ELOTE (MEXICAN STREET CORN)

Learn how to make elote with this simple recipe! We'll top grilled corn on the cob with a tangy blend of mayonnaise, lime, chili powder, and finish it with a heavy sprinkle of Cotjia cheese and cilantro. Serve elote as a snack or appetizer, or as a side dish to any Mexican meal. Recipe yields 4 elotes; multiply as needed.

4 ears of grilled corn on the cob
1/4 cup mayonnaise
1 1/2 teaspoons lime juice
½ teaspoon chili powder, plus more for sprinkling
Pinch of cayenne pepper (optional, for extra heat)
¼ teaspoon kosher salt or a pinch of fine salt
2 ounces (about 1/2 cup) finely grated Cotija cheese*
2 tablespoons finely chopped cilantro

Steps:

  • While you're grilling your corn, prepare the chili-mayo sauce and Cotija-cilantro blend. In a small bowl, combine the mayonnaise, lime juice, chili powder, optional cayenne, and salt. Stir until combined. In a separate bowl, mix together the cheese and cilantro. Set both bowls aside.
  • When your corn is ready to go, brush the mayonnaise mixture all over one ear of corn. Over a plate, sprinkle the Cotjia mixture liberally all over, turning the corn as necessary (it's going to be a little messy, no way around it!). Place the finished cob on a separate serving plate. Repeat for the remaining corn, using the cheese in the bowl and the excess on the plate as needed.
  • Sprinkle a pinch or two of additional chili powder lightly over the corn. Serve warm.

8 ears corn
Kosher salt
BBQ Butter, recipe follows
Herb Butter, recipe follows
2 tablespoons canola oil
1/2 small red onion, chopped
2 cloves garlic, chopped
2 teaspoons Spanish paprika
1/2 teaspoon cayenne powder
1 teaspoon toasted cumin seeds
1 tablespoon ancho chili powder
1/2 cup water
1 1/2 sticks unsalted butter, slightly softened
1 teaspoon Worcestershire sauce
Salt and freshly ground black pepper
2 sticks unsalted butter, at room temperature
1/4 cup chopped fresh herbs (basil, chives or tarragon)
1 teaspoon kosher salt
Freshly ground black pepper

Steps:

  • Heat the grill to medium.
  • Pull the outer husks down the ear to the base. Strip away the silk from each ear of corn by hand. Fold husks back into place, and place the ears of corn in a large bowl of cold water with 1 tablespoon of salt for 10 minutes.
  • Remove corn from water and shake off excess. Place the corn on the grill, close the cover and grill for 15 to 20 minutes, turning every 5 minutes, or until kernels are tender when pierced with a paring knife. Remove the husks and eat on the cob or remove the kernels. Serve with the BBQ Butter and/or Herb Butter. Spread over the corn while hot.
  • Heat the oil in a medium saute pan over high heat until almost smoking. Add the onion and cook until soft, 2 to 3 minutes. Add the garlic and cook for 30 seconds. Add the paprika, cayenne, cumin and ancho powder and cook for 1 minute. Add 1/2 cup of water and cook until the mixture becomes thickened and the water reduces. Let cool slightly.
  • Place the butter in a food processor, add the spice mixture and Worcestershire sauce and process until smooth. Season with salt and pepper, scrape the mixture into a small bowl, cover and refrigerate for at least 30 minutes to allow the flavors to meld. Bring to room temperature before serving.
  • Combine in a food processor and process until smooth.

  • 1. Then buying corn on the cob whether you shuck it or not pull a part down and stick your nail into the Kernel. If it spilts open with a burst buy it if not move on.
  • 2. Once you have a great ear of corn home here are two ways to cook a wonderful and perfectially done ear of corn.
  • 3. 1. Cooking in a pot on top of stove: Put water in a large pot enough to cover and then some. Add corn and heat to boiling cover and turn off pot. wait 15-20 minutes and serve.
  • 4. 2. BBQ Grill: bring home corn still in its husk. Cut the extra hair part from top and soak the husk and all in cool water for 10-20 minutes befor BBQing. Just place them on the grill in a lower setting and turn every few minutes while the other stuff is cooking. Your corn will steam in its husk.
  • 5. Great flavored butters for corn. For every stick of butter add the following to creat these masterpieces and mix well. A. Sweet Pleasures 2 tablespoons maple syrup 1 tablespoon brown sugar 1/2 teaspoon sea salt B. Touch of Italy 2 tablespoons garlic powder with parsley 1 teaspoon Italian seasoning 1/2 teaspoon sea salt C. Cheese lovers 2 tablespoons parmeasan cheese from shaker 1/2 teaspoon Garlic salt D. Taco Mania 2 tablespoon taco seasoning
