubbly.

One 15-ounce can Great Northern beans, (rinsed and drained)

One 15-ounce can red kidney beans, (rinsed and drained)
1 cup water
½ cup ketchup
2 tablespoons spicy brown mustard
1 tablespoon cider vinegar
1 tablespoon packed brown sugar
½ cup low fat shredded cheddar cheese

Steps:

  • Preheat oven to 350° F. Spray 9x13-inch baking dish with nonstick spray.
  • Spray a large nonstick skillet with nonstick spray. Heat over medium high. Add the kielbasa and cook, stirring occasionally, until browned, 3 to 4 minutes. Add the onion and garlic; reduce heat and cook, stirring occasionally, until the onion is softened, about 4 minutes. Add all beans, water, ketchup, mustard, vinegar, and brown sugar; cook, stirring occasionally, until the flavors are blended, about 5 minutes. Pour the bean mixture into the baking dish.
  • Sprinkle the bean mixture with the cheese. Bake the casserole until bubbling in the center, 35 to 40 minutes. Let stand about 5 minutes before serving.

1 pound bulk pork sausage (or turkey sausage)
2 stalks celery (sliced)
1 onion (medium, chopped)
1 clove garlic (crushed)
42 ounces canned baked beans ( in tomato sauce)
15 ounces canned lima beans (drained)
15 ounces canned kidney beans (drained)
8 ounces canned tomato sauce
1 tablespoon dry mustard
2 tablespoons honey
1 tablespoon white vinegar
1/4 teaspoon red pepper sauce

Steps:

  • Heat the oven to 400ºF.
  • If you have sausage meat that is in casings, remove the casings from the meat. Cook the sausage, celery, onion and garlic in a 10 inch skillet over medium heat for 10 minutes, stirring occasionally, until the sausage is no longer pink. Drain of the fat.
  • Mix the sausage mixture with the remaining ingredients in an ungreased 3 quart casserole. Bake at 400ºF, uncovered, for about 45 minutes, stirring once, until everything is hot and bubbly.

2 tbsp olive or rapeseed oil
1 onion, finely chopped
2 medium sticks celery, finely chopped
1 yellow pepper, chopped
1 red pepper, chopped
6 cooking chorizo sausages (about 400g)
6 pork sausages (about 400g)
3 fat garlic cloves, chopped
1 ½ tsp sweet smoked paprika
½ tsp ground cumin
1 tbsp dried thyme
125ml white wine
2 x 400g cans cherry tomatoes or chopped tomatoes
2 sprigs fresh thyme
1 chicken stock cube
1 x 400g can aduki beans, drained and rinsed
1 bunch chives, snipped (optional)

Steps:

  • Heat 2 tbsp olive or rapeseed oil in a large heavy-based pan.
  • Add 1 finely chopped onion and cook gently for 5 minutes.
  • Add 2 finely chopped medium celery sticks, 1 chopped yellow pepper and 1 chopped red pepper and cook for a further 5 mins.
  • Add 6 chorizo sausages and 6 pork sausages and fry for 5 minutes.
  • Stir in 3 chopped garlic cloves, 1 ½ tsp sweet smoked paprika, ½ tsp ground cumin and 1 tbsp dried thyme and continue cooking for 1 - 2 mins or until the aromas are released.
  • Pour in 125ml white wine and use a wooden spoon to remove any residue stuck to the pan.
  • Add two 400g cans of tomatoes, and 2 sprigs of fresh thyme and bring to a simmer. Crumble in the chicken stock cube and stir.
  • Cook for 40 minutes. Stir in a 400g drained and rinsed can of aduki beans and cook for a further five minutes.
  • Remove the thyme sprigs, season with black pepper and stir through some snipped chives, if using. Serve.

Feed a crowd with this all-in-one brunch dish with homemade baked beans, chipolatas, bacon and fried eggs

12 chipolatas
200g pack smoked dry-cured bacon lardons
4 tbsp sunflower oil
680g bottle passata
1 tbsp sweet smoked paprika
3 tbsp tomato purée
1 tbsp brown sugar
100g brown sauce
3 x 400g cans cannellini beans , drained and rinsed
6 eggs
piles of hot buttered toast , to serve

Steps:

  • Heat oven to 220C/200C fan/gas 7. Toss the chipolatas, bacon lardons and 1 tbsp of the oil together in a large roasting tin. Roast for 20-30 mins until everything is turning brown and crisp - you may want to tip off any liquid and stir it halfway. Use a fish slice to scrape up any stuck bits.
  • Whisk together the passata, paprika, tomato purée, sugar, brown sauce, 250ml water, a little salt and lots of pepper. Stir into the tin with the beans. Can be made 1 day ahead - cool first, tip into a plastic container, then chill.
  • Put the tin back in the oven and bake for another 20 mins until thickened and bubbling (add another 10 mins if cooking from chilled).
  • Turn off the oven but leave the tin in to keep warm while you fry the eggs. Heat the remaining oil in a large frying pan, crack in the eggs and fry them to your liking. Serve the fried eggs with the sausage bake and plenty of hot buttered toast.

15 ounces butter beans, drained

1/16 teaspoon red pepper sauce
1 pinch salt
1 pinch pepper

Steps:

  • In a 10 inch skillet, add the sausage, ground beef, celery, onion, and garlic and cook over medium heat 8-10 minutes, stirring occasionally, until the meat is no longer pink; drain.
  • In a a 3½ - 6 quart slow cooker, combine the meat mixture and remaining ingredients. Cover & cook on low heat setting 5-6 hours.

  • The next day cook in the slow-cooker, on low heat setting, another 2 hours.
