RUTH REICHL'S TAPENADE, SUPER EASY AND ELEGANT!
If you are familiar with Ruth Reichl, you know that she knows food! This is from "The Gourmet Cookbook" I love this Tapenade. It is wonderful served with fresh, warm french bread, or any artisan bread. Very impressive for dinner guests! This keeps in the fridge for up to 2 weeks.

Steps:
- Combine olives, garlic, capers and lemon zest in a food processor and blend until smooth paste forms, about 3 minutes.
- With motor running, add olive oil in a steady stream and pulse until well combined.
- Hint: I use my cherry pitter to pit the olives.

Steps:
- Thoroughly rinse the olives in cool water.
- Place all ingredients in the bowl of a food processor(mini on is just right).¨.
- Process to combine stopping to scrape down sides of bowl until mixture becomes a coarse paste app 1 to 2 minutes.
- Transfer to a bowl and refrigerate until ready to serve.

THERMOMIX TAPENADE - EASY, PEASY!
This is adapted from a recipe at hojiblanca.com. The original recipe called for capers, which I don't like and didn't seem to allow enough blending time. I made a few adjustments and this tapenade is awesome!!!

Steps:
- Place all ingredients EXCEPT olive oil in Thermomix bowl. Slowly raise the speed up to 5, mixing until you have a thick paste.
- Scrape down sides. Replace lid. Slowly pour the olive oil in as the blades are spinning - raising the speed up to 8. After 20 seconds check and see if the paste is smooth enough for your taste. If not, scrape down, replace lid and blitz again.
- I mixed mine about 40 seconds on speed 8.
- Refrigerate until ready to serve.
