MR ED'S WORLD FAMOUS POTATO SALAD
This is my partners potato salad recipe. Although the ingredients are similar to other potato salad recipes, the technique is what makes it special. Try it this way the first time and I'm sure you'll agree it's the best you've ever tried.

Steps:
- Cook potatoes in plenty of boiling salted water until a little more than fork-tender. Drain well. Peel as soon as you can handle them using a towel to hold the hot potato. The peeling should come off easy using a knife to gently scrape off the peel.
- While the potatoes are cooking, boil the eggs in salted water. Start timing as soon as water comes to a boil. Cook exactly 12 minutes. Drain and cool under running cold water until cool enough to peel. Peeling under cold water makes the shell come off easier.
- In a large bowl, put the still hot potatoes and run through them with a knife going in all directions to make tiny dices. Don't be afraid to chop them well. Add celery, onions and relish. Stir well.
- Add mayonnaise, mustard, salt, pepper and garlic powder. Mix well. Add peeled eggs that have been chopped fine. Stir in gently.
- Taste and adjust seasoning, if needed. This salad should be on the dry side, not too mushy from mayonnaise. Mr Ed. doesn't measure anything since he's been making this potato salad for more than 50 years. You may want to add half the mayonnaise and then more to get the right consistency or even add more, if needed.
- Once you're satisfied with the salad, cover with plastic wrap, leaving a small vent and refrigerate until thoroughly chilled.
- Note: Mr Ed chops the eggs in the bowl with the potatoes with a chef's knife.

THE BEST AMERICAN POTATO SALAD
Our favorite potato salad kicks up the traditional mayonnaise base with not only chopped dill pickles, but also uses the pickle brine for extra tang. Scallions, celery and parsley add freshness and a little crunch, while hard-boiled eggs practically make it a meal.

- Put the potatoes in a large saucepan; cover with cold water and season with 1 teaspoon salt. Bring to a simmer and cook until tender, 10 to 12 minutes. Drain and transfer to a large bowl. Add the vinegar and 1/2 teaspoon salt; toss. Let cool slightly, about 10 minutes.
- Meanwhile, put the eggs in a medium saucepan and cover with cold water. Bring to a boil, then remove from the heat and let sit, covered, 10 minutes. Drain the eggs and cover with ice water to cool; peel, chop and set aside.
- Whisk the mayonnaise, sour cream, pickle brine, mustard and sugar in a small bowl. Stir in the pickles, celery, scallions and parsley. Spoon the mayonnaise mixture over the potatoes and mix well. Season with salt and pepper. Add the hard-boiled eggs and gently stir to combine. Cover and refrigerate at least 2 hours or overnight. Sprinkle with paprika just before serving.
CLASSIC POTATO SALAD

- Boil, peel and cube 2 pounds russet potatoes; toss with 2 tablespoons cider vinegar and 1/2 teaspoon salt. Mix 2 cups mayonnaise, 2 chopped scallions, 1 chopped celery stalk, 1 tablespoon each dijon mustard and vinegar, 1 teaspoon sugar, and salt. Toss with the potatoes.
THE PROFESSOR'S POTATO SALAD
This is a very good, tangy potato salad, although I admit it is a bit of work and the directions are very specific, claiming they should be followed to get the exact flavor and texture. Even with the extra work, I had fun making it because of the novelty of the source; it is from Russell Johnson, the actor who played "The Professor" on Gilligan's Island. Even more fun if you sing the theme song while you're making it. (If you end up with left over one-minute dressing, you can use it on a salad.)

- Simmer the potatoes in their jackets in salted water just until done, but not falling apart (they should pierce easily with a fork or skewer).
- Drain the potatoes, replace them in the pot, and let sit for a few minutes with the lid on and the heat off.
- While the potatoes are cooking, prepare the one-minute dressing by whisking the ingredients together well.
- Mince the sweet onion very finely (if you use a food processor and it comes out watery, that's okay); set aside.
- When done, peel and cube the potatoes while they are still very hot (use rubber gloves to keep from burning yourself). As you proceed and place the cubes in a bowl, keep tossing with generous amounts of the one-minute dressing and the minced onion.
- Add additional salt and pepper to taste, and let sit until the mixure comes to room temperature.
- Refrigerate overnight or for at least several hours, mixing gently occasionally (marinating is what gives the salad its taste and color).
- A short time before serving, gently mix in the chopped green onions, cubed hard boiled eggs, mayonnaise (as generous as your conscience allows), and additional salt and pepper to taste. You can add some chopped celery at this point if you like. If some of the potatoes break up, that's fine, it adds to the creaminess of the salad.
- Refrigerate until ready to serve.

HERBED POTATO SALAD

- For the potato salad: Place the potatoes and whole garlic cloves in a large pot and cover by 2 inches with cold water. Season the water liberally with salt. Bring the potatoes to a simmer over medium heat and cook until fork-tender, 20 to 25 minutes. Drain the potatoes and garlic in a colander. Transfer to a sheet tray or cutting board. Gently press each potato and garlic clove to smash them and set them aside in a bowl, covering the bowl with aluminum foil to keep the potatoes warm.
- For the vinaigrette: In a large bowl, whisk together the shallots, vinegar, lemon juice, mustard, honey, salt and a generous grinding of pepper. Slowly whisk in the olive oil to emulsify the vinaigrette.
- Add the warm potatoes to the vinaigrette and toss to combine. Add the parsley, dill and tarragon to the potatoes. Toss to coat, seasoning with additional lemon juice and salt to taste. Transfer to a serving bowl and garnish with the Fresno chile and chives. Serve at room temperature or keep covered in the refrigerator overnight, tossing again before serving.

- Tip the potatoes into a large pan of cold salted water. Bring to the boil, then simmer for 10 mins until tender to the tip of a knife.
- While the potatoes are cooking, whisk the mustard, vinegar, olive oil and chopped shallot together with a good pinch of salt and a grind of pepper. When the potatoes are cool enough to handle, peel if you prefer, then halve, quarter or cut them into bite-sized chunks if large, then toss in the mustard dressing until completely coated.
