I have been looking for the perfect brownie recipe and finally stumbled across this one on a local food blog, it make the most incredible chewy moist brownies. Be prepared to be amazed.

- Grease a 9 x 13 pan and preheat oven to 350 degrees.
- Whisk the flour and salt together in a small bowl. Set aside.
- Now make a water bath (or use your double boiler). Fill a suacepan with water, about half way. Set it on the stove and heat the water. Place a heat-proof bowl, like a mixing bowl, right on top. The water may touch the bottom of the bowl, but it should not over flow. Place the butter and chocolate in the bowl. We are now melting the butter and the chocolate together.
- Stir frequently; chocolate needs to be melted gently so it won't seize. When the butter and chocolate are combined, add one cup of sugar and the vanilla. Set the mixture aside.
- In a bowl for mixing, put the remaining cup of sugar and the eggs. Mix together until just combined.
- Take about half of the sugar/egg mixture, and while stirring, add to the chocolate mixture. Keep the egg mixture moving to prevent cooking the eggs.
- Now back to your mixer - beat the remaining egg/sugar mixture on medium high until it doubles in volume, or about 3 minutes.
- Using your spatula, fold the whipped egg mixture into the chocolate mixture. Now sprinkle the dry ingredients over your batter. Gently fold, working only until you no longer see the flour.
- Scrape all that batter into your prepared pan. Bake in a 350-degree oven for about 25 minutes, until done.
- The top of the brownie will look like a dry lake bed. Test the brownies to see if they are done. You are mainly looking for the brownies to set up. When it sets up you are done heating them. They will continue to cook when you remove them from the oven. This will ensure that you do not overcook the brownies. You will want them nice and moist.
- You MUST resist the urge to cut into these treats. Just wait! Let the brownies set for about an hour. You will be happy you waited.

unsalted butter can also be used + an additional 1//4 teaspoon salt. Brownies can also be baked in a round pie dish or 9x9 square pan but will be a little thinner. To double the recipe, bake in a 13x9 pan 5-10 minutes longer.

- Preheat oven to 325 degrees. Line an 8x8 baking pan with aluminium foil or parchment paper or spray with cooking spray; set aside.
- Melt the butter and unsweetened chocolate together over low heat in a medium saucepan or in the microwave in 30 sec increments while stirring, until the chocolate and butter are fully melted.
- Remove from heat and add the sugar and stir. Add beaten eggs and vanilla and stir until well combine. Add flour, chocolate chips, and walnuts. Gently stir just until blended (do not overmix batter).
- Pour batter into pre-pared and bake for 30-35 minutes or until the crust has formed and a toothpick inserted comes out clean. Cool for at least 15 minutes before attempting to cut.

- Preheat oven to 350°F.
- Line a 9 x 13 x 2 rectangular pan with aluminum foil.
- Set aside.
- Sift bread flour, cake flour and salt 3x.
- Set aside.
- In a small saucepan, melt butter over low fire.
- Remove from fire and stir in the cocoa.
- Set aside.
- In the bowl of the mixer, beat eggs and sugar until light and fluffy at medium speed for about 5 minutes.
- At low speed, stir in cocoa mixture, walnuts, vanilla extract and the sifted dry ingredients.

- 1. Preheat oven to 350 degrees. Grease a 9×13 pan.
- 2. Beat together eggs, cocoa, baking powder, espresso powder and vanilla until smooth.
- 3. Melt the butter in the microwave in a small microwave-safe bowl.
- 4. Add the sugar to the melted butter and combine. Microwave mixture in about 10-15 second increments, mixing each time, until the mixture is hot (about 110-120 degrees), but not bubbly. It should take on a shiny look when it's ready. Heating this mixture will dissolve more of the sugar and give a shiny crust on top of the brownies. You could also do this step in a saucepan over low heat.
- 5. Add the butter mixture to the eggs mixture and mix until smooth
- 6. Microwave the chocolate chips in about 20 second increments until fairly soft, but not totally melted.
- NOTE: If you want them to be completely incorporated, melt them completely. If you want them to be chunks in the brownies, do not microwave them.
- 7. Add flour and chocolate chips to batter and mix until smooth.
- 8. Pour batter into pan and bake for about 30 minutes, or until toothpick comes out with just a few moist crumbs.
- 9. When done, remove from oven and allow to cool.

- Set oven on 350.
- Coat 11 1/2 x 7 1/2 glass pan with margarine or butter (or slightly larger for thinner brownies*might have to adjust cooking time*).
- In a saucepan or glass bowl melt margarine.
- Mix in by hand eggs and vanilla, then flour, salt, cocoa and sugar till moistened.
- With mixer on low/med beat just till mixed.
- Don't overbeat.

- Turn on the oven to 180 degrees and butter the tin you're using, then cover with greaseproof paper. The best tin for this would be a thinner, wider version of a loaf tin (a brownie tin).
- Melt the butter. You can either do this in a pan over the stove, or in a microwave. If you're using a microwave, place the butter in a microwavable dish and microwave for about 40 seconds. Then add the caster sugar, mix well. Sieve the hot chocolate (or cocoa powder) over the mixture, and stir in.
- Next, add the vanilla extract and 3 eggs. For best results at this stage, use a whisk as this will combine the eggs and previous mixture faster than using a wooden spoon or similar.
- Place the dark chocolate and milk chocolate into a suitable heatproof bowl, and place over a pan of simmering water. Stir the chocolate to allow it to melt, whilst ensuring that none of the water enters the bowl. When all of the chocolate is melted, carefully take out the bowl and leave to cool for a few minutes. When the bowl is at a temperature appropriate for holding, pour the chocolate into the mixture.
- Following this, sieve the plain flour over the mixture along with the baking powder and fold in carefully. Cut the white chocolate into little cubes and add to the mixture, still folding it in as otherwise the air in the mixture will be lost.
- Once all of the ingredients are in the mixture, pour it into the tin. Cook at 180 degrees for about 40 minutes. To check whether it's cooked, take a spoon or fork, hold the part you usually put in your mouth and put the other end into the brownie. If this comes out clean, the brownie is done - if not place the brownie back in the oven and cook for another 15 minutes.
