CINNAMON ROASTED SWEET POTATOES AND APPLES
This cinnamon roasted sweet potatoes and apples recipe is a healthy and easy fall side dish. Made with only 6 nutritious ingredients including pure maple syrup and ground cinnamon, it's a perfect dish to serve on Thanksgiving.

Steps:
- Preheat oven to 425 degrees F.
- Grease a large baking pan, set aside.
- In a large bowl, toss cubed sweet potatoes with 2 TBS of melted coconut oil. Stir until coated.
- Add sea salt and stir until evenly distributed.
- Bake in the preheated oven for 20 min, stirring halfway through, until sweet potatoes just barely start to brown.
- While the sweet potatoes are baking: stir the remaining 1 TBS of coconut oil into the apples. Add maple syrup and cinnamon and stir to combined.
- After 20 minutes, or the sweet potatoes have begun to brown, remove the sweet potatoes from oven and add the apple mixture and stir to combine.
- Return to the oven and bake for 20 more minutes, stirring halfway through.
- Once the sweet potatoes and apples are browned and the maple syrup has caramelized on them remove them from the oven and serve immediately!

MAPLE SWEET POTATOES WITH APPLE AND BACON
This was in an email from Trader Joe's for the holidays. (Best little store ever!) I made it today for Thanksgiving and it's delicious! Putting on here to share and for safe keeping. One note: My sweet potatoes took quite a bit longer to roast and be tender so just check them and cook until they are done. I might have used too small a pan because I had to stir them and keep cooking past the time.

Steps:
- Toss potatoes with oil and salt. Roast at 400' about 20 minutes or until tender.
- Cook bacon over medium heat in a large pot. Add onions once fat starts to render. Cook until bacon is crisp and onions are translucent.
- Add apples to pot and cook 2 more minutes (I cooked longer to caramelize the apples a bit).
- Add potatoes and cook approximately 5 minutes, or until soft (Again, I cooked longer to get a bit of caramelizing on the potatoes).
- Toss with maple syrup and serve.
- Note: I roasted the potatoes the night before and just put them in the fridge so I wouldn't tie up the oven for Thanksgiving dinner.

- Boil sweet potatoes in their jackets in salted water.
- Pare and slice apples and place in maple syrup.
- Add butter, pinch of salt and cook until apples are tender.
- Peel and slice the sweet potatoes.
- Place 1/2 of the sweet potatoe slices in a buttered baking dish.
- Pour 1/2 apple syrup mixture over potatoes.
- Repeat layers.
- Top generously with buttered crumbs.
- Bake at 400 degrees till heated through and topping is brown.

- Place sweet potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 30 minutes or until just tender. Drain and cool slightly. Peel and cut into 1/4-in. slices., In a greased 13-in. x 9-in. baking dish, alternately layer potatoes and apples. Pour orange juice over top. Combine the brown sugar, ginger and cinnamon; sprinkle over potatoes and apples. Dot with butter. , Bake, uncovered, at 350° for 35-45 minutes or until apples are tender.

THE MAMA'S THANKSGIVING MAPLE SWEET POTATOES AND APPLES
This recipe is DEMANDED when we have family dinners at my Mama's house. It's delicious! My sister and I actually got into an arguement over who got the leftovers. They're sweet but they do not have the goopy marshmallow junk on them. They're the only ones that I eat. It was created by my Mama (Sheryl) so all credit goes to her on this one. I usually double this recipe when I make it to feed a family of 4.
