Steps:
- Preheat oven to 350 degrees.
- Clean potatoes and pierce with fork.
- Place on oven rack, bake for 1 and 1/4 hours or until tender, and set aside to cool.
- Cut each potato in half lengthwise and scoop pulp out with a spoon leaving 1/4 inch shell.
- Mash the potato pulp until smooth, stir in cranberry sauce, dried cranberries, butter and salt.
- Spoon mixture back into each shell dividing evenly.
- Place shells in baking pan and sprinkle with walnuts.
- Bake 25 to 35 minutes until thoroughly heated.

Steps:
- Preheat oven to 450°F.
- Toss the brussels sprouts with enough olive oil to coat, a genereous pinch of salt and pepper to taste.
- Put the sprouts on a baking sheet pan in the preheated oven for 15 minutes.
- Meamwhile, in a small saute pan, gently simmer the balsamic vinegar with the honey until the mixture has reduced and is slightly thickened, 3-5 minutes. Set aside.
- After 15 minutes, removed the Brussels sprouts from the oven, and test with a paring knife. If the Brussels sprouts are not sufficiently charred to tender, return to the oven for 5 minutes. If they appear to be charring too much, reduce the oven to 400 and continue roasting until they are knife tender.
- When the Brussels sprouts are finished cooking, remove from the oven, transfer to a bowl, aned add the pistachios and apple slices.
- Pour the reduce balsame mixture into the bowl and toss to coat evenly.
- Transfer mixture to serving platter and top with a dollop of creme fraiche. Add more salt and creme fraiche if desired.

- Preheat oven to 425°F.
- Toss pepitas with 1 teaspoon of the oil, ¼ teaspoon of the salt, and several grinds pepper on a rimmed baking sheet.
- Rub potatoes with remaining 3 tablespoons oil and place cut side down on a second rimmed baking sheet.
- Add a few grinds of pepper.
- Transfer both baking sheets to oven.
- Bake pepitas until golden, 5 to 6 minutes.
- Remove from oven.
- Continue baking potatoes until very tender, 22 to 28 minutes more.
- Let cool slightly, about 5 minutes, then scoop potato flesh into a large bowl.
- Return potato skins to baking sheet. Broiling the potato skins before filling them with the sweet potato mixture crisps them up so they can serve as a sturdy base.
- Increase oven temperature to broil and position top rack 6 inches from heat. Broil potato skins until crispy, 1 to 2 minutes.
- Add black beans, a few grinds pepper, 1 cup of the cheese, and remaining 1 teaspoon salt to sweet potato flesh and stir to combine.
- Divide mixture among skins and top with remaining ½ cup cheese.
- Return to oven and broil until cheese is melted, 2 to 3 minutes.
- Top with avocado and pepitas.
- Top with avocado, chile peppers, and/or cilantro, as desired.
- Serve with lime wedges.

- Preheat oven to 350.
- Spread cranberries in a 13x9 GLASS baking pan; sprinkle with one cup sugar and stir to coat all the berries.
- Bake until mixture is hot and bubbly (berries will pop)--about 40 minutes. STIR TWICE DURING BAKING TIME!
- Gently stir in the raspberries; sprinkle with remaining sugar and liqueur, stir again.
- Pour mixture into a serving dish; cover and chill until set.
- **NOTE**the Grand Marnier can be substituted with orange juice.
BBQ SAUCE: SWEET AND SPICY
If I have the time to make homemade BBQ sauce, this is one of several recipes that I use when I grill or oven bake. This is super quick and easy to make. Hubby really loves this on my Recipe #516009, but it is just as good when used on poultry. If you like a sweet BBQ sauce with a bit of a spicy after taste, this could be the one you want (I actually prefer the more mustard based BBQ sauces, but this makes hubby happy). I'm hoping that you enjoy this recipe, and that maybe you will try one of my other BBQ sauces in the future. *Note: I've stopped "tinkering" around with this recipe because hubby said "It's great as is, leave it alone". (I considered maybe sweating some minced onion to add along with some garlic powder, but it is just so simple and tasty now that I would hate to mess it up. Besides, those flavors are not missed). Enjoy! (*Note added: It is an extremely thin sauce, but can probably be altered to make it thicker... maybe less water or longer simmer time).

Steps:
- Combine all ingredients except red pepper flakes in a small size sauce pan. Whisk while heating over a medium-low flame. Once sugar is dissolved, add in red pepper flakes. Simmer 5 minutes, whisking often.
- Once everything is incorporated, and you've adjusted the taste to your liking, let cool completely and store in an air tight jar for up to 3 weeks in the refrigerator (that's the longest it ever lasted in our house, it may stay fresh longer). If not using right away, mix sauce well, before using. (Nicely fills a recycled and cleaned, 16oz olive jar for storing in the fridge).
- *Note: While the ingredients have time to meld together in the fridge, the flavor will change a bit. Keep this in mind while tasting during the preparation. A little bit hot will get hotter -- a little bit sweet will get sweeter.
