PIKELETS
Smaller than pancakes and fluffier than crepes, pikelets make a great breakfast or snack. Serve with jam and cream or a hearty dollop of lemon curd.

Steps:
- Sift flour and soda together into a medium bowl. Stir in sugar. Make a well in centre. Gradually stir in egg and enough milk for a smooth, pouring consistency. Rest 15 minutes.
- Heat a large, non-stick frying pan on medium. Brush with butter. Working in 3 batches of 6, drop tablespoons of batter into pan, allowing room for spreading. Cook 1-2 minutes, until bubbles appear on surface. Turn and cook 1 minute further, until golden. Brush pan with butter between batches.
- Transfer cooked pikelets to a wire rack. Serve warm with jam and cream.

Unlike American pancakes, the Australian pikelets can be purchased ready-made in grocery stores. You can eat the cold or hot and they are typically topped with cream, jam, fruit or butter and sugar! They are handle for snacks and lunches. I found these on an Australian website. Enjoy!

- Sift together flour, salt and baking soda into a large bowl.
- Place milk, egg, sugar, butter and vanilla in the center of the flour mixture.
- Beat until smooth and a thick pouring consistency.
- Heat greased frying pan over medium high heat. Drop batter by the spoonful into pan.
- Cook until you see bubbles appear.
- Turn the pickelets over with a spatula and continue cooking until the underside is light brown.
- Remove from pan and place on a cloth or between layers of paper towel to cool.

I can't believe that noone else has posted the humble pikelet, a mini-pancake. I like mine with plain butter on top or with raspberry jam and a blob of cream a la a Devonshire tea. Perfect to have with a cup of tea for afternoon tea.

Yummy golden little pancakes served warm with jam or honey. Every Australian would have made these many times throughout their youth. My son had his little friend over today and I ended up making a second batch because the boys gobbled them up and begged for more.

Steps:
- In a pouring jug, whisk together well the egg, sugar and half of the milk.
- Add the flour and mix thoroughly.
- Then add milk until the batter is the consistency of a thick cream.
- Beat until smooth.
- Pour about a soup spoon sized amount onto a preheated lightly greased frypan (You will need to start about medium high heat but after a few rounds you will need to drop it back to medium).
- Flip with a spatula when the top is all bubbly (should be a lovely golden colour), and cook the other side.
- Remove from pan and pile piklets up on a plate (cover with a paper towel so they don't go rubbery).
- Serve with jam, honey or maple syrup etc.
- Enjoy.

This is a recipe from a collection of hand me down recipes for good old fashioned Aussie cooking. I have no idea where this recipe originated. My mother always used soured milk to make light tasty pikelets.

- Sift the flour, salt and bicarbonate of soda together into a medium sized bowl.
- Make a well in the centre, add the sugar, egg, soured milk and the melted butter.
- Stir gradually, drawing in the flour from the sides, to make a smooth batter.
- Put tablespoonfuls of the batter on to a hot, greased griddle or fry pan.
- If the batter thickens while cooking the pikelets just add a little more milk.
- Use enough milk to make the batter the original consistency.
- Cook each pikelet until bubbles appear on top and brown underneath.
- Turn the pikelet to brown the other side.
- Continue until all the batter is used.
- Serve with strawberry jam and cream.

PIKELETS WITH BERRIES
I haven't ever made pikelets but I've eaten them - long ago. This recipe, when I chanced upon it, evoked nostalgic memories of carefree 1950s Australian after-school afternoon teas at friends' houses, and of the mothers who'd made these pikelets for their 5-10 year olds and friends arriving home from school. Unlike the pikelets in this recipe, those pikelets were usually served with jam and cream. Some were even just buttered. This pikelet recipe is adapted from a recipe card - in a 'Pan or Wok' series of recipes from International Masters Publishers Ltd..

- Sift the flour into a mixing bowl, add the butter and rub into the flour with your fingertips until the mixture resembles fine breadcrumbs.
- In a separate bowl, beat together the eggs and the milk, then add the egg-milk mixture to the flour-butter-breadcrumb mixture.
- Then stir in the caster sugar and mix all the ingredients until you have a smooth batter.
- Heat the oil in a heavy-based pan and drop in spoonfuls of the batter, spacing them well apart.
- Cook the pikelets until the surface starts to bubble, then flip them over with a spatula or egg-slide and cook the other side, for about 2 minutes.
- Remove the pikelets, transfer them to a plate and keep them warm. The batter should make about 8 pikelets in total.
- Once all the pikelets have been made, wipe the pan.
- Mix together the orange juice and arrowroot.
- Heat the orange juice and demerara sugar in the pan, stir in the orange juice mixture, add the berries and cook for 2-3 minutes, or until the sauce thickens.
- Whip the cream into soft peaks, divide the pikelets between 4 serving plates, top with spoonfuls of whipped cream and fruit and serve.

My grandma's recipe. These are so yummy, I just pick them up and eat them with my fingers (not very ladylike I know) but is great served with cream and berries or ice cream or however you like them really. These are even lovely cold, take along to picnics and spread with jam and a little cream, or just jam by itself.

- Whisk flour, baking powder and sugar in a bowl. Make a well in the centre, add egg, milk and vanilla. Whisk until the batter is almost lump free - a few small ones is ok. The batter should be the consistency in between maple syrup and tomato sauce - see photo above in post.
- Melt butter in a NON STICK skillet over medium high heat. Then WIPE all the butter off with a paper towel so there are no visible drops of oil. This is how the first batch comes out beautifully golden instead of splotchy.
- Place 2 tbsp of batter (or 1/2 filled ice cream scooper which is what I use) into the skillet. Cook until bubbles appear on the surface (see photo) then flip and cook the other side until golden (usually around 1 - 1 1/2 minutes). Repeat with remaining batter.
