THE MAMAS' LASAGNA
I seriously love the balance of herbs in this recipe! The sauce was so good that I plan to use it the next time I whip up a batch of spaghetti. We used the whole grain noodles as Cherie suggests and were very happy with the way it turned out. Highly recommended!

- 1. Brown meat and onion together. Drain off grease and put meat in a large sauce pan.
- 2. Add the remaining ingredients through the water. Then, simmer for approximately 45 minutes.
- 3. Meanwhile, boil the lasagna noodles. Spray a deep 9x13 inch baking dish with Pam.
- 4. To assemble the lasagna you will alternate layers of meat, cheese, noodles...3 layers of meat and cheese; 2 layers of noodles. The last layer of cheese will only be the Parmesan cheese. Split the Mozzarella and cottage cheeses between the middle 2 layers of cheese. Use as much of the Parmesan cheese as you prefer.
- 5. You can make this ahead of time and not bake it until you are ready. When you are ready, preheat the oven to 350 degrees. Bake until hot and bubbly; approximately 1 hour covered, then 1/2 hour uncovered.
- 6. It will need to sit for approximately 15 minutes when it comes out of the oven in order to set and make cutting easier.

- Preheat oven to 375 degrees F. Lightly oil the bottom of a 13 by 9 by 2-inch baking dish.
- In a large saute pan, over medium-high heat, add 1 tablespoon oil and saute meat, onion, and garlic until meat is browned, breaking up meat with a wooden spoon. Drain pan of fat and add stewed tomatoes, tomato sauce, and tomato paste. Cover and simmer for 15 minutes, stirring occasionally.
- In a large bowl, whisk together eggs, then mix in cottage cheese, 1/2 cup Parmesan, parsley, salt, pepper, and seasoning salt.
- Spread a little of the meat sauce in the bottom of the prepared pan. Lay half the noodles in the bottom of the baking dish, overlapping by 1/2-inch. Spread half the egg and cottage cheese mixture evenly on top. Sprinkle half the mozzarella and Cheddar evenly over the cottage cheese mixture. Pour half the meat sauce on top. Repeat layering in same order. Sprinkle remaining 1/4 cup Parmesan on top. Bake in center of oven 30 to 35 minutes until sauce is bubbling around the edges. Let stand 10 minutes before serving.
MAMA'S LASAGNA
This is my Mom's recipe. When she gave it to me I was shocked that it wasn't more complex. It's what I asked for on every birthday! It is very cheesy!

- Brown ground beef in a frying pan.
- Add sauce and tomato paste.
- In a bowl mix cottage cheese with egg, Parmesan cheese, and parsley.
- Cover the bottom of a 9x13 inch pan with a little of the sauce.
- Layer the uncooked noodles, then cottage cheese mixture, then meat sauce, then slices of mozzarella. Do one more layer in the same order.
- Sprinkle top with Parmesan cheese.
- Cover with foil and bake at 350°F for 45 minutes to an hour to make sure noodles are done.
MAMA'S LASAGNA
This recipe is from Down Home with the Neely's. It uses no -cook lasagna noodles which cuts some of the time. A great special occasion dish.

- Sauce!!!You're going to want to cook the sauce on high heat as much as you can. Burning the bottom (slightly) and mixing it in the sauce will add to the richness.Thinly cut 2 onions and 2 heads of garlic (or 3 Tbsp of minced garlic) and cook down until the onions are brown and cooked down fairly well.Add and brown meat (your preferred combination of ground beef and Italian sausage). *To go the extra mile, make separate ground beef and Italian sausage sauces and use them for different layers! Drain the meat if it's too greasy but a little oil won't hurt.Add marinara sauce. Season with a little salt, some garlic powder, basil and oregano, even some crushed red pepper to taste.Once it's bubbling a little add red wine (full bodied wines work best) and stir. Keep adding wine until the sauce color is a deep burgundy, almost brown.Cook until sauce is thick enough to spread. The sauce is for spreading on layers, not to mix with spaghetti, so it needs to be thick and rich!
