GREEN FAIRY - CZECH METHOD

Number Of Ingredients 3

1 ounce absinthe
1 sugar cube
3 ounces chilled water

Steps:

  • Pour the absinthe into a rocks glass. Quickly soak the sugar cube in the absinthe; just roll it around to coat. Remove the sugar cube.
  • Place an absinthe spoon across the rim of the glass and set the soaked sugar cube atop the spoon. Light the sugar cube on fire and let the sugar caramelize for 10 to 20 seconds.
  • Slowly pour the water over the sugar cube, allowing the sugar to dissolve into glass.
  • Stir lightly with the absinthe spoon. Serve without ice, neat.

Legend has it this coctail was first served in a Glaswegian pub. It was inspired by references to Absinthe in "Dracula" and "Moulin Rouge". My husband enjoys a whiskey so I was pleased that he enjoyed this cocktail.

2 fluid ounces lemon juice
2 fluid ounces water
3 sugar cubes
2 teaspoons egg whites
1 dash herbal bitters (found in liquor stores)

Steps:

  • Shake thouroughly and strain into a martini glass.
  • This would be great for Halloween it has a misty green color.
