Steps:
- Put the potatoes and eggs into a big saucepan of cold salted water. Bring to a simmer. After 12 minutes remove the eggs with a slotted spoon and let cool. Continue cooking the potatoes until a paring knife poked into them goes in without resistance, about 3 minutes longer. Drain the potatoes in a colander and let them cool.
- Reserve some scallion greens and capers for garnish. Meanwhile, stir together the mayonnaise, mustard, pickles and their juice, onion, remaining scallions and capers, parsley, and lemon juice in a bowl large enough to hold the potatoes. Peel the cool eggs and grate them into the bowl. Stick a fork into the potatoes and lift them 1 at a time out of the colander. Break up the potatoes by hand into rough chunks, add them to the bowl and toss to coat with the dressing. Season, to taste, with salt and pepper. Drizzle with a little olive oil before serving.

Steps:
- Add sliced potatoes to a large saucepan. Cover with cold water, about an inch above the tops of the potatoes. Bring to a boil over MED-HIGH heat. Covering the pan helps this happen faster, but pay attention that it doesn't boil over!!
- Once boiling, add 1 1/2 tsp kosher salt and stir. Boil, for 10-15 minutes, until potatoes are fork tender. Watch out for the foam on top of the water, it can boil over if you're not careful. Adjust the heat so that the potatoes are still boiling, but not so hot that they're roaring.
- Drain potatoes in a colander, then return potatoes to the same hot pot you boiled them in. Add vinegar and stir to combine. Let sit a minute or two, then return to the colander to cool slightly.
- While potatoes are cooling, add dressing ingredients plus remaining 1 tsp kosher salt to a large mixing bowl. Whisk together and set aside.
- Chop eggs, red onion, celery and pickles. Add cooked potatoes to the dressing in the mixing bowl and top with chopped eggs, onion, celery, pickles and crumbled bacon.
- Gently stir it all together, until well combined. Cover tightly and refrigerate until cold, at least 3-4 hours.

Steps:
- Place the potatoes and 2 tablespoons of salt in a large pot of water. Bring the water to a boil, then lower the heat and simmer for 10 to 15 minutes, until the potatoes are barely tender when pierced with a knife. Drain the potatoes in a colander, then place the colander with the potatoes over the empty pot and cover with a clean, dry kitchen towel. Allow the potatoes to steam for 15 to 20 minutes.
- Meanwhile, in a small bowl, whisk together the mayonnaise, buttermilk, Dijon mustard, whole grain mustard, dill, 1 teaspoon of salt, and 1 teaspoon of pepper. Set aside.
- When the potatoes are cool enough to handle, cut them in quarters or in half, depending on their size. Place the cut potatoes in a large bowl. While the potatoes are still warm, pour enough dressing over them to moisten. Add the celery and red onion, 2 teaspoons of salt and 1 teaspoon of pepper. Toss well, cover, and refrigerate for a few hours to allow the flavors to blend. Serve cold or at room temperature.
THE BEST AMERICAN POTATO SALAD

- Using a microwave: Set the microwave to 1000w. 4 medium potatoes will need roughly 10 minutes cooking. Depending on amount and size of the potatoes you'll have to reduce or add a couple of minutes of microwaving. If you use the stove, cook the potatoes in salty boiling water for 20 minutes or until tender.
- Mix in the lentils (previously drained and rinsed; if you use dry lentils, cook according to package instructions first).
ULTIMATE POTATO SALAD RECIPE - TESCO REAL FOOD
From realfood.tesco.com
- When in season, Jersey Royal potatoes are generally considered the cream of the crop and work beautifully in potato salads due to their sweet, nutty flavour and waxy texture. Other small waxy potatoes work just as well too, so look out for potatoes labeled ‘new’, ‘baby’ or ‘salad’ in store. There’s no need to peel, just give them a good scrub and halve or quarter any larger ones so that all of your spuds are roughly the same size. Boil for 15-20 minutes, until just tender when pierced with the tip of a knife, then drain and leave to cool.
- A traditional potato salad uses mayonnaise to bring the ingredients together and is perfectly delicious on it’s own, but you could easily substitute with other ingredients if you prefer. Lighten things up with a low fat variety of mayo or by mixing with part natural or Greek-style yogurt. Add extra creaminess with crème fraîche or tangy soured cream. Spoon just enough to lightly coat the potatoes in a large mixing bowl to make the dressing.
- Herbs add much needed colour and freshness to potato salad, so it’s worth the little bit of chopping needed to prepare them. The aniseed flavour of dill is the perfect partner for potatoes, but snipped chives also work well, adding a delicate oniony flavor. For a summer twist, try using alternative herbs such as fresh mint or fragrant basil. Finely chop or snip a handful and add to your mixing bowl.
- Add seasoning to taste to the bowl then stir together your dressing to combine. Add the cooled potatoes and mix gently so that they are fully coated in the dressing but be careful not to break them up too much before serving.
