CRANBERRY-BANANA BREAD
My Mom never made plain banana bread - the cranberries add such a pretty color and nice tartness to this bread. Great for breakfast!

Steps:
- Preheat oven to 350- grease two 9x5 loaf pans.
- Cream shortening with sugar; add eggs one at a time, beating well after each addition.
- Combine dry ingredients& add alternately with bananas to shortening mixture.
- Add nuts, stir well.
- Fold in cranberry sauce.
- Pour batter into prepared pans- bake 60-65 minutes or until done.
- Remove from pans& cool thoroughly on wire rack (allow to cool completely before slicing).

THE VERY BEST BANANA CRANBERRY BREAD
A basic banana bread recipe taken from a cookbook I pilfered from my Mom. I added the fresh cranberries which makes for a wonderful combination of sweet and tart. Adding chopped walnuts really completes this recipe. The final key is to use really, I mean really ripe bananas. I freeze them once they are almost black and thaw when ready to use. They make the bread moist and sweet.

Steps:
- Cream shortening, sugar and vanilla. Add eggs and mix until blended. Fold in mashed bananas. Fold in dry ingredients. Lastly, add the cranberries and chopped walnuts. Pour into a greased 9 X 5 loaf pan. Bake at 350 degrees for 45 minutes to 1 hour. (Until knife inserted comes out clean).
- **I have used halved cranberries but found whole fresh cranberries work fine**.
- ** I also use dark brown sugar. It's just my preference.**.

- In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in bananas. Combine the flour, cracker crumbs, baking powder, baking soda and salt; gradually add to creamed mixture and mix well. Fold in walnuts and cranberries. Pour into a greased 8x4-in. loaf pan., Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

- Preheat the oven to 350F degrees.
- Grease an 8 1/2 by 4 1/2 inch loaf pan.
- Mix sugar and butter in a medium mixing bowl until completely blended.
- Add banana, milk and eggs, mixing well.
- Add dry ingredients, mixing just until moist.
- Stir in nuts and cranberries.
- Spread batter evenly in the loaf pan.
- Bake for 1 hour and 10 minutes, or until a toothpick inserted in the centre of the bread comes out clean.
- Remove from pan, cool on rack.

- Coarsely chop fresh cranberries and set aside.
- Mash bananas and set aside.
- In large mixing bowl, beat eggs, sugar and oil together.
- Add flour, baking powder, baking soda, cinnamon, salt, vanilla and nuts.
- Mix together.
- Add cranberries and bananas and continue to mix until blended.
- Pour into 2 greased and floured loaf pans.
- Bake in 350°F oven for 45-55 minutes or till tests done in center with toothpick.
- Remove to wire rack and cool for 10 minutes before removing to completely cool on wire rack.

Steps:
- Grease large (this is a large loaf) bread pan with shortening.
- Preheat oven to 350F.
- To prepare cranberries: Combine cranberries, water and sugar (1 1/2 cups) in a saucepan and bring slowly to a boil.
- Simmer until done, stirring to dissolve sugar.
- (Don't overcook--the cranberries are done when they pop open.) Drain in sieve over a bowl.
- Discard juices or use elsewhere.
- To prepare bread: Mash bananas with a fork until very smooth.
- Sift together flour, baking powder, baking soda, and salt.
- With and electric mixer, cream shortening until light.
- Add sugar (2/3 cup) gradually until very light.
- Add eggs one at a time until light and fluffy.
- Add mashed banana and mix well.
- On low speed, gradually add dry ingredients until well blended.
- Beat until smooth.
- Very carefully stir in cranberries and walnuts.
- (Maybe only a couple of swipes with the rubber spatula.) Bake for about 1 hour until bread springs back when lightly touched.
- To prepare glaze (i. e., gilding the lily): Boil water and sugar in a saucepan about 2 minutes until syrupy, stirring constantly.
- After bread has cooled slightly (10 minutes or so), pour glaze over top of bread while it is still in the pan.
- Cool completely before removing.

- Preheat oven to 350.
- Grease/flour two loaf pans.
- First bowl:.
- Cream butter and cream cheese
- Gradually add sugar, beating until light and fluffy.
- Add eggs one at a time.
- Second bowl:.
- Combine flours, baking powder, baking soda, salt
- Third bowl:.
- Mash bananas.
- Slowly add flour mixture into cream cheese/butter/sugar mixture. It will be a little dry at this point - don't worry!
- Stir in bananas and vanilla, mix well.
- Stir in cranberries, fold well.
- Spoon into pans. Bake, uncovered, for 1 hour. For the last fifteen minutes cover with foil so doesn't brown too much.
- Enjoy!

CRANBERRY BANANA NUT BREAD
This one came from an old school cook book. Really good bread. Great for bake sales and gifts. You can add Cool Whip for a dessert, or slice it for a really interesting sandwich.

Steps:
- In a bowl, sift the first 4 ingredients; set aside.
- Mix the next 4 ingredients together in another bowl.
- Fold flour mixture with orange juice mixture, then stir in bananas, cranberries and nuts.
- Pour into 2 lightly greased loaf pans.
- Bake at 350° for 45 minutes to 1 hour, or until a toothpick inserted comes out clean.
- *Note: I haven't made this bread in quite awhile and for some reason my recipe doesn't have the bake time written down, so I'm going by the bake time on a banana bread and a cranberry bread.
- I suggest checking at 30 minutes to be on the safe side.
