SUNNY'S EASY SMOTHERED CHICKEN

3 tablespoons olive oil, plus more if needed
Two 8-ounce containers sliced white button mushrooms
1 sprig fresh thyme
1 medium sweet or white onion, large diced
Kosher salt and freshly ground black pepper
2 tablespoons all-purpose flour
1 tablespoon Dijon mustard
2 cups beef stock, warmed
4 grilled chicken breasts, from the freezer or refrigerator section of the grocery, thawed if frozen
Two 10-ounce containers microwavable white rice
3 tablespoons chopped fresh parsley

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Add the mushrooms and thyme and more olive oil if needed and saute until lightly browned and tender, 5 to 10 minutes. Add the onion and season with salt and pepper. Let cook until the onions are softened, 5 to 7 minutes. Mix in the flour and mustard and cook for about 2 minutes. Whisk in the beef stock and bring to a simmer. Cook until thickened, 3 to 4 minutes. Add the grilled chicken breasts, then cover the skillet and turn down the heat to medium-low. Let simmer for about 10 minutes.
  • Prepare the rice according to the package directions. Remove the rice to a large bowl and stir in 2 tablespoons parsley. Place rice on a platter, then top with the chicken and mushroom sauce. Garnish with the remaining fresh parsley.

1 3½-pound chicken, rinsed and cut into 8 pieces
½ teaspoon salt, plus more to taste
¼ teaspoon freshly ground black pepper, plus more to taste
1 cup all-purpose flour
½ cup vegetable oil
2 medium onions, chopped
2 medium celery ribs, chopped
1 garlic clove, minced
3 cups chicken broth

Steps:

  • Season chicken with ½ teaspoon salt and ¼ teaspoon pepper. Place flour in large bowl. Roll chicken in flour to coat, shaking off excess flour. Transfer 3 tablespoons flour to medium bowl and set aside. In large skillet, heat oil over medium-high heat. Add chicken and cook, turning halfway during cooking, until golden brown, about 10 minutes. Transfer to plate and set aside. Pour off all but 3 tablespoons of oil from skillet. Reduce heat to medium. Add onions, celery and garlic, and cook, stirring often, until tender, about 5 minutes. Sprinkle with reserved flour and stir well. Gradually stir in broth and bring to simmer. Return chicken to skillet. Reduce heat to low. Cover and simmer, stirring occasionally, until chicken is cooked through and shows no signs of pink when pierced at bone, about 35 minutes. Transfer chicken to deep platter and cover with foil to keep warm. Bring sauce to boil over high heat and cook, stirring often, until thickened, about 5 minutes. Season gravy with salt and pepper and pour over chicken. Serve hot.

MIKE'S POLISH SMOTHERED CHICKEN

Italian dressing or marinade, to taste
Garlic powder, to taste
Oregano, to taste
Basil, to taste
4 boneless, skinless chicken breasts
1 medium red onion, sliced
Butter
1 package sliced mushrooms
4 large portobello mushroom caps
Olive oil
Cajun seasoning
4 strips bacon
Garden vegetable cream cheese
Sliced mozzarella cheese
Shredded Monterey Jack
Cooked dirty rice, for serving

Steps:

  • Combine Italian dressing, garlic powder, oregano, and basil into a plastic bag. Add the chicken breasts and mix well. Marinate in refrigerator overnight.
  • Preheat grill over medium heat.
  • Make foil pouches of sliced red onion with butter and another pouch of sliced mushrooms with butter. Place onto hot grill and cook until tender. Drizzle portobello caps with olive oil and place on hot grill to soften. Remove chicken from marinade and discard marinade. Grill chicken breasts until cooked throughout, sprinkling with Cajun seasoning and garlic powder, set to side of grill to keep warm. At same time, grill 4 strips of bacon.
  • Spread the cooked portobellos with a thick layer of cream cheese. Place 1 cooked chicken breast onto each, spoon on some of the sliced mushrooms, and finally some of the sliced onions. Place a strip of bacon onto that, and then cover with sliced mozzarella and shredded Monterey Jack cheese, put back on grill to melt cheese, and serve with a side of dirty rice.

4 chicken breasts
1/2 cup all-purpose flour
1/8 teaspoon cayenne pepper
1/2 teaspoon paprika
Salt and pepper, to taste
1/4 cup vegetable oil
1 onion
2 small garlic cloves
1 cup sour cream
1/2 cup chicken stock
1/4 chopped green onions, including green part

Steps:

  • Clean chicken breasts and dry well. In a shallow baking dish, combine the flour, cayenne pepper, paprika, salt, and pepper. Dredge chicken breasts in flour mixture to coat. Shake off excess. In a large skillet heat 1/4-inch vegetable oil over medium heat. Add chicken and brown well, about 2 minutes on each side. Remove from pan and set aside. Pour excess oil from pan, leaving a thin layer. Add onions and garlic, saute, stirring occasionally, until translucent, about 3 to 5 minutes. In a bowl combine sour cream, chicken stock and green onions and mix well. Transfer chicken back to skillet, pour sour cream mixture over it. Bring to a simmer and cook, covered, until done, about 10 minutes.;
