HUSH PUPPIES
You can make great tasting hush puppies from scratch.

Steps:
- Pour vegetable oil into a deep fryer or heavy-bottomed pot until the oil is 3 to 4 inches deep.
- Heat the oil to 350°F.
- In a medium bowl, stir together the cornmeal, flour, baking powder, onion, salt, and ground red pepper.
- Add the milk and stir to combine.
- Drop heaping spoonfuls of the batter into the hot oil. Fry only a few at a time for best results. If you add too many at once the oil temperature may drop and they make not cook well.
- Fry the hush puppies for 1 to 2 minutes, until they have browned.
- Remove them from the oil, and drain on a wire rack.

THE CATFISH PLACE'S HUSH PUPPIES

Steps:
- Heat oil in a deep fryer or skillet to 375 degrees F.
- Mix together the sugar, baking powder, salt, garlic salt and pepper. Mix together the milk, onions and egg in a blender until they are a milkshake consistency
- Whisk together the 2 mixtures and let sit until bubbles begin to form, about 5 minutes.
- Mix together the cornmeal and flour and gradually whisk in the wet mixture. The batter should be thick like cookie dough.
- Drop hush puppies into the hot oil by using a teaspoon until they bounce to the surface, about 2 minutes. Continue frying until golden brown, 4 to 5 minutes
- Remove and drain on paper towels. Serve hot.
THE KING'S HUSH PUPPIES
Don't be scared! I named these after the King, because like my cupcake recipe, Recipe #226520 these were inspired by Elvis' favorite sandwich. Banana and peanut butter. Bananas that have already turned black work best. Try these dipped in chocolate. Or whipped cream. Or jelly. Or...well you get the idea!

- Combine flour, brown sugar, baking powder, baking soda and salt.
- In a separate bowl, combine buttermilk, peanut butter, banana, eggs and vanilla.
- Slowly add the dry ingredients into the peanut butter mixture.
- Working in batches, drop by spoonfuls into hot oil. Don't overcrowd. Fry until browned all all sides, turning as necessary.
- Drain on paper towels and keep warm until ready to serve.

- Whisk 3/4 cup cornmeal, 1/4 cup flour, 2 tablespoons sugar and 3/4 teaspoon each baking soda and salt in a bowl. Stir in 1 beaten egg, 1/2 cup each buttermilk and corn kernels, 1 minced jalapeno, 4 minced scallions, and pepper to taste. Deep-fry spoonfuls of the batter in 350 degrees F vegetable oil until golden, 2 to 3 minutes.
HUSH PUPPIES
The story of the hush puppy comes from back in the antebellum days in the south. When the planters had a fish fry, the food was cooked outdoors. The dogs would gather around and hope for a scrap of food (some things never change!). The hush puppy was originally just a piece of fried dough that was thrown to the dogs to keep them happy. The secret of a good hush puppy is the temperature of the oil. It has to be hot enough to cook, but not so hot that the outside is hard and inside is mush. If your oil is smoking, it is way too hot! Peanut oil works great, but isn't required. These are fabulous with fried fish or shrimp. **Cooking is time is for 2 batches

Steps:
- Mix together the cornmeal, flour, baking soda, baking powder and salt. Add the grated onion and sliced green onions.
- Take the egg yolk and buttermilk and blend into the batter. Whip the egg whites into stiff peaks. Fold the egg whites into the batter until it reaches a good consistency. (The amount of egg white depends on the size of your eggs).
- Drop by teaspoonful into hot oil (in a deep fryer or in a dutch oven -- the oil needs to be deep enough to cover the hush puppies). Cook until golden brown.
