THICK & CREAMY BROCCOLI CHEESE SOUP
A lighter version of Thick and Creamy Broccoli Cheese Soup! A secret ingredient makes this soup secretly lighter, healthier and epically creamy!

- In a large pot heat olive oil over medium heat. Add in the onion and cook for several minutes until softened. Add in the garlic and stir and let cook about 15 seconds or until fragrant.
- Add in the broth and milk. Stir to combine. Add the cauliflower florets and seasonings. Bring to a simmer, cover and let simmer about 10 minutes until the cauliflower is softened and easily mashed with the stirring spoon.
- Turn the heat off, remove the bay leaf, and using an immersion blender, blend the soup until the cauliflower is all pureed and no large chunks remain. (If you don't have an immersion blender you can carefully transfer the soup to a blender or food processor to blend, then return to the pot.)
- Turn the heat back to medium heat, add the broccoli and bring soup back to a simmer. Cover and let cook another 10 minutes.
- Once the broccoli is softened and easily mashed, then again turn the heat off and using the immersion blender, blend the broccoli to desired consistency. I prefer no large chunks in my soup, and to make it nice and creamy.
- Once blended, turn the heat back to low, add the cheese and stir until the cheese is melted.
- Serve warm and enjoy! Top with additional cheese if desired.

THE BEST BROCCOLI-CHEDDAR SOUP
This outstanding broccoli-cheddar soup is rich, cheesy and packed with flavor. We decided to puree just over half the soup which makes it extra thick and creamy, and left the remainder chunky so there are broccoli bits in every bite. Gild the lily with more shredded cheese on top to satisfy your comfort food craving.

- Melt the butter in a large saucepan or Dutch oven over medium-high heat. Add the onion, carrot and garlic and cook, stirring occasionally, until just tender, about 5 minutes. Whisk in the flour and cook until golden, 3 to 4 minutes, then gradually whisk in the half-and-half until smooth. Add the chicken broth, broccoli, bay leaves, nutmeg, 1/2 teaspoon salt and few grinds of black pepper Bring to a boil, then reduce to medium-low and simmer, uncovered and stirring occasionally, until the broth has thickened and the broccoli is very tender, about 15 minutes.
- Meanwhile, prick the potato all over with a fork and put on a microwave-safe plate. Microwave on high until tender, flipping halfway through, about 6 minutes. Let cool, then peel. Use a fork or potato masher to mash until crumbly.
- Reserve 2 cups of the soup in a liquid measuring cup and discard the bay leaves. Let the remaining hot soup cool for 5 minutes or so, then transfer it to a blender, filling no more than halfway. Add the mashed potato. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters, and pulse until very smooth.
- Stir the pureed soup and reserved 2 cups of soup back into the pot. Whisk in the cheese until melted and smooth. Season with salt and pepper. Ladle into serving bowls and top with more shredded Cheddar.

- In a large nonstick saucepan coated with cooking spray, saute onion until tender. Add garlic; cook 1 minute longer. Stir in flour until blended. Gradually whisk in broth. Bring to a boil; cook and stir for 1-2 minutes or until slightly thickened. , Add the broccoli, tarragon, thyme and pepper; return to a boil. This is by far the best broccoli cheese soup I have been able to come up with. It's made with a roux, chicken stock, milk, a mix of cheese, and fresh broccoli.

- Melt the butter in a large pot over medium heat, and mix in the flour. Reduce heat to low, and cook, stirring constantly, about 2 minutes. Mix in the chicken stock and milk, and season with salt and white pepper. Bring to a boil, reduce heat to low, and simmer about 10 minutes.
- Bring a pot of lightly salted water to a boil. Place the broccoli in the boiling water, and cook 2 minutes, or until just tender. Remove from heat, drain, and set aside.
- Gradually mix the processed cheese and Cheddar cheese into the large pot until melted. Mix in the broccoli. Continue cooking about 5 minutes.

THICK AND CREAMY BROCCOLI CHEESE SOUP
This recipe came from my husbands Uncle Robbie, who is a great Cook. We were visiting him in Memphis on a cold and snowy day gathering groceries for the next few days. I mentioned how great a bowl of TGI Fridays broccoli cheese soup would be. The next thing I know we gathered the ingredients and were savoring this soup. I am so glad we did not go to the restaurant!!

Steps:
- Steam Broccoli by either putting in Microwave safe dish with lid and a small amount of water, or on stove in a covered sauce pan and small amount of water.
- Cook just until soft.
- Oil skillet 1/8" in bottom.
- Heat, then add 3 TBS Butter.
- Add 2 Tbs Flour, chopped Green onion bottoms and ground Pepper.
- Cook until Yellow in color, just enough so the flour is not raw.
- Add 2 Cans of Chicken Broth.
- Stir quickly, using whisk if you have one.
- Add Steamed Broccoli and any pan liquids.
- Add Green Onion tops, and Simmer 15-20 minutes on Med heat.
- This will slightly reduce liquid and impart flavors. The broccoli breaks apart and "makes" the soup. If you would like whole pieces of broccoli, keep some out to add at the end. This way they will not overcook.
- Reduce heat.
- Add Colby and American Cheeses.
- Cook on low 1 minute.
- Add 1 Cup Half and Half slowly, so it will not clump.
- Here you must watch temperature, so keep it on low.
- Cook 10 minutes.
- Add Cornstarch to water and stir.
- Pour in 1/2 of cornstarch mixture and stir.
- Then pour in 2nd half of mixture and stir.
- Turn heat off and stir until thick.
SOMERSIZING BROCCOLI CHEESE SOUP - THICK AND CREAMY
Listed as the BEST Broccoli Cheese soup on the SOmersizing website, reviewers seem to love this one. I saw some members add in mushrooms, garnish with bacon pieces, green onions and even a dollop of sour cream! Others have added chopped chicken to it. - Bring cream cheese to room temperature ( I microwave it on 4 for 1-1.5 minutes.)
- Pour broth and cream cheese into slow cooker, heat till smooth. Meanwhile, in a pot sautee onion in 2T. butter till almost transparent.
- Then add thawed broccoli and cook till tender.
- Add broccoli/onion mixture to slow cooker.
- Pour in cream and 2 cups of cheese.
- Heat through till cheese completely melts.
- Delicious!

I clipped this recipe from the newspaper in 1984, which was attributed to then New York State Assemblyman George J. Hochbrueckner, who later was elected to Congress. It was my first attempt at this soup, and I find myself always going back to this recipe.

- Trim flowerets from broccoli and reserve. Put aside stems for another use.
- In a medium saucepan, combine flowerets and chicken broth. Bring to a boil; reduce heat. Cook, uncovered, over medium-low heat, until broccoli is tender, about 12 minutes.
- Meanwhile, in a heavy skillet, melt butter and saute onion until golden, about 8 minutes. Reduce heat to low. Stir in flour and cook, stirring constantly, 2 minutes. Stir onion-flour mixture into soup. Heat to boiling; cook until thick. Remove from heat. Add salt and pepper.
- Transfer broccoli mixture to the container of a food processor. Process until smooth, being careful, as hot liquid will expand. Transfer to clean pot. Add milk, cream, nutmeg, and dash of hot pepper sauce. Heat slowly to boiling, stirring constantly, and remove from heat.
- Pour into 6 flameproof soup bowls. Sprinkle each with cheese and run under a preheated broiler until lightly browned.
